Every time I stay in Las Vegas, my mornings begin with a visit to Jinju Gomtang in Chinatown. Whether I walk from the hotel or take an Uber, I never skip it. The food is always fresh, comforting, and full of flavor.
My go-to dishes are the Sundubu-jjigae (spicy soft tofu stew) and the Galbitang (beef short rib soup). The sundubu-jjigae arrives bubbling hot, filled with silky tofu and vegetables in a rich, spicy broth. The galbitang is clear and deeply satisfying, with tender short ribs, glass noodles, scallions, and egg garnish. Both dishes are deeply nourishing and perfect to start the day.
The generous set of banchan (Korean side dishes) makes the experience even better. Each visit comes with a delicious spread that often includes kimchi, marinated cucumber, cheongyang chili in soy sauce, eomuk bokkeum (fish cake with peppers), Korean-style potato salad, and myulchi bokkeum (stir-fried anchovies). These side dishes are always fresh, full of variety, and served with generosity.
The waitress is incredibly friendly, making you feel truly welcome. The atmosphere is warmly Korean, with a calm, respectful energy that makes the restaurant feel like a peaceful retreat from the noise of the city.
Even my CEO, Victor, said this is a great place, and I couldn't agree more. Jinju Gomtang is not just a meal--it is a daily ritual whenever I'm in Las Vegas. If you're anywhere near Chinatown, this is a place worth waking up for.
One thing I've come to appreciate more and more is how different cultures approach breakfast. In many American settings, morning meals can feel rushed, overly sweet, or lacking depth. At Jinju Gomtang, breakfast is something else entirely, i.e., warm, nourishing, and thoughtfully prepared. Korean cuisine brings a sense of balance and care to the first meal of the day, and this place captures that beautifully. It's the kind of breakfast that fuels both body and mind, and I wish more people experienced mornings this way.
