Note: Hawaii yeeps, this is on par with Sushi Ginza Onodera. Global yeeps, this doesn't meet the Michelin three star, 400 year old, kaiseki restos of Kyoto.
Greeted at the door, led through to a contemporary, warm, minimalistic space, the ten seat counter and the chefs behind the focus.
The food is seasonal and menus change monthly. Traditional Japanese cooking techniques are employed. Japanese restraint is pervasive through the entire meal. If an ingredient is used, it is done for a reason. This is not the kind of place that throws uni and caviar on everything because they are luxe.
That said, the opening volley of small starters are beautifully presented and span a wide variety of flavors from land and sea.
Seafood for the sashimi and sushi courses are well sourced, fresh and in the case of the sushi, served one by one in a way that builds on the previous piece to create a more complex, harmonious flavor. Well chosen soy sauces, micro toppings and theatrical cooking techniques (searing with a hot blade) all add.

Service is Japanese proper but not stuffy.
$250/pp with a well chosen sake pairing for an additional $85 exclusive of tax and gratuity. Reservations required. Again, there are only 10 seats and two seating's nightly.
A dining experience worth seeking out.
