If you find yourself in Palamós, Kaos is an absolute must-visit — a place where the sea and fire meet on the plate with incredible creativity. From the very first bite, it’s clear that this is not just a meal, but an experience.
We began with the oysters served with a Bloody Mary twist — briny, fresh, and lifted by just the right touch of spice and citrus. A playful, refreshing start that immediately set the tone. The prawn carpaccio followed, delicate and almost ethereal in texture, showcasing the sweetness of Palamós prawns with a finesse that lets the ingredient shine in its purest form.
The marrow bone was pure indulgence — roasted to perfection, rich and velvety, with that smoky depth that makes you want to savor every single bite. And then came the star of the afternoon: the rice with clams. It was soulful and perfectly executed, the rice carrying all the flavor of the sea, balanced with a subtle creaminess and the delicate brininess of the clams. Comforting, elegant, and deeply satisfying all at once.
To complete the experience, the Trenzado wine was a brilliant pairing — aromatic, complex, and vibrant, with a mineral freshness that tied the whole menu together beautifully. It elevated each dish while still letting the ingredients speak for themselves.
