An exceptional dining experience from the very first moment.
Arriving at the St Regis and being taken by buggy through softly lit, palm-lined pathways already sets the tone — intimate, elegant, and quietly theatrical. By the time you arrive at Kayuputi, anticipation is already heightened.
The Dinner Degustation began with a welcome drink, followed by a Grey Goose martini — quite genuinely the best martini I’ve had in Bali. This was complemented beautifully by a glass of Billecart-Salmon Brut Rosé NV, and later a refined French red (pictured), both thoughtfully matched to the progression of the menu.
Due to allergies (prawns, oysters, lobster — and crab to be safe), several courses were expertly substituted. What impressed me most was that these changes felt intentional and elevated, not compromises.
The opening seafood course was replaced with a tuna tartare, standing in for the crab — exquisitely fresh, delicately balanced, and deeply satisfying.
Next came char-grilled octopus in place of the lobster — and this was truly next-level. Perfectly tender, beautifully seasoned, and one of those dishes that makes you pause mid-conversation.
The menu continued to build with confidence and restraint, leading to a standout moment:
the Kiwami Wagyu Cube Roll MB9+ (Australian beef). Hands down, this is the best dish I’ve eaten in 2026. Utterly flawless — rich without excess, perfectly cooked, and supported rather than overshadowed by its accompaniments.
Then, a surprise triumph: the aged black pineapple sorbet. I’m not a pineapple fan — and yet this was extraordinary. Complex, refined, and refreshing in a way that reset the palate entirely.
From start to finish, the service was impeccable. Eko, in particular, deserves special recognition — warm, intuitive, and attentive without ever being intrusive. Service at this level transforms a great meal into a memorable one.
Kayuputi delivers not just technical excellence, but a sense of place, pacing, and quiet confidence. This is destination dining at its finest — and an experience I’ll be thinking about for a long time.
