The Kwans have passed all of Keefer’s pastry recipes — for Hong Kong-style pineapple and coconut cream buns, silky egg tarts, lotus and red bean cakes, and savory meat or tofu-stuffed buns — onto the new guard, who’ve painstakingly recreated them.
