Com Tam Bi, Cha, Thit: Broken rice are the grains that have fractured during the milling process. In this dish, the dome of broken rice has a pleasing, sticky texture with more surface area for absorbing all the flavors. The grilled pork is sliced thin and tender. The shredded strands of pork and pork skin are dusted with toasted rice powder for subtle texture and flavor. The steamed egg is sort of like a meaty soufflé with glass noodles and wood ear mushrooms. The soft and slick scallions also build flavor in this dish. Pour the nuoc mam sauce to make the plate sweet, tangy, and savory. The pickled cabbage slices and sliced cucumber add a refreshing crunch.
Banh Hoi Tom, Thit, Tau Hu Ky: The thin rice vermicelli patties form the base of the plate. The lattice shape offers a nice texture and mouthfeel. Its structure helps you wrap everything in a leaf of lettuce. Every lettuce wrap is slightly different. You can make a super wrap with grilled shrimp, grilled pork, bean curd shrimp cake, pickled carrots and daikon, and mint. It's a great mix of flavors and textures.
