Behind the Scenes of Paczki Day in Chicago | Eater Chicago

"By the time the bakery opens to the public at 6 a.m. on Paczki Day (March 1), the production line in the back of the 100-year-old Lakeview bakery has already been running for eight hours to prepare for the crowds; in the past five days they’ve made — and, if all goes well, sold — 25,000 paczki. "It’s kind of insane," says Luke Karl, the general manager who runs the paczki operation, and he notes that last year a combination of the pandemic and a heavy snowstorm kept customers away (so the bakery even opened on Ash Wednesday once to get paczki to people who couldn’t leave their homes). The paczki-making starts in the basement with two giant German mixers, each more than 100 years old, churning 800 pounds of doughnut mix apiece (enough for about 1,400 paczki), and if a mixer breaks they must order parts from the one company that still makes them on the East Coast and hire a local mechanic to repair it. Bakers form two-and-a-half ounce dough balls, let them rest and rise in staggered batches so they don’t over-proof, then fry six paczki at a time on a conveyor fryer (one and a half minutes per doughnut, three-and-a-half hours per full batch), with a season that runs from the Thursday before Paczki Day through Tuesday and a maximum of about 20 batches. Most paczki are machine-stuffed except chunky apple-cinnamon (stuffed by hand) and the chocolate topping is applied by hand; this year they’re offering nine flavors, down from 13, because they’re "trying to keep things simple and manageable and deliver on what we promised instead of overpromising and working ourselves to death." To reduce chaos they stopped taking custom-mix preorder boxes and three years ago began giving everyone the same preorder assortment (special mixes must be requested in line), a change Karl calls "revolutionary" for calming the holiday rush. Most customers are once-a-year visitors who arrive early on their way to work (there’s a lull during the 9-to-5 day and then a late rush), and staff get through the season on lots of coffee and adrenaline. Karl, who grew up in Kansas City and became general manager 13 years ago after marrying into the Dinkel family, says paczki have long eclipsed hot cross buns at the bakery; they still make about 300 king cakes (without a plastic baby inside — "Mr. Dinkel has a law degree," so they put the baby on top for hosts to insert), and the family generally keeps the bakery closed on Ash Wednesday though last year’s storm was an exception. After the marathon of frying, Karl tries to go home, have dinner, and wash the smell of oil out of his hair; he sometimes splits a fresh paczek with a coworker (his favorite is plain), but these days he seldom indulges." - Aimee Levitt

I got the “viral bagel”. It is filled with a. Thin layer of cream cheese. I expected the cheese to be gooey, but the texture was honestly like bread (and heating it up didn’t help either). $7.38 for a bagel with a little bit of baked cream cheese is wild… I won’t be returning :/

I forgot to take a picture. I had the sausage egg and cheese croissant. It was two sausage patties and the croissant itself was almost two hands together. Solid portions. My partner had the everything bagel toasted and said the quality and potions were great. We both had iced lattes. Great taste and ingredients. Service was really fast and is a great local spot.

426 W Diversey Pkwy I used to live in this area and a lady always used to serve me and recommend what to get since it was my first time. I got hooked onto the tiramisu and tres leches. I no longer live in the area but I still travel to Diversey location, I think it has the cleanest, most attentive staff and super friendly. Each time I come in she recognizes me and I feel so welcome. Now I have a new favorite almond croissants + tiramisu make the best combo. Kleins by Diversey are me and my husbands go to for dessert, would highly recommend!!!! Kleins Diversey is a rare find !!!!

We went to the cafe twice for breakfast during our stay in Chicago. We love their hot Pumpkin Spice latte and the Pistachios Matcha latte. We had the Mushroom, spinach and cream cheese puff pastry and Viral Bagel (Garlic and parsley cream cheese) on one day. The next day we had the Guava & cream pastry and Ham & cream cheese cachitos. We love all the breakfast items. First time trying a cachito. It is like a bread shaped in a crescent. The cafe atmosphere is very casual and relax.

Super cute spot close to where I live that will definitely become a go-to! The vibes are unreal, super cute spot with a lot of seating and the staff was very very friendly. Got a decaf pumpkin latte with soy milk and it was a perfect late afternoon sweet treat. My boyfriend got a decaf latte as well and a ham cachito which was so good. I lived in Houston for a few years and it really reminded me of a kolache (but better!!). I will definitely be back and bringing friends!!

They make hands down the best tomato soup I have ever tried. I have no idea what they put in it but it is ridiculously good. Their coffee and pastries are also a must try! It is a cute location too, very warm and inviting, and very friendly staff. Highly recommend stopping by!

Cute spot for coffee and I noticed they had plenty of seating in the front and back of the shop as well as some tables outside. The employees there were friendly and prompt and got our coffee made quickly. I got the iced sugar free vanilla latte and my boyfriend order the iced lavender latte. The syrups overpowered the coffee, which we usually don't like, but some may prefer that. The pricing was reasonable for 2 drinks and paid $12. Would love to try their variety of baked goods next time.

Kleins Bakery & Coffee shop is a local Chicago place that serves pretty decent coffee and baked goods. This location had plenty of seating and is in a prime location next to North Pond. I stopped in for a simple Chocolate Croissant and Cold Brew, so nothing too fancy. They were just okay, but the croissant had chocolate sprinkles instead of a filling which wasn't my favorite. The staff were nice though.

Came here for the first time on a Saturday for lunch. Since it's further down on Armitage it wasn't too hard to find parking. When we first got there the tables were all full but we were able to get one by the time we were finished ordering. The service was good and food and drinks didn't take too long to arrive. We got some of the cute Easter decorating cookie kits to take home. I also couldn't resist getting one of the chocolate cake slices for later. It was really good and not overly sweet.

Stopped in after our Saturday a nice long walk in LP. It's a cute location with a small outside area if you have a four-legged friend with you. I really enjoyed my caramel late and sausage egg and cheese on a croissant - it really hit the spot! The food order came out correct, and piping hot. Service was spot on and friendly. Couldn't ask for more. A really good spot if you're near by!

I had a nice experience at Klien's! A friend and I stopped in early one morning for a breakfast sandwich and coffee. The staff working told me that the caramel latte was a fan favorite, so that's what I went with. It was a tasty latte, but the flavor didn't taste much different from a standard latte. I did order half sweet and that ended up being perfect for me. The bagel breakfast sandwich was really the standout. It was still hot when I got home since we grabbed the sandwiches to go. They put a huge pile of bacon on the sandwich (woo - no skimping!) and the bagel was soft and chewy. So good and filling! Prices are fair too. Overall, nice spot and now I'm curious to try more food items!

They have the most amazing pastries in the entire city. I feel like I have never found anything as good as the pastries I've had at Kleins especially their breakfast ones like the cachito and their spinach feta puff pastry. They are always so busy, but the wait is always so worth it.

11/03/22 - I've been somewhat obsessed about trying Kleins bacon bagel breakfast sammich ever since I heard they provide copious amounts of bacon. That's my trigger word BACON BACON BACON. Once I hear that I tune out & w/laser guided precision I'm locked in. The day I heard about this sammich I knew I had to try it. FYI there are 2 Kleins - one on @ 4155 N Broadway & this one @ 426 W Diversey Ave. On the day I heard about it I went to the location on Broadway cause it was on my way home. Unfortunately I got there after 2pm and this was the cut off time for this sammich of my obsession. So on that day I had to suck it up and take it like a man. Even though I cried like a little bitch lol Today i came to the udder location @ 426 W Diversey Ave Yes I finally made it here & ordered the object of my obsession. Dam that was a great sammich. I ordered the bacon, egg & cheese sammich on a toasted everything bagel. They put on a generous amount of bacon much more than the 2 or 3 slices you normally get on a breakfast sammich. For me it's not the most conveniently located but was it worth it? ABSOLUTELY & I can say I will definitely be back. I'm so obsessed w/this bacon sammich I neglected to mention that Klein's also has bunch of different baked goods too that look remarkable.

I understand from the favorite number one daughter who resides in the neighborhood that Klein's is a good go-to for a morning nosh. We came in mid-day for lattes and sweets. An M&M cookie and a brownie (it was this month's national brownie day). The one-person operation got our request just as we asked (some specification on the peppermint). The cookie was good but crunchy. (This reviewer prefers soft but that's a style thing, so good cookie). The brownie had a nice top crunch and moist inside. Bravo on that! We were greeted with a smile and left with a smile.

It was a nice cafe for us to stop by and cool off or just chat with friends for a while. It has Wi-Fi but I found it a little spotty. The food selection isn't bad, especially since they look like they're homemade. I liked the flan. Matcha latte was more like milk--I didn't really taste any matcha. The coffee was good though. Cheesecake was fine. They have a good amount of seating and the people working there seemed nice. There's a water station too.

3 toasted bagels to go took over 15 minutes and all 3 were hardly warm. no other customers were there, so I am left to believe they sidetracked the order or don't know that toasted should have some crunch to it. there are too many other choices than to go here.

I've been here a few times and I agree with some of the other reviews on a few things. The service isn't overly friendly but they've never been rude. However, I do get charged different prices every time I order, and I usually order the same things. The breakfast croissant sandwich was the worst thing I've ever eaten. Wow. It tasted like the croissant was store bought and not the best store bought choice either. For being a bakery, I would expect better. The bacon was perfectly cooked temperate wise but tasted like it was cooked on something that'd never been cleaned. The egg yolk was grey. The cheese was barely melted. The pastries in the case were accompanied by flies the first time I went, so I haven't taken a look since. I think the prices are a bit high, but everything else that I've tried has been decent. I'd say the atmosphere is the best part. The view is nice from inside. The outdoor seating is so cute. There's internet available, of course. And, there's cute mugs to choose from if you dine in.

My experience was only meh. I came here seeing someone posted it was a good place to work. But the wifi sucks hard. I literally can't get any work done and it's the reason I came. The prices are a big shrug considering what I got but maybe I picked the wrong thing. $4 for a piece of coconut pound cake but it didn't taste coconutty, it was very dry and somehow burned my throat (and no I don't have food allergies). Feels like I'm going to have heartburn. From pound cake?? Chai Latte was tasty but nothing out of this world. The staff is very friendly though and it looks like they have a very nice selection of baked goods and foods. They were kind enough to exchange the pound cake for a seasonal muffin...which was softer but again a shrug. Not terrible. Not outstanding. But I appreciate the willingness to appease. I will likely not return though. First impression was just not good enough to come back.

Was in the neighborhood picking up dinner so I decided to get an iced coffee. Tried their Lime pie. It was filled with light lime cream and topped with Italian meringue cream. So good. Coffee was great too. I think I got the iced caramel latte. Nice and smooth. So right before I went to pick up my dinner I returned. Picked up the most delicious Tres Leches and a slice of cake with Ricotta and pistachio. Everything was incredible. It's no wonder I went back.

A super low-key bakery/coffee shop in lakeview! I feel like so many new coffee shops that are popping up in the lakeview east area focuses on being trendy and serves overpriced coffees! At Klein's you can easily get an iced latte for under $5 which is almost unheard of in Chicago. Right now, they have a lavender honey latte which is really good! It tastes slightly of lavender without it tasting artificial or overpowering. Do watch out that everything I've tried at Klein's is very sweet! The guava and cheese pastry is a must as well! When I used to live in lakeview, I would also get their ham and cheese croissant, which is great. Excited to try the other stuff on their menu since everything I've had has been really good so far!

I feel like kleins is very hit or miss sometimes it's the best breakfast sandwich in the world and sometimes it's not worth eating. They can undercook the bacon which genuinely sometimes looks worrying. The pound cake is always good. Brownies aren't the best and the service could be a little friendlier.

I live right next to Klein's and have been here several times when I didn't have enough time to have coffee or breakfast at home. The coffee and drinks are nothing to complain about, but their pastries are very dry and not fresh. I stood in front of their door waiting for them to open one morning, and saw them took these ~seemingly~ freshly almond croissants out from the back. I assumed they were just baked and got so excited- but they were the most dry, crumbly, worst croissants I've ever had. Same with their guava cheese pastry- also just old and dry. I wish they would just throw old pastries out...

Needed a spot in the area to hang out for about an hour and this cafe popped up! I got the hazelnut latte which warmed me up during a brisk February day and I loved hanging out in the cozy back area. There was a large food and coffee menu so this is a great spot to grab something to-go, get some work done or catch up with a friend!

I have no words this place is amazing. For starters thank you for being open during this difficult time and thank you for making the order, payment and pick up very easy! I ordered a letter cookie cake for my roommate birthday 48 hours in advance I was going back and forth between a few bakeries but one of their Instagram photos stuck out to me. Dayana is the women I worked with and she was super friendly and made the process easy. She confirmed with a text which I loved because there was a few languages mixups on the phone and we were able to get that corrected through text. I also ordered some decorations for the house and sent her some photos and she was able to match up the color scheme. On to the cake that was absolutely stunning. And guess what?? It tasted just as great!!! I'm on day 2 of eating it and tastes even better. There's only 2 of us and this is a good size cookie cake so it will probably last a few days. Most importantly the price was extremely reasonable. I am so thankful that Klein's was open, Dayana was kind, the cake was delicious, beautiful and reasonably priced! I cannot wait to order another cake from them

I absolutely adore Klein's and those who work here. My first few visits happened during the p*ndemic (I won't type it!!!), so indoor seating wasn't really an option except for the few minutes where you were waiting for your food or drink to be made. I visited this morning to pick up iced coffees and pastries and noticed people sitting inside at tables. Nature is healing!!! If you've never tried Klein's, I recommend a good old-fashioned cold brew or any lattes. Today I tried a chocolate croissant, which was topped with sprinkles and filled with gooey chocolate, so if you're into dessert for breakfast, have I got a suggestion for you! As a bonus, this place offers loyalty cards, so definitely grab one because it'll be hard to stop here only once. In short, Klein's is a fantastic option over by Clark and Diversey, so don't you dare walk by without going inside EVER AGAIN!!!!!!!!!!!!!!!!

I was very exited to visit this location of Klein's Bakery as some years ago I visited their located on Broadway in Buena Park. I was not disappointed. First, their coffee and food are very good. I ordered a latte, golfeados, cachitos and a lox and cream cheese bagel sandwich. The latte was excellent. It's on par with any other independent coffee shop or bakery I've been to in Chicago. The lox and cream cheese bagel sandwich was good, but excellent. I'd order it again, but after I tried their bagel sandwiches. It is not as a "go to" item, but still good. I also enjoyed the unique Venezuelan pastries. To be fair, I don't have a much a context to compare them to, but I enjoyed both the golfeados and cachitos. Second, I loved the Venezuelan offerings. They have a great selection of baked goods, but what sets apart Klein's Bakery from other coffee shops or bakeries is the opportunity to try some foods that you can't find everywhere else. Third, they have a great outdoor space. They have a few outside tables covered by umbrellas. I went on a hot and sunny day, but their outdoor space was cool and shaded. It was a very pleasant experience. Fourth, they have nice interior decor. If you choose to eat inside, you will be please by their inviting space. Fifth and last, but not least, service was fast and friendly. Overall, this is a must visit coffee shop and in Lakeview. Their food is good and the over experience is pleasant.

I'm visiting Chicago to take my mother to pre-op appointments, and we didn't feel like a cooking breakfast today. She suggested Klein's for croissants based on a friends recommendation. I walked the block and a half to their Diversey location. Inside, there were a few comfy seats at the front window and along the wall. It's still the pandemic, and they had stickers on the floor where to stand b4 walking to the counter. There wasn't any plexiglass, but employees were all in masks, and the counter separated us by about 3 feet. This was my second outing since the pandemic started, and having been vaccinated fully, I felt safe. So, I was expecting a choice of croissants, but this is a Venezuelan bakery, and the only croissant was an almond one. They did have several pastries, and bakery 'sandwiches' (spinach and cheese in a flaky pastry etc). I chose the Venezuelan cachitos, a ham & cheese wrapped in what was similar to pretzel dough, but much thinner - wrapped like a crescent roll. It was REALLY good. I paired it with a fruit cup (watermelon, cantaloupe, grapes and a strawberry). They don't have decaf coffee, but they do have decaf espresso, and the decaf latte was delish. Mom had the almond croissant, a cheese pastry, and we shared a piece of the tres leches cake. The cake was pretty epic, but we both got sugar rushes with light heads after eating 2/3 of it! I would highly recommend the cachitos! The gentleman working the counter was SUPER speedy and efficient and had a smile under his mask (I'm just sure of it)

Oh how I Love this bakery.... literally everything on their menu is A+. The coffee is a little too strong for my preference but all baked goods are delicious. My most favorite item is the cheese Danish or croissant and tres leche (A+++, THE BEST) EVERYTHING IS FRESH. They do some really cool custom cakes as well. I have already experienced then twice and both times they are were absolutely perfectly done. I would definitely recommend this quaint little bakery with A VERY SWEEET PERSONALITY!!

I have visited this cafe several times, why am I being charged two different prices each time I purchased medium coffee, sometimes I am charged 4. 20 and 2. 80 for same sized coffee? I have also experienced racism from the staff, they were making fun of my skin and using the word yellow after I purchased my order. I was very uncomfortable. They should be better trained.

got an oat milk latte and croissant ham egg and cheese. the croissant sandwich was disgusting, the cheese wasn't melted, the egg looked grey like when it's prebought at a store and just overall it was not good. then the oat milk latte was also not good, the oat milk was WAY too much / strong and when i asked if i could get it with less oat milk they said that's just how they make it and wouldn't remake. for my sandwich being disgusting and the coffee not being good the least they could do was try to remake. also my friend ordered everything bagel sandwich and they gave him plain. do not recommend

I've been to the Klein's in Uptown and this time I visited the Klein's Bakery & Cafe in Lincoln Park for morning coffee and an egg bagel. The lady who took my order was very pleasant and masked and I was pleased to see plenty of hand sanitizer everywhere. My food was ready quickly and it and the coffee were just what I needed to start the day.

Love this bakery and coffee shop. They have really good cold brew and iced lattes. All of their pastries are incredible! We tried a handful of pastries and each were better than the last. We also have tried their croissant sandwiches (which are really big and filling) and their bagel sandwiches. Personally, I liked the croissant sandwich better as I am biased to NJ/NYC bagels. They have a great selection of pies and cakes that I can't wait to try next time. There is always a line but it moves quickly and is absolutely worth the wait. Looks like they also do personalized cake orders so I will definitely look into that for a friends upcoming birthday. They have some outdoor seating but more inside, feels very comfy and like you're in your friends kitchen. Highly highly recommend this place.

Came for the sidewalk patio, kept coming back for the food!! Honestly one of the most elite breakfast places in the neighborhood. Bagels are 10/10 (I think they make them fresh). Never had a cachito before but I'm certainly a fan now. I struggle to order every time because I want to try everything on the menu. It's also dog friendly inside and outside. Highly recommend.

Venezuelan bakery and cafe. They're open during COVID-19 foot limited hours everyday. Great breve lattes, and the staff are friendly and welcoming. Great local spot for a quick fix me up. While there isn't any dining in these days, when establishments are permitted to open, the space in Klein's will be filled. It's spacious, open, and has a great location for non-locals and locals alike.

Both the coffee and the breakfast sandwiches here are excellent. The croissant with fried egg, ham, and cheese was fantastic. It was decadent without being over the top, all of the ingredients were fresh, and I really enjoyed it. This is an excellent café for enjoying a casual breakfast or for pulling out your laptop to work for a few hours. Looking forward to trying some of the cold brew here this summer.

Klein's is just outstanding. Have been there a couple times for just sandwiches and coffee and it has been the best. So far have avoided the temptation of the pastries, but that will not last. Prices are very reasonable as well, especially compared to other places in the area. (Note that the location on Diversey while in Lakeview, directly borders Lincoln Park.) Very friendly staff. Restful, laid back, unhurried store ambiance further enhances the experience. Highly recommended. Don't even think about going to those nasty, sterile chain places.

Simple, low key and consistently good! Their coffee is always good and the staff is great! I've also ordered delivery and the quality is the same as if I was there. My fave is their spinach, mushroom, cream cheese puff pastry pie!! It's dense and so flavorful and the puff pastry is SUPER flaky and perfect!! Highly recommend! I also like their plain croissants and their simple egg and cheese on croissant or bagel!
