How to Spend a Delicious 24 Hours in Marshall, Virginia | Eater DC

"Knead & Know is the area’s premier bread class run by baker Melinda Friend, offering serious, hands-on sessions in everything from croissants to Japanese milk bread to baguettes; the fundamentals of bread class is the best way to start, and these classes span over four hours, so they’re intense — and they’re genuinely a reason to travel to the Plains. Knead & Know also offers an Airbnb in the Plains." - Missy Frederick

I recently took Melinda’s bread-making class, and it was an incredible experience from start to finish. Melinda’s knowledge of baking is truly impressive—she doesn’t just teach the “how,” but also the “why” behind every step, which made the class so much more valuable. Her years of experience really shine through in the way she explains techniques, shares tips, and helps troubleshoot along the way. What I appreciated most was her approachable teaching style—whether you’re a total beginner or have baked before, she meets you where you’re at and makes the process fun and easy to follow. By the end of the class, not only did I have delicious bread to take home, but I also felt much more confident in my ability to recreate it on my own. If you’ve ever wanted to learn the art of bread-making, I cannot recommend Melinda’s class enough. She’s a wonderful teacher with a wealth of knowledge, and you’ll leave inspired (and full of fresh bread!). Tip: Be sure to start with her Fundamentals class—it lays the groundwork you’ll need to get the most out of her more advanced classes.

The true judge of a good teacher is how well the students are able to retain and implement their teachings. My wife and I took the baguette class (our second one after the basic course) and this was our result of our first batch at home!!! Huge success. Melinda is a wonderful teacher, the class sizes are no more than 6 students, and she has solved my issues with my home made sourdough. Couldn’t have done it without her - this isn’t the kind of stuff you learn off of YouTube

I took the Fundamentals class a few weeks ago. Melinda is beyond awesome nice! Even if you never bake anything after the class, it's worth the price of admission. And the small shared food at the end, with cheese and dips, oh, and fresh bread of course, is too yummy. I came in as a klutzy baker, and an still learning. But my first batch of focaccia bread is super good. Not quite at Melinda's quality, but a huge improvement based on what she taught . If you enjoy baking give her a try. Jamie

Took Melinda’s bagel class today, and it was excellent. The class itself was informative and fun. Melinda is a great teacher, and her friendly, informal style created a fantastic learning environment. Her attention to hygiene, distancing, and other preventive measures in this time of COVID was also exemplary. Highly recommended!

Melinda is an awesome teacher! As someone who can't bake to save her life, I took the Fundamentals of Bread Class (Highly recommend) and walked out at the end of class feeling confident. The bread is delicious, the class was fun and informative! I will be back - after a lot of practice :)

Enjoyed another great day with Melinda at Knead and Know. Michaella and I have learned so much from Melinda that has helped us in our own bakery business. It’s easy to think that you know all you need to know if you have been baking for awhile, but I tell you, we picked up something from each class we have taken. Caution, though. Please, if you haven’t already, start with Melinda’s Fundamentals class. It is incredible and absolutely necessary to be successful with every other class. Enjoy!!

Took the fundamentals of bread class with Melinda. It was so much fun, informative and the bread was outstanding. Melinda makes sure you do it right and you get to leave with a fresh loaf of bread. I am looking forward to signing up for more classes so I can bake bread the correct way at home. The price is well worth it. As the saying goes“If you give a man a fish, you feed him for a day. If you teach a man to fish, you feed him for a lifetime.”The same goes with bread.
