Fantastic pizza! I've never had Detroit style pizza so no idea if this is authentic. We had The Dodger and The Hot Neighbor and preferred the latter. The dough is thick but light and chewy. Whatever cheese they use is amazing on pizza. It's stretchy and chewy and doesn't fall off the pizza with each bite like you get with chain restaurants. The burnt cheese bits on the ends are worthy of being their own dish. The pizza is way more filling than I expected. We ordered two for 2 adults and a child and took an entire pizza home. The chicken wings were excellent as well. Perfectly crispy on the outside and moist and juicy inside. Overall, I'd say it's a little pricey for pizza, but it's also not the kind of pizza you're ordering on a whim. The space allows kids and there's a separate section that is 21+. Order by QR code or using the ordering screen located to the left of the pick-up counter. Chef Shota was around while we were there and took the time to chat briefly with us and take a photo. He's as friendly as he appears on TV. My son was excited that he got to talk to the chef.

We've been meaning to try this Detroit style pizza pop up by Chef Shota for a while, but with so many great places to eat in Seattle, we didn't quite make it there... Until we saw Chef Shota on his IG page saying Kobo is winding down by end of Oct. 😔 Soooo even though we aren't big Detroit style pizza fan, we had to give it a try before it's goodbye. I guess since they are winding down, they greatly pared down their offerings. We got the pork belly pizza and beer battered fries. Kobo is located inside Redhook beer hall so the vibe was fun and casual. The fries were awesome. The pizza... How do i explain this: the bread was super fluffy with crispy edges from the pan. Toppings were delicious pork belly and pineapple like a fancy Hawaiian pizza. Sauce was good, with average amount of cheese. For some strange reason all these great components to a pizza didn't quite make a great pizza. Hubby and i were scratching our heads trying to figure out why we weren't blown away. We love Chicago deep dish and thought we would also love Detroit style pizza too since we love bread, and this pizza is a very dough! This is a very substantial pizza, and we barely could finish one. Perhaps we would like different toppings better? Sadly we wouldn't get to try it again before they close. But we can always get great fried chicken at Chef Shota's other restaurant Taku just a block over!

I have to agree with most of the reviewers. The food itself is excellent and price is very high for the amount you get. We got the mozzarella sticks, The Dodger, and The Hot Neighbor. Love the uniqueness of the dough and how mochi/chewy it was - it was even great heated up the next day as leftovers! The pizzas itself taste amazing, and I recommend the two we got, they’re just not heavy on the protein. Sauce wise though the flavors are amazing! The beer batter on the mozzarella sticks was a great twist on a classic appetizer - I highly recommend them. If you want something unique and different for dinner, I suggest this place, but if you’re just craving pizza, go someplace where you get more bang for your buck & just as good of pizza🍕

Def a different experience than what I was expecting. Overall, it was an ok experience. Everything is self-order, self-pick up. Don't expect a server. Order via QR code and you'll receive a text when your food is ready to pick up at the kitchen bar top. Order your drinks at the bar and leave an open tab if you plan to have a few. Good beer selection with a limited liquor selection. We ordered a Kale Salad, Tater Tots, The Dodger and The Pepperoni Pies. The salad was delish!! Tots were slightly over cooked but still good. Pizza crust def is thick and crispy. For the price, I wasn't blown away by the pies as I expected a bit more toppings and flavor. Maybe it felt out of balance with the crust to topping ratio. I'll try again with a different pizza menu in a few months. More to come!

I was recommended by a foodie friend about this place, and the mochi pizza just sounds so tempting... A group of us visited the restaurant on a Sunday afternoon. It is located in the Redhook Brewlab, which has many open seatings in front of the store. It operates like a food court- place orders at the counter or scanning QR code, get your own utensils and water, get the order from the counter when it's ready and clean up afterward. We ordered Umami tots, napa cabbage salad, and tsukemono (pickle plate) to share. All of them are really good, especially the salad. The tots are crispy and fresh. I really enjoy the salad, the vegetable is fresh and the dressing is spot on! definitely try the salad! also, it is a big portion, we 8 people tried our best to finish the whole bowl!; I am not a big fan of the pickle plate but all my friends enjoyed that! For pizza, we ordered: The Ginny, The Dodger, The Hot Neighbor and The Maverick. I like all of them and personally like the hot neighbor the best. The mochi flour makes the taste very unique and all our pizzas came out hot and fresh! There is a lot of dough in the pizza so it's very filling, I ate two and a half pieces and I was so full! I will definitely come back and recommend here to my friends!

We recently visited Kobo, and it was an extremely disappointing experience. We ordered the two vegetarian pizzas - cheese and mushroom. The cheese pizza was, as my friend described it “cafeteria pizza but worse”. We should not be paying 18 dollars for cafeteria pizza. The sauce tasted uncooked and lacked any hint of the advertised umami flavor. There was supposed to be Thai basil on the pizza and there was not a speck of green to be found. The mushroom pizza was slightly better. The only redeeming quality was the herb aioli. Both pizzas were too thick and the dough tasted raw and uncooked.We also ordered the tater tots. The “umami” tater tots were just frozen tots with some pepper sprinkled on top, and the “yuzu” ketchup was nothing more than Heinz ketchup. We paid 57 dollars for this meal, a ridiculous amount of money for what we received. Overall, I left wondering why I even went and will not recommend or return.

I visited twice during my 2 day stay in Seattle. 1st day, I was super impressed with the texture of the pizza crust. I didn't have much of an appetite that night because we had just eaten and came for drinks at Redhook and thought, "Why not?". Since I only really enjoyed one slice that night, we came back and ordered the next day. Day 2 was horrible. The pictures/videos I have are from day 1. Day 2 had a really black crust that was bitter. I didn't go up to ask them to remake it because the guy didn't speak much English. I only noticed because I asked for no honey on my pepperoni pizza. Idon't think he understood me because the pizza came with honey. I might try it again since my first experience was so delicious. Might have more courage to return my pizza if it's burnt next time.

Update: they actually managed to mess up the tater tots as well. The last time I ordered them they were fried to a crisp and completely inedible. Not for dining alone or groups with varied tastes. There are a few appetizers that you can order if you're just looking for a snack but no way to get a meal unless you are ordering for the whole group. I really wanted to try the pizza so I ordered one even though I knew I wouldn't finish it. It's mediocre at best and even worse reheated. The tater tots are the only thing worth the price.

This place rocks. The pizza topping combinations are ridiculously delicious, and the Detroit style pizza is well executed and so enriching, especially on a cold day. We had the pepperoni pie, and the hot neighbor. The pepperoni pie also featured hot honey, which really made it incredible for me. The combination with the perfectly seasoned pepperoni cups was so tasty. The hot neighbor featured some of Taku's fried chicken. My only qualm was that the chicken got stale pretty quickly. Other than that, the red onion and nori ranch really took it to the next level. Finally, the tots - the sauce that came with these was absolutely addictive. Savory, rich, and umami kick - plus ultra crispy tots that held their own even after about an hour. This place is perfect for takeout too, but the venue is also pretty spacious and you can grab a drink too.

The food is amazing!!! I think it's the best pizza I've had in Seattle. The pizza crust tastes kind of like focaccia and the pizza was super flavorful. The kale salad was super delicious as well! I am definitely coming back again! The prices were pretty reasonable and only taking one star down because there wasn't much service at all, but other than that we had a great time. Ambiance was very laid back - it was inside brewlab - very easy to find!

This is a place where you wouldn't feel guilty or bad for not tipping. The service is basically non-existent. They have inattentive workers who give slight attitude when you ask them a basic question like "where do I order" as if I should've known upon coming for the first time. They don't call your name or table number or order number or say anything when the food is ready. Unless you're staring at the counter, you wouldn't know if your food is ready. The website you order at didn't have any tracker or indicator or send any notification about the order progress. Overall just really annoying experience because we were the only customers lol and was not busy for next 30 minutes while we were there. It was our first time here and probably won't be coming back. Food was ok. Pizza was greasy with cheap cheese that was not even melted completely. Crust was good tho.

The pizza here is delicious! I'm a huge fan of Detroit style pizza because the bread is usually fluffy and delicious! This spot is located inside a beer brewery which makes for a fun spot to enjoy with friends. Plenty of seating! We came in on a Wednesday night. For the pizza, you can place you order on their tablet or if you sit at a table, scan the QR code and place your order there. My husband and I shared two pizzas and the wings but honestly one pizza would have been plenty. We had a full box of leftovers to take home because although the pizza looks small it's very filling! Food : + tebasaki wings - super tasty and very flavorful! + The Dodger pizza - loved the tender meat and flavor of this pizza! I got a side of nori ranch to dip. + kimchi pineapple pizza - tomato sauce is so good on this one. I didn't care too much for the meat but everything else was really good! Overall, loved this spot and would come back for more pizza!

Really like this Detroit-style pizza place! They only really have one vegetarian item and a smaller menu, but the pizza is very good. It does take quite a bit of time to get your pizzas, so plan accordingly - it took 30-45 min for our orders to come out and they came out in parts too. The Redhook staff were actually very helpful in checking on us and communicating with the Kobo staff to see where our orders were at. Ambiance-wise, it's inside of Redhook so it's conveniently located within a pub setting. There are indoor and outdoor tables, it seems dog friendly inside, and it gets pretty crowded even on a Wednesday. Overall I'd order again but I'd want to see more veggie options on the menu and have a bit more efficient service.

This pizza might be the single reason I pick up my life in New York and move to Seattle. I mean.. MOCHI PIZZA!? It was absolutely incredible, perfect chewy crust dough that will make you never want to skip out on eating the crust again. I heard Hot Neighbor is even better but didn't get to try it before I left... heartbroken. Might have to come back to Seattle just for this pizza. Also, the sour beer was great and the bartender was even better! So kind and helpful :)

The service is fast and friendly. Nothing bad or amazing to talk here. Ambiance is quite nice as it is in a brewery setting. You also have the option to eat outside if you have pets or the sun is out shining. Now the pizza, I am a die hard Neapolitan style pizza... I like those airy ginormous crust with the fresh tomatoe, basil, and anchovies.... But I have to hand it to the chef for making a Japanese inspire pizza... the crust was chewy and thick... almost reminds me of mochi but in bread form! It is quite unique and I highly recommend it. I tried the one with the miso sauce as that seems to be a stand out ingredient... it was good ... very rich, it had some ranch like dressing... I am looking forward to trying all their other flavors!

A unique spot for Japanese-fusion, Detroit-style pizza located inside of Redhook Brewlab -- the food is delicious and the concept is fun and I am seriously obsessed. It's really easy to order using the tablet inside, and you get a text when you can snag it from the counter. There's ample seating inside and on the outdoor patios, and would recommend snagging a beer while you wait. The food comes out fairly quickly and it's a great casual lunch or dinner spot. Each box comes with six slices and they are so airy and fluffy -- the dough is FILLING, and the crust is so good. They have a pretty limited menu, since they occupy a small space, but I loved their Miso-Mushroom and Cheese pies and appreciated the unique vegetarian option! My friend loved The Hot Neighbor, which is a fried-chicken topping. I'm generally a huge fan of Detroit-style pizza and the Asian twist really sets this apart from others. I haven't tried and of the appetizers, but will definitely be back to do so!

I'd say 1 pizza could feed either 6 light snackers, 3 hungryish people, 2 hungry ppl, and 1 starving friend LOL Super unique flavor options, would def recommend the seaweed ranch for the extra $1

First thing I noticed when I walked in was the amazing ambiance! Ambient and soft bar lighting makes this such a great spot for a date or with friends! We ordered the Miso Mushroom and The Dodger. The teriyaki brisket in on The Dodger blew me out of the water. After that, the miso mushroom did not hit as hard: first-slice bias! The unique Asian-inspired flavor profiles with familiar undertones were delicious. The tots were also great, very crispy! We also ordered some drinks from the bar. I had an amazing dining experience and if you come, save room for dessert because Salt & Straw is just down the block!

I was a little upset about the hype about this place. We brought a group of 5 other friends and ordered 5 of the 6 different pizzas. All pizzas in my opinion lacked any real depth or flavor and the pizzas with meat lacked the meat which was really disappointing. You get a lot of dough/bread which is still tasty but end up losing flavor of the means and everything else. Aesthetic to the eye but it doesn't meet the taste buds in my opinion. I really wanted to love and enjoy these pizzas but I think I'd be content with not eating out here again. My favorite pizza was the Maverick and that is the only pizza I felt had bold different flavors. Savory mixed with sweet and each bite actually had me wanting a little more.

Ordered our lunch from Kobo Pizza when we stopped for lunch and a few beers from Redhook Brewlab (which is in an adjacent storefront). Excellent choice! Ordered our beers, sat at a table in the atrium area outside, then went in to order our food. Had the cheese pie, mozz sticks and Salt & Pepper Broccoli. All of it was absolutely delicious! We had never had a Japanese pizza before, and we were blown away by the texture and the taste. Tremendous. The broccoli was tempura fried and so yummy. Mozz sticks (aka mozzarella sticks) were excellent, too. Service was quick, and eating lunch out in a beautiful garden area was so enjoyable. If you're in the area, this is definitely a place to stop.

I enjoyed the crispy parmesan bits $13 Pizzas in general - Detroit style pizza, deep dish ish. Crispy edge from Parmesan crusted on the dish pan prior to baking then the mochi dough which keeps the dough chewy and soft. Each Pizza feeds 1-2 people. * Dodger Pizza $26 - good flavor, bits of braised beef was delicious but small and a bit lost in the other toppings, especially ours was a bit heavy handed on the mayo. *cheese pizza $22- distribution of toppings felt uneven. Still solid pizza. Kobo seasonal drinks * miso hot chocolate. Miso was not very strong. Chocolate thick. The complete opposite of a Swiss miss package. If you like chocolate, this is for you! *sesame cider latte. Interesting. I kept going back to this one. +the Large selection of non alcoholic, alcoholic and gluten free drinks at Redhook. Service: order options: 1) on-site with their kiosk 2) on their website 3) Uber Eats Ambiance- love the partnership with Redhook Brewlabs. Large open space, lots of seating options for individuals to Large groups. Indoor and outdoor seating options. Value- kind of expensive, but perhaps me, not getting use to inflation. Recommend- if you're in the area, you can't go wrong! Solid food, unique and fun. I am also a fan of Chef Shota Nakajima. Happy Eating!

I have been wanting to try Chef Shota's take on Detroit style pizzas for a while now, and they did not disappoint. Ordering was easy, you have the option of using the kiosks inside or with the QR code on your phone. I had the Hot Neighbor and the dough was so fluffy. Getting the seaweed ranch on the side was also a nice touch.

It's like a food hall vibe mixed with pizza place, beer house. When you order, it's self service that you need to pick up the food from the counter. Easy steps to put in your orders through your phone. Pizza flavors are creative. Cheese, kimchi, fried chicken, pulled pork .... Pizza dough is thick and firm which is fermented with Japanese yeas, really enjoy it. Environment is clean and good vibe for hanging out with friends there.

Spacious and casual with two bars serving beer on tap. A great place to go for dinner with big groups or for late night munchies. We got The Hot Neighbor (Taku fried chicken, Koji hot sauce, Red Onion, Nori Ranch, Herbs) and it was delicious, if a bit dry and not spicy enough. This is Detroit-style pizza with a crispy parmesan crust and fluffy bread base. The fried chicken goes so well on this pizza and I wished there were more pieces. Overall I highly recommend and I will absolutely be back!

I came back again with a friend and enjoyed the food much more than the last time I was here! We ordered the Dodger pizza, Hill-d cheese, and Tsukemono plate. I definitely think the Dodger is the best flavor out of the ones I've tried so far, the short rib and tonkotsu made it super flavorful. The grilled cheese was also pretty good, love that they put cheese on the outside of the bread to crisp up. I also love that the soup was served in a little bowl with an Asian soup spoon, very nice touch. The tsukemono was just as good as before, very fresh and cut the greasiness of the other food. My main gripe with this place is it seems kind of inconsistent when it comes to pie toppings--they had more flavor and were distributed on the pizza much better than the previous time I was here, but I'm not sure if that's just dependent on the workers or if they changed something else. Still a great place to have a little snack or meal while getting drinks with friends though!

What a fun concept! I was excited to try the famous "mochi" pizza after seeing this place in TikTok videos. It was really fun to share pizza and drink some beer/cider (from the brewery next door). Very chill vibes. Kobo Pizza is located inside a brewery. The pizza dough was unique - chewy and crispy! We ordered 3 pizza to share among 6 people. (In order from my favorite to least favorite) - we tried 1) The Hot Neighbor, 2) The Flat Earther, and 3) The Dodger. There was definitely a fusion of Asian flavors in the pizza. I would recommend the Hot Neighbor, Umami Tots (the perfect crisp!), and Salt and Pepper Broccoli. Parking is a struggle, but as expected in Capitol Hill. Price is also a bit high. Overall - food is good and definitely a fun place to hang out with your friends.

I was super excited to give this place a shot, and it absolutely lived up to expectations! The rice flour in the crust was incredibly dense, yet airy. It also changed the flavor of the dough which was very pleasant. The Japanese influence was top notch with the crunchy chicken and the sauce. It added flavors that you wouldn't expect from a pizza. This place is an absolute must. I highly recommend it. Adding a beer on the side is a solid plus too.

This is a great place to get unique Detroit style pizzas that you won't find elsewhere! The toppings are tasty and it's located in the Redhook Brewlab, so you can enjoy a fresh pizza with a cold glass of craft beer. I really like the dough here compared to some other pizza places. They add some mochi flour to the dough which gives it a more bouncy chewy texture, but it still remains soft and pillowy. They put a good amount of cheese on the pizza and the edges get caramelized and crunchy with all the cheese which is amazing. My only complaints with the pizza is that there's not nearly enough sauce and toppings. The toppings might look generous but it's like 75% onion and herbs and I wish there was more meat. Also, some of the pizzas don't have sauce so the bites without toppings end up dry and plain.

NOTE: Review reflects scoring after a full refund was given. My boyfriend and I came to Kobo Pizza for dinner and it was located within a brewery. We ordered beers at the bar and sat at a table to scan the QR code to order our pizza and tots. We ordered The Dodger pizza with a side of ranch and an order of tots. There were plenty of tables both inside and outside. We saw some other tables around us got their food walked to them by servers. We know thicker crust pizza takes time so we waited - no biggie. We waited 40 MINUTES and nothing and by this point my patience is low. My boyfriend walked to ask the staff about our order and was shown our pizza was waiting on the counter already prepared and never walked out. Why were some orders walked out but ours wasn't? We're not locals and literally did not know what to expect here as we ordered from the QR code? We didn't receive any notification of our order being done. I don't know how any server or cook saw the food sitting in the window and allowed that to happen without asking ANY questions or trying to figure out who ordered that food? I was so excited for the tater tots and they were cold. Who likes cold tots? Nobody. They all went to the trash. The pizza? Definitely not hot or even warm. Was the pizza flavorful? Yes, but I paid for hot food and this was literally sad. I expected a hot dinner and it's disappointing as we only had 3 dinners total in Seattle and felt like we wasted an experience. Worst part: we ordered food at our table and had to tip and pay before we got any service which was in fact no service. We never received any notification our order was done and to pick-up. I emailed Kobo to let them know our experience and was luckily granted an apology and full refund for our experience. They handled our visit the best they could after the fact, but it still does not make up for the very disappointing experience we had.

My boyfriend and I were so excited to try Kobo after watching Chef Shota on Top Chef! We didn't love Taku, so we were hoping Kobo would be better. Unfortunately, we were not impressed. We tried the Dough Bites as a starter, which were just slightly chewier and airy hushpuppies. By themselves, they were flavorless as you could barely taste the seaweed powder, and the sauce was way too heavy and thick. For pies, we tried The Dodger and The Maverick. The Maverick's dough was way too thick, so when you took a bite all you could taste was dough and barely any of the toppings. The Dodger was a little better because it was cooked longer, but still tasted overall bland. I think it's a quality control issue, because you can tell from the pictures that the sauce is not evenly spread and is barely there on some pieces. All the flavors were too subtle. Overall just disappointed, mainly because everything lacked flavor. I wish Chef Shota would open a restaurant that showed off the skills he displayed on Top Chef!

Really great location within Redhook Brewery which makes it easy to grab a pizza and sit outside with a beer. Service was really fast and easy to order online which is a plus. I love Detroit style pizza and this did not disappoint. Was really excited about the Asian inspired flavor combinations - we tried The Hot Neighbor and the Kimchi Pineapple pie along with a side of ranch and hot sauce. The dough wasn't as crunchy/chewy as I'd like but still really good and the flavors were awesome. We liked the hot sauce better than the ranch, overall great unique pizza! We also loved Chef Shota on Top Chef and the highlight of dining here was getting to meet him here! He was so nice, came out from behind the counter to talk to us and we even got a pic together! @main_guy_eats

A good place with good pizza. Loved being able to sit outside at a picnic table on a nice day. The pizza is more filling than it looks and even though it was so good I had to tap out after 2 slices. I love the fusion concept and we got the hot neighbor which had piece of fried chicken from Taku next door on it. I'm not sure what the sauce was but it tied it together so well. We also got tater tots which were so crispy on the outside and i was super surprised when I dipped it in the ketchup that the ketchup was citrusy. So unexpected but such a fresh burst of flavor to pair with the taters

This place was pretty good. I was super excited to try after watching chef shota on top chef. I loved their crispy cheese crust and I'm a crust person so I liked the doughiness. The toppings are quite unique and love the flavor combos. It seems a little pricey for pizza but I was super full after 2 pieces so this lasts me and my partner a few meals after. We came here on a Friday night. Was easy to get a seat in the quite spacious redhook brewery. Most of the pizza options were sold out by the time we got there. We had the pepperoni pizza. The mochi dough was delicious and honey was a great touch. Mochi has a chewy texture. Would want to come back to try the other flavors.

What a major disappointment. I came here after seeing a food blogger post about Kobo's amazing specialty pies. Literally came in the next day from seeing the post. To our surprise the day we came in on started a menu with only their regular pizzas. (I had my order all ready from studying their menu the night beforehand.) This adjustment was not posted on their website, which would have been helpful as I wouldn't have come or drug in my family as well. However after getting over feeling majorly disappointed we decided to order their pepperoni pizza, the sausage broccoli pizza, salad and cannoli chips and dip dessert. In the meanwhile, while waiting for our food, we did order a flight of beer and a craft cocktail from the bar (Redhook) area. Two stars for my review since the environment is fun and inviting. Parking was not bad. Bartenders for the red Hook brewery were very friendly. Finally, after receiving our food, which didn't take that long, we took our first few bites. Bland, bland, bland. It didn't have much taste to it at all. How do you screw up pizza?! We went back to ask for some red pepper flakes to add some flavor, which the kitchen looked bewildered over and said they didn't have any. It's a pizza place??? No red pepper flakes. I then asked for some salt and pepper. They again took a while, but provided a little bit of salt and said they didn't have pepper. Again scratching my head. I usually feel like I do my research well and use Yelp as a springboard for great meals and experiences. However, this place I do NOT recommend, at least for eating their regular menu pizzas. I'm hoping the specialty pies as advertised are amazing, once they return to their menu. Expensive and regretful mistake for us. Bummed.

What a cool spot to get Pizza in capitol hill! I'm sad I came at a pop up time where they didn't have their original menu but nevertheless the food was good. Their garlic bread was yummy! I liked the white pizza a bit more than their pepperoni. I'd say 1 pizza and an appetizer filled 3 people. You order off your phone or kiosk and they text you when it's ready. Ambiance is inside a brewery so there's a lot going on and to do. I'd come back.

Located inside the Redhook Brewlab, Kobo offers a nice bite of pizza to go with your beer. With the setup it almost feels like a food court - very fun, lively and great vibes. I decided to try The Ginny, which is a simple pepperoni pizza topped with garlic honey. The toppings were solid. You can't really go wrong with pepperoni and honey on pizza. The crusts were everything you would expect from a Detroit style pizza, with nice crispy, blackened cheesy bits. The dough is supposed to be Detroit style with an Osaka twist. It contains more milk to give it a Japanese milk bread taste, as well as mochiko. This leads to a softer, somewhat spongey texture that I personally am not a huge fan of, but can see the appeal, particularly for those whose jaws struggle with chewier, crispier pizza doughs. Overall, good vibes, pretty good pizza and nice beer.

This was so good!!! Everything was good. The pizza crust was soft and chewy but the ends were crispy. The toppings were the right amount. The tater tots were really good and the kale salad was even really good. We had the fried chicken and the pepperoni pizzas. I would go back without question.

Went to this place after work with my coworkers for drinks and ordered two pizzas to share among 5 people. I had seen this place on tiktok, and was super happy when my coworkers were willing to indulge me in trying this place out! This place did not disappoint! Though I think the pricing is a little steep for the size, the taste really hits the spot. Definitely appreciate the creativity and delicious spin on Detroit style pizza. We went with "The Ginny" since one of my coworkers who is from Detroit said that is the closest one to the "real deal". And "The Dodger" was just one that really attracted all of us. Both of them had the perfect crispy crust and flavor. "The Ginny" was more standard, and not super exciting. "The Dodger" on the other hand is a perfect combination of Asian influences and Detroit style pizza. The teriyaki was perfectly sweet and salty. I think the prices were a little high, and it would be nice if they put on more toppings. Overall, the place is a good spot for getting food to go along with your drinks! Would recommend.

Minus one start since Chef Shota wasn't there! Hahaha ... Kobo is Top Chef alum's restaurant featuring mochi flour pizza! It's located within RedHook Brewery so the ambiance and setting is super chill and fun! We got the Hot Neighbor and the Dodger and both were very tasty. There is a lot of dough to the pizza so it's very filling and at $20/pizza can add up pretty quickly. My kids were looking forward to the corn nuggets but unfortunately wasn't orderable when we got there. Instead we tried the fried broccoli which turned out a bit soggy. Definitely could use more crunch to it. Overall great environment that would be fun hangout with friends!

Don't come here expecting traditional pizza, but you will not be disappointed with the pizza you do receive. We had the Dodger and it was a one of a kind flavor with the sweetness of the short rib and saltiness of the complimentary ingredients. The crust was light and airy and although we are more of a Chicago pizza family- this just really worked!

Came at 8pm on a Friday and they still had all their pizzas available! I was worried there would be a lot sold out since I heard that happened before, but I guess it mightve just been because they opened recently. Tried Flat Earther (kinda like a margherita) and The Dodger (brisket and tomato tonkatsu??). Both were really good! Detroit style is SO good!!! I'm more likely to get the Flat Earther again though since it's classic pizza flavors and also kinda hard to justify the $25 price tag on the Dodger again. Tater tots are a must have add-on. So yummmmy and crispyyyy.

Got the dodger it was super salty and not very textually satisfying. It was made quick and the short rib was fine but overall the crust was hard and the cheese at least on that pie just didn't work. I feel like one of the more basic pizzas would've led have been better but I still think the crust ain't for me.

Due to another review, we ordered The Hot Neighbor, along with the crusted grilled cheese sandwich w/ tomato soup. Both came to around $30ish which ended up being more than enough for me and my boyfriend, we even had leftover of the pizza. The Food was suuuper yummy and the location of it was super hip and fun! It took less than a round of drinks for our food to be ready which was super quick!! Definitely will return for some grilled cheese or pizza again!

The pan-pizza styled pizza crust that's perfectly chewy with crispy cheese on the edges! Sometimes pan pizzas are a bit too doughy but honestly I liked the thickness that these pizzas have due to the texture of the mochi pizza dough. I'd definitely recommend it for anyone who loves a good thick crust pizza! Only downside is that I feel the toppings on the pizza could have been a little more generous especially considering how thick the crust is.

This place was just OK for me, the dough to topping ratio was off for me, I felt like I was eating thick bread with sparse toppings on top. I was really excited at the concept of mochi flour pizza as I'm a big fan of Detroit style pizza and thicker crusts, but the flavor just wasn't there. This spot is located inside of a bar and has ample seating, so it would be a great place for a larger group if that is what you are looking for!

I was recommended by a foodie friend about this place, and the mochi pizza just sounds so tempting... A group of us visited the restaurant on a Sunday afternoon. It is located in the Redhook Brewlab, which has many open seatings in front of the store. It operates like a food court- place orders at the counter or scanning QR code, get your own utensils and water, get the order from the counter when it's ready and clean up afterward. We ordered Umami tots, napa cabbage salad, and tsukemono (pickle plate) to share. All of them are really good, especially the salad. The tots are crispy and fresh. I really enjoy the salad, the vegetable is fresh and the dressing is spot on! definitely try the salad! also, it is a big portion, we 8 people tried our best to finish the whole bowl!; I am not a big fan of the pickle plate but all my friends enjoyed that! For pizza, we ordered: The Ginny, The Dodger, The Hot Neighbor and The Maverick. I like all of them and personally like the hot neighbor the best. The mochi flour makes the taste very unique and all our pizzas came out hot and fresh! There is a lot of dough in the pizza so it's very filling, I ate two and a half pieces and I was so full! I will definitely come back and recommend here to my friends!

If you feel like this place is hard to find, it's because it's inside of Redhook Brewlab! The beer hall and pizza kitchen team-up make for a great combo. I love their style of pizza and love what they have on the menu! I have come here a few times with my girlfriend and have had a few of the pizzas, but my two favorites are the Hot Neighbor and the Kimchi-Pineapple. Clearly the spicier options are my favorite, but if you don't like spicy, the Dodger is great too. Overall my experiences have been great, even though there are a few times hey have been inconsistent. Once we came in and all they had available was cheese and pepperoni, which wasn't what we were looking for that night. Even then, if we stopped coming here, I think my girlfriend would probably break up with me.

I really wanted to like this pizza, it's in a nice location with a lot of other local business and we're able to bring our dog with us. The pizza was underwhelming which was a shame because I really enjoyed the other restaurant Taku. Nothing was really wrong with it (we got the in every the pepperoni) but felt like the flavors weren't really that prominent. I enjoyed the mochi chew in the crust but my husband didn't care for it, something to consider if that's not really your thing but I thought it gave the pizza a nice contrasting texture.

Tried 4 types of pizza and the best was hands down the dodger!! The short rib was so tender and was the crowd favorite. The hot neighbor was also delish and had a kick to it. The dough is a bit dense since it's using mochiko flour so I can only eat max two slices but it's very filling and delicious. Only down side is that you need to go in person to order Togo and wait there if you're ordering less than 5 pizzas.

A very solid option for pizza in Seattle. It's hidden inside Redhook Brewlab. You will have to grab your own seating and scan the provided QR code to order food. They send you a text when your food is ready and food approximately took 20 minutes to be ready so grab a drink at the brewlab in the meantime :) Food: Miso-Mushroom Pizza: (4/5) extremmmely good pizza. We got the seaweed ranch dipping sauce with the pizza and it was really good. The mushrooms were perfectly cooked and blended well with the sauce and the rest of the pizza. My favorite part of the pizza was the burnt cheese crust which was the perfect texture for a crust. Miso Cookie: (2/5) Not a big fan of the cookie. The chocolate chips were good but the cookie was a bit flakey for my taste.

Wow. I had an almost identical experience to Bitleigh V. My pizza was cold because the table sign with the QR code included the table number, which led me to believe (falsely) that my food would be delivered to my table. So I waited patiently for my food that was getting cold until I got up to check--risking losing my table seat. All this after I'd paid and left a generous tip. EVERY OTHER RESTAURANT WITH ONLINE TABLE ORDERING DELIVERS YOUR FOOD OR HAS SOME WAY TO NOTIFY YOU THAT YOUR FOOD IS READY. And some of my favorite restaurants use Toasttab successfully and don't have this problem. This pizza might've been good hot, but was mediocre tepid. At least my salad was okay. But the disappointing experience made it hard to enjoy. I recommend getting takeout elsewhere and enjoying the beer at RedHook Brewlab with food from a restaurant that has a better ordering system--maybe one where the tip is paid after the food is delivered.

The pizza really is quite tasty and makes for a nice date night meal or a meal for one. Anything beyond that and it starts to get overwhelmingly expensive very fast. Expect to pay a very large amount of money for what will look like a tiny pizza, or even, a slice, though it packs big flavor and is well put together. Good to try once in life, but if this were my go to pizza spot I feel like I'd be broke in a very short amount of time. Likewise the whole situation with ordering is annoying, techy, and seemingly designed to create awkward interactions with the staff when you go to get your food. Feels like they just want you to shut up and deal with them through their app. If you dare talk to them, you will receive immediate "don't disturb the delicate pizza geniuses you stupid plebe" vibes from them and asking questions is going to get you a week's worth of passive aggression. So if you can stomach the pretense, attitude, and expense, this ends up being a tasty, if performative experience. My advice if you're from the Midwest and sick of Seattle pizza is to go to either Windy City Pie or Breezy Town-- where, in fairness, I should say it will only be about 10% less of an irritating, pretentious, techy ordering experience--but the pizza is just as good, there will be easier parking, and it will be way, way, way cheaper.
