The Most Anticipated Portland Restaurant Openings, Spring 2024 | Eater Portland
"Adán Fausto, known for pop‑ups like Paradise Mariscos and Tacos Con Onda and with experience at Michelin‑starred and celebrity restaurants, planned La Leñadora as a Mexican restaurant serving dishes such as smoked black cod flautas and whole hog carnitas, but its originally slated early‑2024 opening remains unclear and Fausto has not responded to requests for an update." - Janey Wong
Portland Food Writers and Personalities Share the Restaurant Debuts They’re Waiting for in 2024 | Eater Portland
"I'm most excited for La Leñadora, the incoming Adán Fausto restaurant in the old Woodsman Tavern space — he mentioned things like octopus fajitas, lamb shank birria, and whole hog carnitas, and I love the idea of building my own bites with a bunch of pickles, condiments, sauces, and a large-format protein." - Eater Staff
Regional Burrito Shop Los Burros Supremos Opens in Portland Friday | Eater Portland
"Planned to open in early 2023 as the second restaurant in the former Woodsman Tavern space, this dinner-forward spot emphasizes seafood and large-format, shareable proteins while also later adding brunch with chilaquiles. Drawing on the Paradise Mariscos pop-up, the menu will include flautas filled with potato confit and smoked black cod, aguachiles and ceviches, starters like queso fundido and delicata squash tostadas, and many vegetable-forward dishes (including a take on Caesar and a mole blanco with prickly pear). Larger dishes are meant for the table: a Contramar-style whole fish with one side rubbed in shrimp paste and the other finished with a scallion-herb paste; whole hog carnitas served with beans, fresh tortillas, salsas, and a seasonal vegetable salad; and seafood fajitas presented with beans, house pickles and salsas, and chile oil." - Brooke Jackson-Glidden
