How much can one love butter? Growing up, I only understood what came from the supermarket and even then, our household used margarine for a long time. Not until I graduated from college did I know it could be an artisanal thing with deep cultural roots. Even now in the US, there are many small producers doing wonderful things. So if you really love butter, you will love what Jean Yves Bordier does. I discovered this when I ate at L'Arpege, and man is it some craze inducing stuff. As you can imaging he doesn't supply just Arpege, it's a number of high end places, because that's where they love butter the most.
