How Dijon Mustard Is Made in France During an Ongoing Shortage | Eater

"Run by third-generation director Marc Desarmenien, this independent, family-owned Dijon mustard factory — the oldest in France — relies exclusively on 100% French mustard seed from the region, which has allowed it to avoid the current supply panic affecting producers that import roughly 80% of their seeds from North America, particularly Canada. It produces more than 2,000 pounds of Dijon mustard per year (a modest output compared with France's roughly 9,000 tons of annual production) and makes many varieties ranging from traditional old-fashioned Dijon to flavored options like blackcurrant and basil. Because of its local sourcing, the operation has been able to maintain steady production despite shortages elsewhere." - Avery Dalal

One of the best experiences you can have in Beaune! We were able to schedule a tour and visit the same day, and we were so grateful! Our tour guide, Oliver, was fantastic! He was fun and knowledgeable and had so much to share. A great place to try something local to Beaune and a place where it is evident that they take pride in everything they do. It has been a highlight of our trip to France so far. A must visit!

We booked the tour online, which included both an informational tour and a mustard-making workshop. The tour itself was informative, with videos and a self-guided audio section in their small display area. The mustard-making workshop, however, was a lot simpler than expecte. We just mashed some seeds with vinegar, so it wasn’t quite what I thought it would be. The highlight was definitely the tasting at the end. We were able to sample at least two dozen different mustards, and the staff were amazing, friendly, enthusiastic, and very encouraging about trying as many varieties as we wanted. Even though the tasting area could get a little crowded, it flowed smoothly, and you don’t actually need to take the tour to enjoy the tasting (it’s free to try). Overall, the workshop itself felt a bit underwhelming, but the tour and especially the tasting experience made it worthwhile. The staff really made the visit a positive one.

Great experience. Very helpful and English fluent staff. The tour is great and interactive. You make a small quantity of mustard and also do a tasting. They also have a tasting bar so you can experience your mustard before buying it. Numerous flavours available.

An excellent experience! The staff is incredibly helpful and fluent in English. The tour is engaging and interactive—you even get to make a small batch of mustard yourself and enjoy a tasting session. There’s also a tasting bar, allowing you to sample different mustard flavors before deciding which to buy. With so many unique varieties available, it’s a must-visit!

During a weekend trip with friends, we decided to discover this mustard manufacturer that it has been in fact, a family business for generations. The visit was excellent, our guide was very friendly and educational. There’s the possibility to do the visit in multiple languages such as French, English and German. By the end of the visit you can buy the incredible and delicious mustards you got to try. I totally recommend, a must do if you visit Beaune!

Yelp
Awesome spot for tasting more types of mustard than you realized existed! Sure, it's touristy, but I'm not even a mustard fan and I enjoyed visiting La Moutarderie Fallot. If you want to take a tour do book ahead as we were not able to get on one last minute. After returning to the US I started noticing their mustard being carried about various high end / boutique grocers, so you can do your tasting here but buy when you get home if you don't want to carry around mustard in your luggage.

Yelp
I will give it four stars only because they aren't able to offer morning tours right now. However, what they did have was great! They have mustard tasting available when you walk in, and you can purchase in the gift shop until 6pm. There is an abundance of mustard flavors and there are also some other products. The employees were very courteous and helpful. I purchased several jars of mustard and they were packed carefully into a paper bag. The prices are also very reasonable. My favorite mustards were probably the basil and burgundy white wine. However, I did not taste them all because there were so many.

Yelp
This is review is for visiting the shop, but we did not take the tour as we were short on time. We began perusing the store for some gifts to bring back home, when one of the ladies working there approached us and wanted to help us pick the right options, and convinced us to do some tasting. Given it was 10am, mustard tasting wasn't all that appealing (in my head) but boy am I glad I went for it. The mustards here are fantastic! It's amazing what amazing flavor wine based mustards have vs. the vinegar based ones that we have more often in the states. We tried several different options, some with grain, some without, some with white wine, and some with pinot noir! The service was so friendly, and with a smile (not common in France), and we found some great gifts to bring home to family. I recommend stopping by for a taste, and taking the tour if time allows!

Yelp
Fallot mustard is fantastic, as is their tasting room, but the tour is, well, kind of touristy. You are given a history of moutarde de Bourgogne, led through a series of rooms that provide a historical re-creation of how mustard was made back the olden days, and then allowed to try your hand at making mustard with a mortar and pestle. It's all a little cheesy for me, but I can see some tourists enjoying themselves. The best part of the tour, however, is the mustard and food pairing. It was really interesting to try different flavors of mustard with different types of food. At the end of the tour, you are led to the tasting room, where you can sample a wide variety of mustards before buying. But be aware that most of the flavors of Fallot mustard can be found throughout Beaune, often at better prices, so don't feel compelled to buy directly from the factory.

Yelp
Very laid back. They offer a wide range of mustards to sample. If you take a tour they go into great detail about the history and process of making their style of mustard. Part of the tour is in the factory. You can see and smell the mustard being made. For some people (me and 2 other people in our group) the mustard in the air can cause stinging in the eyes. I was so thrilled by the rest of the tour I toughed it out.

Yelp
The Fallot mustard museum offers a 1-hour guided tour that includes a hands-on demonstration of mustard-making (grind your own sample in a mortar and pestle) and a small but surprisingly good plate of hors d'oeuvres. Our tour was provided in both English and French.
