Fallot mustard is fantastic, as is their tasting room, but the tour is, well, kind of touristy. You are given a history of moutarde de Bourgogne, led through a series of rooms that provide a historical re-creation of how mustard was made back the olden days, and then allowed to try your hand at making mustard with a mortar and pestle. It's all a little cheesy for me, but I can see some tourists enjoying themselves. The best part of the tour, however, is the mustard and food pairing. It was really interesting to try different flavors of mustard with different types of food. At the end of the tour, you are led to the tasting room, where you can sample a wide variety of mustards before buying. But be aware that most of the flavors of Fallot mustard can be found throughout Beaune, often at better prices, so don't feel compelled to buy directly from the factory.
