The 38 Best Restaurants in Santiago, Chile | Eater
"Among the many tempting picadas (affordable traditional eateries) at the Persa Bio Bio flea market, one sandwich reigns supreme, Jaime Rubilar Flores’s mouthwatering lomito. Heaping piles of thinly sliced juicy pork loin are cooked on a flattop grill and loosely set on a pan marraqueta roll. But that’s just the beginning. Add a whole lot of seasoned mayonnaise and tomato, or make it a chacarero by adding a fistful of green beans. Or go for an extra rich lomito Italiano, mounted with fresh slices of tomato and palta (creamy avocado). And remember that in Chile, mayonnaise is a primary ingredient, not an optional condiment. The sandwiches are huge and overflowing with meat. But the meat is very dry and lacking flavor. The price is okay.

Me senté con las expectativas bajas, pero la pila de marraquetas y la plancha llena de lomitos prometían....aún me arrepiento del prejuicio! Son de los mejores lomitos que he probado en el último tiempo. Denle ya su estrella Michelin a esta picá.
