It's not hard to find Japanese contestants winning top accolades in Italian pizza competitions.
I say this not to diminish the victories of La Pizza Napoletana Regalo -- whose owner/pizzaiolo took 2nd place, out of 600 competitors from around the world, in the 2013 Caputo World Championship in Napoli, the birthplace of Neapolitan pizza! -- but to affirm that JAPAN TAKES PIZZA SERIOUSLY.
His trophy is displayed near the door, though charming Italian knickknacks that make up the rest of the decor seem to get equal treatment. The mood is still Japanese: brighter than expected lighting, relatively quiet fellow diners, and a 9pm close time. (They ran out of dough before 8:30pm on a Monday, much to the despair of a couple tables, including ours, who wanted more pizza.)
The space is cozy and seats fewer than 15, with the pizzaiolo in front of his wood-fired pizza oven, surveying it all. When you want to order, he beckons you to just shout it at him, declaring your gustatory desires over other people's dinner conversation.
We are still in Japan, after all - otherwise, it'd be the perfect time to jump in and advise, "Get the Genovese!" (slathered generously with a rich, perfect pesto) or, "The Margherita is great!" (gorgeously blistered and practically eruptive with pure tomato flavor. This is the one that won the competition).
Each pizza is 1300 JPY, or 1500 JPY if you want bufala mozzarella or the prizewinning Margherita. They're large, 35cm in diameter (per tacit Neapolitan pizza regulations).
Everything is self service: grab beer, wine, and sodas from the wine case or minifridge (all bottles, including many beautiful imports from Italy). Get your own plates and glasses and olive oil. No waitstaff, no bussers. Only Mr. Tomohisa (?), churning out a surprising variety of pizzas at surprising speed.
He's friendly and relaxed despite it all, towel bandannaed across his forehead, a guy who seems genuinely happy about sharing his craft. Ask him and he'll give you a black marker to leave a message on the wall. The wonderful pizza, the casual digs, his cool presence - all of it made for a really happy experience. I'll be back for sure.
