La Villa Hibiscus, Mont Vernon

We selected the 6 course tasting menu. We were a group of seven family members. The food was very artisanal, unique and delicious. Hats off tot he chef for his creativity. We had a baby with us, and she devoured the her pasta! The atmosphere and decor of the restaurant is very classy and comfortable. Location doesn't have a view of water, but the ambience of the restaurant takes the place of a view. Open air seating with beautiful flora and fauna. Chef and crew are very talented, courteous and have pleasant personalities. Wine pairing with the meal was definitely worth while.

Went for dinner here last night with a group of friends and it was amazing. Not only the food selection on the five course menu was amazing, the ambiance and people were great. Without me saying anything, they found out through my drink orders that I don't drink alcohol and came up with alternatives for me for menu items that normally had alcohol in them. Really attentive and very tasty! Setting beautiful, nice people and delicious food! Worth going to if you want to splurge on some amazing food - surely not a burger joint for a quick meal, but a place to go and enjoy some true gastronomic experience.

La Villa Hibiscus is one of the best dining experiences we had on the island. Chef Bastian is an incredible talent—his dishes were beautifully crafted, delicious and beautifully presented. The wine pairing was terrific. The whole experience felt personal yet polished. He greeted us when we came in. His team was so warm and attentive—it’s like being welcomed into someone’s home, but with the finesse of a top-tier restaurant. The restaurant itself is beautiful with intimate elegance. We did not know what to expect but we loved it! It’s a must for anyone who loves food done with heart and creativity.

Chef Bastian is one of the most creative chefs on the island. He didn’t disappoint, again, last night. What a wonderful meal. We had the 6 course tasting meal. We started with a lovely drink by the pool. We lingered for at least 1/2 hour, enjoyed the amuse bouche laughed, and even had two of the lovely hand crafted cocktails. This consisted of a tea tray with three wonderfully crafted bits, one which was a pea puree with crispy bites of croutons, then smoked ceviche served in a faux sea urchin ceramic, and then finally a carrot purée with shaved carrot on top. Delicious! We finally moved to the main table. We were five people and had a lovely table overlooking the main area. Our first course was a spectacular summer tomato dish, thinly sliced with delicate pomegranate seeds. The next dish was a delicate cheese soufflé with a coating of freshly shaved black truffles, creating a shell around the soufflé, served with a seafood foam bisque, which created a perfect balance. The next dish was a rare slice of tuna paired with a leek amongst dollops of coconut cream in a sea of Demi glacé. the final dish was a sous vide chicken re-fashioned along with two baby artichokes that were seared and placed on top with the garnish of greens and a generous portion of caviar. The saltiness of the caviar paired perfectly with the dish and the dessert was equally delicious. See the wonderful pictures. We did a tasting menu with wine pairings as a treat during our holiday. The ambiance and service were top notch. Much thought went into the preparation of each dish. The veal was the best course - although the presentation of all dishes was excellent, there was some inconsistency in the courses, some excellent, some only good but not stellar. Overall a very pleasant evening of fine dining.

La Villa Hibiscus is a true gem in the heart of St. Martin. Chef Bastian is a real artist in the kitchen, combining flavors and techniques in ways that are both creative and absolutely delicious. Every dish feels like a surprise and a delight. The service is warm and welcoming, making you feel right at home while still being incredibly professional. The atmosphere is the perfect mix of romantic and friendly, so it’s great for a special night out or just a fun meal with friends. And the cocktails are some of the most delicious and interesting ones on the island! I’ve been here many times, and it never disappoints. If you’re a foodie looking to be impressed, don’t miss this place!

From the friendly staff, to the exquisite food, to the beautiful rooms I’d give this one 10 stars. We joined another couple who’d already been there a few days. Let’s start with the rooms. Each of ours was so smartly organized with views of the lake, beautiful sleeping areas and patios for reading or having morning coffee. The bed was large and super comfortable and the bathrooms were immaculately clean and spacious. There’s a sweet little pool tucked away among the rooms. We had both dinner and breakfast here. We enjoyed some signature cocktails with friendly Thomas. Dinner was delicious and creative, served with friendly and knowledgable Alexandra. The staff was friendly and helped us pair wines with all of our different food choices. We are all a bunch of foodies and each of us were thrilled with our choices. Breakfast, with more friendly staff, fresh pastries and scrambled eggs was also a dining delight. We will definitely stay here again!
