Overall, my experience was a mix of tasty dishes and a significant letdown. I was disappointed with the Beef Wellington (€90 for two), which we pre-ordered two days in advance. Having only tried it once before, my expectations were high, but this version was below expectation. The jamón inside was surprisingly hard and stiff, and the pastry was over baked, making the pastry and meat quite dry. Unfortunately, the accompanying sauce did little to elevate the dish. However, the meal was saved by a few exceptional dishes. My top recommendation is the Pithiviers de Pichón de Mont Royal. It was absolutely stunning, featuring perfectly pink pigeon meat paired with foie gras and spinach, which created a rich and distinctive taste. I also enjoyed the Terrina de Salmón Ahumado. The smoked salmon terrine, combined with a creamy onion sauce and charcoal bread, was an innovative combo for me, making it definitely worth a try. The foie gras, on the other hand, was just okay and didn't leave a strong impression.

Amazing experience from start to finish. The best service we received in Madrid. Attentive and professorial coordinated team working staff and wonderful kitchen. Every dish was unique and amazing. We were greeted and taken care of by Kevin, accommodated and sat quickly. He explained all of the dishes and made recommendations that were all absurdly good. Thank you to Kevin and team mates. We drank probably 29 gallons of water at dinner and our cups were never once empty.

Had the pleasure of dining at this 1-star Michelin restaurant tucked away in a prime spot in Madrid — and it did not disappoint. Service was spot-on: fast, attentive, and the staff really knew their stuff, which made the whole experience smooth and enjoyable. The food? Unreal. Beef Wellington was cooked to perfection, the croquettes were crispy little flavor bombs, and the ratatouille was elevated without trying too hard. The soufflé at the end sealed the deal — light, rich, and everything a dessert should be. The atmosphere hit a sweet spot between fancy and comfortable — upscale but not stiff, and nice and quiet so you can actually enjoy a conversation. Special shoutout to the sommelier: absolute pro. Nailed every wine pairing, each one complementing the dishes without overpowering them. You could tell they cared about the craft. All in all, it lived up to the star and then some. Would go back in a heartbeat.

We had the Grand Menu tasting menu, and two of our guests requested modifications. The restaurant was very accommodating and happily adjusted the dishes for us, which was a great touch. The seating was excellent, creating a pleasant and comfortable atmosphere, and the service was outstanding. The staff was professional and attentive, delivering a high-level dining experience. Both the food and service were worthy of at least one Michelin star. The dishes were delicious and unique, with beautifully balanced flavors. The Beef Wellington was slightly salty, but overall, everything was superb. The only small downside was that only one staff member spoke English, which made communication a bit challenging at times. Overall, a fantastic experience! Highly recommended.

While visiting Madrid we enjoyed authentic French flavours a la carte on an August Thursday evening nestled in the charming rustic dining room of Le Bistroman. The chef & maître d' welcomed our walk-in partly warmly and provided excellent service throughout. The egg yolk gougère savory appetizer, foie gras & grilled duck magret are all must-try. Tableside showing of the classic silver duck press was a delight to see. I'll return again when I next visit Madrid and will be sure to call ahead for the escargot which we unfortunately weren't able to try this time around.
