We booked Le Carmin for my wife's birthday, knowing that it was pretty expensive. The food is simply fantastic and worth the price. After the free appetizer, a asparagus mousse, my wife ordered the salmon starter, a very thin sheet of raw salmon with a lemon creme. I ordered the lobster starter, a small grilled lobster tail with a savory sauce. We both had the beef with potato gnocchi, which was amazing when matched with the recommended 2005 pinot. For dessert, order the souffle. It was the best we've had in France, so light that it seemed to float out of the ramekin.
The staff was knowledgable on the wine and menu. They spoke at least "restaurant English" and had a less formal manner than most French restaurants (it was appreciated).
