Always a pleasure to come again to this establishment.||Magnificent covered parking under huge trees, super classy chateau with the charm of the old days, but it’s maintained and kept fresh.||The service is extremely professional and fast, the wine master always has good advises and some gem you didn’t hear about.||It is classy all throughout, except maybe the waiters who could be given shirts instead of polos.||All dishes are well executed, with a special mention to the blue lobster menu.|The cuisine is conventional however so well excited that it will not fail to surprise you. You however know where you are going.||The house lost a Michelin star some years ago but it’s unfair as it deserves a full solid 1 star and it also stands the test of time.

We had the menu gastronomique on 25 july. I still dream about the food and the wine which was amazing. Can you please share the wines since we did not remember the names ❤️ mainly the wine with the fish as main course but also the wine with the red fish ❤️❤️❤️❤️

Going back in time happens just like that when you enter this domain. The energy, the ambiance, wow. Huge trees, green lawns, lots of flowers. The hotel breathes "the good old days" and has been owned by the same family for generations. Service is excellent. The bed is very comfortable. Love it here. We are at the bistro and we're excited: super good and wine

Excellent dinner! The place has a reputation and delivers up to expectations. Most notably the sommelier presented excellent wine selections with each course, had clear explanations of the wines and good humor. The historic building has atmosphere, and it is not easy to run an upscale hotel in an aged building. But highly professional hotel staff, and their caring and warm service made us forget the creaking of the doors. We look forward to an opportunity to return to this place for dinner, accommodation and a walk in the park.

What a warm welcome. Immediately you feel the warm hospitality. A very nice place, in a beautiful park. The rooms have something, really well decorated and charming. And the restaurant. Excellent food and service. A good selection of excellent wines.

We visited this beautiful hotel for a celebration lunch. We chose the menu of the day and the service and quality of the food exceeded all our expectations. We had each dish described to us as it was served and the sommelier chose wines for our entree and main dishes and described where they were all from||||The staff were so friendly, charming, knowledgeable and professional. It was this, accompanied by the great food that made our lunch so enjoyable for us all.||||We have dined in many restaurants around the world but this one is up there with the very best of them. This is an absolute gem

We have spent several days before Christmas in this nice little castle located in the south of Carcassonne. The staff is very friendly and provided a lot of good ideas and advices for enjoying the region.||The breakfast is really great, with cheese, smoked ham, orange juice, fruits, yogourt and of course croissants and pains au chocolat. One day, we even got a truffle cooked egg.||One evening, we enjoyed our favorite Champagne with a very good dinner in the restaurant. Scallops were very well prepared and the Cassoulet was not greasy. We ended with an excellent soufflet.||We enjoyed very much our stay and thanks the staff for their continuous efforts.

Beautiful hotel in one of the most fabulous cities in the world. Perfect for swimmers and golfers but a wonderful place to visit all year round. Furnishings terrific; restaurant splendid. Carcassone is a gem.
