I walk into Le Lapin Sauté in Quebec, on a very busy Saturday night. The owner greets me: "Hello Monsieur Boss! Please follow me, we prepared a table just for you."
Right smack with the nice view, kept just for the Rebel Chef. The best table!
That's my French restaurant. But they call only one guy - ME - "Boss". They assigned two bussers to my table, while other tables had nobody. They know a review is coming!
Got some beer. Kicked back and drank..
I also order a very hearty Québécois type soup and - quixotically - a burger with a fish patty, that was too good to not order, since this is a fisheries province after all. The soup was phenomenal. Drinks extra smooth with enough alcohol % to put down an elephant.
Main course was served to me - to me alone - by both the waiter and buss-gal; to make sure all was as it should be. Restaurants know the "Boss" has arrived, when the Rebel Chef is in town making reviews and posing for photos!
Salmon patty burger was fat, not fatty at all and nicely seared. Hot but not overcooked. Its ingredients were fresh. Pitch perfect old town setting with small kitchen that cooks up Quebec-Americain!
The desserts are delicious. I noticed some out of towners, they order the same thing they get at home: spaghetti, salad. Not me! I'm legit and order the unknown, weird, dishes.
