"The fortified Cité Médiévale is part of the time-honoured heritage of Carcassonne and its region… and the same could almost be said of Franck Putelat. In his place at the foot of the ramparts of the medieval town, this native of the Jura, who has made the Aude département his home, cooks the produce from his large (one hectare) vegetable garden, in line with his culinary concept of "classic-fiction". This translates into a clever rendering of the old gourmet hits, which the chef revisits according to what inspires him on that day. Three examples that have become iconic are his parmentier with sea fig, cassoulet with pigeon supreme and pigeon leg sausage, and bouillabaisse with duck foie gras. Appetising visuals, flavour and finesse, to be savoured in a lively atmosphere, in the company of a very diverse clientele. Pastry chef Alexis Pocinho crafts a particularly balanced selection of sweets. There are seven rooms available for overnight guests." - Michelin Inspector

Wonderful experience at the hotel and restaurant. The room was large and very well designed. The service was excellent. The breakfast is heavenly- even if you are not hungry get it!||You are about a 10 minute walk to the medieval city and another 10 minutes to the Barbacane area and the Pont Vieux bridge for a panoramic view of the Old City.

One of the best hotels I’ve ever stayed in. It was spotlessly clean, beautifully presented and so comfortable- truly luxurious. The stylish room was lovely and the terrace with a hot tub was fantastic. The room was quiet despite being small.|Plenty of parking.

This is a seriously good hotel with amazing attention to detail - everything is thought out .|The restaurant was a theatrical and superb experience . Wonderful presentation and service . Only slightly let down by two small details - wrong wine served as aperitif and wife given alcoholic petit four despite many statements that she does not drink alcohol .

Such a unique experience. The staff is utmost precessional, catering to our preferences. The rooms are open, contemporary and the patio is zen like and tranquil. ||The restaraunt is a once in a lifetime memory. Multi coursed and great blend of flavours, always new. The local ingredients are delectable, especially the cheeses. ||The restaurant staff were patient to accommodate and extremely informative of each dish, culminating with a meeting at the end of the meal with the chef! Prepare of a gastronomical feast of three plus hours!

Service a little wooden but attentive. Food was an experience but at the same time somewhat underwhelming. A bit too much of a focus on telling us all about Putelat's history and other properties...suppose that can't be avoided! Restaurant ambiance delightful.

Welcome and evening pastries were quite delicious and adds a personal touch to our experience. All the staff were very welcoming and friendly. ||Our room was very comfortable and beautiful. Bed was very nice and airconditioning was perfect for the summer weather. ||The garden was very relaxing and the breakfast spread was delicious. ||Highly recommend to stay here especially when eating dinner at Le Table de Franck Putelat since you can go to your room and relax after having one of the best dinner experience of your life.

Beautiful boutique hotel. Friendly staff, hands on service and only 7 rooms so you are well looked after. Our room suite with jacuzzi was exceptional. We had dinner one night at Le Frank Putelat restaurant. Lovely food, some dishes were a bit suspect but overall very good. Not cheap as you would expect from this type of restaurant. A fantastic experience overall and the hotel is recommended. Just 15 minute walk in to the City. Good location.

The staff were incredible friendly and they couldn’t be more helpful. The bed was very comfortable and the room was very clean. The welcome snacks were a lovley touch. The deco was classy. The only thing was the restaurant was closed on the duration of our stay Monday and Tuesday, which was a shame because it would be great to have that experience. Maybe next time.
