La Table de Franck Putelat - Carcassonne

I had the 6-course menu (I believe it’s now been shortened to 5 courses, but it was 6 when I visited). The standout for me was the pigeon dish—almost in a cassoulet style. The depth of the pigeon’s own flavor, together with the beans and the sauce, was beautifully integrated and seriously memorable. The rhubarb-and-pollen dessert was also exceptionally well executed, and the non-alcoholic pairing was thoughtfully composed and worked surprisingly well throughout. One note (not really a complaint, just something to be aware of): the kitchen seemed to deliberately play with the usual progression of seasoning intensity, “twisting” the salt and flavor curve across courses. I personally enjoyed it, but I can see how it might be divisive for some guests who prefer a more conventional build-up. If you go, I strongly recommend the pigeon (cassoulet-style) dish.

The food was as bland and bored as the decor. For me to say food is bland, as someone from the Midwest, should tell you what you need to know. The only people enjoying the atmosphere and evening appeared to be the young boy and his dad playing checkers together, which, sadly, was the highlight of the evening. We had the 8 course tasting menu with wine paring. I have never been more disappointed or unimpressed by food. After the pre-appetizers and bread, nobody looked excited or even pleased with their courses, we certainly weren’t. There was nothing exciting about the dishes, especially the flavors. The trout was fishy and bland. The pigeon was chewy and bland. The texture of the squid was the oddest I’ve ever had and the flavors were mediocre. Even the chocolate dessert was fishy, as it had anchovies in it. The wine was good and the staff were attentive. That is, until our courses were complete and we politely mentioned that we were not impressed or overly pleased with the experience. Then we were ignored, with empty water and it took quite a while to flag anyone down to get our check. Sadly, a very disappointing experience.

We booked the Le Parc Hotel for one night on the 28th of August 2025. We arrived in early evening and we were greeted by a woman of dark hair who seemed irritated we interrupted her book reading. Not a good start. We had booked a room with a terrace and hot tub. We entered our suite and it was extremely cold. So cold we were unable to remove our jackets. We requested she turn on the heat and she declared it was summer and we would not be allowed heat even though the temperature registered at 62 Fahrenheit and 16 centigrade. We tried to turn on the towel warmer and it did not go on. We walked out in the terrace and the hot tub we paid for the use of to discover it empty. We went back to the front desk and she said too bad it’s broken. We found out later we were supposed to of been called and offered a rebate and that never happened. We spent a miserable night completely dressed under the covers and the bathrobes on top of us. We could hardly wait to get out of Le Parc in the mid morning, we left early. When we informed the pleasant young lady at the front desk she was horrified at our mistreatment by the front desk dark haired woman.

Had a spectacular meal here. So many fun things to eat! We had the menu for first time visitors and highly recommended it. Great value and very delicious 😀. The cheese tree was amazing!

From the moment we arrived at Hotel Le Parc in Carcassonne, we were completely charmed. The service was warm, personal, and truly exceptional. The front desk clerk didn’t just hand us a key – they personally walked us to our room and gave us a full tour, making sure we felt completely at home. That level of hospitality set the tone for our entire stay.||The room itself? Fantastic. Stylish, comfortable, and full of thoughtful touches. But the true highlight? Breakfast. Out. Of. This. World. The eggs were so damn good they deserve their own Michelin star, and the literal boat of pastries they brought us was indulgent, over-the-top, and utterly perfect.||We left feeling relaxed, spoiled, and already planning our return. We truly couldn’t have asked for a better stay. Hotel Le Parc is a gem – one of the best hotel experiences we’ve ever had.

Very helpful staff, especially the evening gentleman at the desk who went out of his way to help us.|We thought the suite was beautifully decorated—very kool and artistic. The setting on the deck was wonderful. We only stayed one night but didn’t leave the hotel. Oh,yes, I forgot to mention the definite romantic vibe.

Beautiful and unexpected experience. A last-minute decision to visit Carcassonne led us to book this hotel. Our breakfast was beautifully prepared with high-quality, fresh local ingredients and the artisinal craft of baking. The outdoor seating meanders through the garden. The staff was very friendly, accommodating, and knowledgeable . The room was comfortable, well-appointed, and relaxing. It is well located with a shortage walk to the historic city.

Wonderful experience at the hotel and restaurant. The room was large and very well designed. The service was excellent. The breakfast is heavenly- even if you are not hungry get it!||You are about a 10 minute walk to the medieval city and another 10 minutes to the Barbacane area and the Pont Vieux bridge for a panoramic view of the Old City.
