Le Sergent Recruteur

"Chef Alain Pégouret inherited his love of precise, painstaking work from Joël Robuchon. For a first-hand taste of his craftsmanship, you only have to enter Le Sergent Recruteur, a historic tavern on Île Saint-Louis that has morphed into a fine dining establishment. The former chef of the Laurent displays an impressive command of his craft. His delicate dishes abound with crisp flavours – you can taste his solid classical foundations – and linger in the memory thanks to their coherence, the sophistication of the jus and sauces (illustrated by the Périgeux sauce that flanks the egg and black truffle mousseline or the royale sauce that is paired with hare in season and squid all year round), and their spot-on cooking. This establishment exudes a hushed, elegant vibe that artfully blends contemporary design and historic walls." - Michelin Inspector

This was a spontaneous solo meal, and this was one of the few Michelin restaurants in town that took reservations for 1 and was available. I was almost 20min to my 1:30pm lunch res and they had absolutely no issues with it. The service and atmosphere were lovely and much more lively than your typical haute French restaurant, but not unwelcome for a casual lunch. Now on to the food… To be upright, everything was plated exquisitely, and tasted good, but it also stopped at that: good. When it comes to Michelin restaurants, I think it’s normal to expect more accentuated flavors, while maintaining a delightful balance. However, a lot of the dishes did not blend well in flavor, or the flavor of alcohol in the cooking was overpowering. I do have to compliment the butter served at the start of the meal though; the touch of lime zest was absolutely divine. With all that said, the food was far from bad, every bite was enjoyable, the portions are generous(in my opinion), and I was more than full after the 5 course tasting menu. Dessert was too sweet:( …but I’m East Asian, so take that with a grain of salt:)

The tasting menu with wine pairing was excellent. Loved all the dishes - the coriander sorbet though was really a highlight for me. Attentive service. The chosen wines were excellent and went very well with the food.

Everything is amazing here. Service food and wine selection. It was a 9/10 ( rarely I go over 9 points !!!). Every single dish seemed like an artistic work Will be back next time in town. Ps we had the private room downstairs which was an extra value for the dinner . GRAZIE MILLE Paolo

We extend our heartfelt thanks to the down-to-earth chef for collaborating with us to create an enjoyable atmosphere during our final lunch in Paris. The culinary standards were exceptional, and the sommelier's explanations and wine pairings elevated the experience even further. Love the carrot-based starter, fresh and zesty win! That smear of black sesame next to the white asparagus, it works. The silken-smooth salmon roulade and the sweet corn-crusted shiso leaf tempura — a flawless textural duet. The green peppers in the lamb dish delivered an unexpected crunch. Dessert's raspberry coulis with light cream wrapped things up perfectly.

Absolutely the best meal I enjoyed in Paris. Everything was delicious and the service was excellent. They have excellent wine as well. I highly recommend Le Sergent Recruteur!

Food and service were excellent. My partner and I had the tasting menu with wine pairing which was good value for the quality of food and variety of wines. Would highly recommend to anyone looking to experience 1 Michelin star

Yelp
Service top notch. Cuisine, elite. Le Sergent brings refined cuisine in a quaint yet modern setting. After scouring the web for the right Michelin star restaurant to dine at in the city of lights we came upon Le Sergent as it is a bit departed from the stuffy traditional French cuisine and elevated into a new era of diners. Heavy dishes danced with refreshers. Intentional wine pairings offered a bright or a pallet lathering jamminess that French wines are celebrated for. Everything about this experience seemed special, down to the local lad with a small yet incredibly well manners tiny pup in hand. Might I say, he was the best behaved one in the restaurant... after a day of wine, sightseeing, and shopping, our group of 9 had to remind each other that this was no corner restaurant and that our boisterous American decibels would not be tolerated. Would dine here again. Highly recommend.

Yelp
Went for the course tasting with wine pairing. We had a group of 9 and we're well accommodated. We were sat promptly on arrival. Dishes were creative and well executed. Classic French cooking with a modern twist. The herbaceous sorbet was my favorite course. The perfect palate cleanser before the final dessert course. The staff was attentive and so pleasant.

Yelp
What an incredible way to begin your Paris adventure! My wife and I arrived in Paris in the afternoon, and had an 8 PM reservation. It was so nice to walk in to a Michelin star restaurant and feel relaxed and welcome. The meal was nothing short of fantastic, and the kitchen operating with a quiet and confident vibe. My wife had the chicken (and she never orders chicken when we are out), "divine", and I had the lobster, "uh-may-zing". Thankfully our table was right infront of the kitchen. Chef Alain even checked in on us during our dinner, truly magnificent! Our main server Nicholas was affable and charming. And, it was truly a nice end to the evening when we passed on dessert, Nicholas promptly offered us not one, but two savory items to finish the evening. Definitely a must when you find yourself in Paris!

Yelp
More than just a quick lunch... in a small restaurant, in the very center of Paris, hidden away from the teeming crowds.. Excellent food, good service, interesting decor (even the weird mirror surrounding the kitche/server food pass-through. Not on the posted menu, but grilled quail was also available, (photo) and amazing. I'll have to return as soon as possible. 2021 09 03. M1.

Yelp
I really can't state how much I love the staff at this restaurant and they go beyond and above in their attempts to please. Largely the food was massively inconsistent and frankly out of date. Let me get to the out of date part first, this reminded me of going to one of the Michelin star restaurants in the 2000's, since than French cuisine has evolved and thankfully simplified to some degree. There's no longer these 30+ flavors on one dish or took precedent over the conception of the dish. This restaurant definitely didn't get that message and it became an issue course to course. I went with the tasting menu with the wine pairing, which either way the wine paired well. First up were the two amuse-bouche's which one was to cleanse your pallet with something to elevate your taste buds and one bring them down to 0 and be fully prepared for the meal, which definitely served their purpose. The first course, I had to ask the waiter how to eat properly which was composed of raw scallops in a very tasty sauce, he told me eat the individual pieces and than mix it. I tried it his way and it didn't really work for me as a dish, it was much much better combined together (this would be a continued theme through the meal). It was good but wasn't delicious, it was average at best. The second course was this mushroom ravioli dish that must have been one of the finest I have ever eaten. It enlightened and enriched my senses and brought me overall joy with every bite. I'm sorry I don't have pictures but I ate it before I could get one off lol. I highly, highly, recommend this dish it was beyond excellent. The third dish was like a wildcard dish there wasn't anything technically wrong with it but it wasn't fully mindfully thought out in my mind. Mind you this is only my opinion and I can always be wrong. This chicken dish, it was perfectly cooked and I started to taste something I didn't expect that was taking over the dish, even though minor, I couldn't ignore it, this was a curry, and I love curry. It changed the dish drastically and it made me take a very drastic action at a restaurant, I had to deconstruct a dish at the table from a French chicken dish into a chicken curry using the sauce I had on hand. Now I'll even admit I went a little heavy in my deconstruction and should have left more chicken. I can only imagine the staff looking at this crazy guy with his knife tearing the dish to shreds lol (at Michelin star restaurant no less). The dish worked moderately well deconstructed but in general besides for the ravioli dish everything was all over the place and beyond chaotic. The dessert was alright but honestly by the end of the meal I was still hungry and just wanted to get out of there. I think this review might be a bit harsh but this was my experience.

Yelp
My brother and I decided we needed to visit one of Paris's many Michelin-starred restaurants, and we had family who had eaten here before and loved it so we decided to give it a try. We had a late night (10 pm) reservation, and our table wasn't quite ready when we arrived so they provided a glass of champagne at the bar. Throughout the evening the service was incredible- 5 star service for sure! The restaurant itself has two floors, we were on the main floor which was lovely because we could see the kitchen which I enjoy. We opted to go with the Chef's menu- which was 5 courses plus some bonuses along the way. We also opted to do the wine pairings which I really enjoyed. All of the dishes were lovely, but two were standouts that I'll be thinking about for a long time. One of the middle courses was a chantarelle mushroom and lasagna dish- it was absolutely incredible. If it had been appropriate to lick the bowl it was served in, I would have. The other course that really sticks out was one of the surprises- it was the digestive which was a coriander sorbet- it was fresh and delicious- truly surprising! The rest of the courses were also very good- high-quality ingredients, well-described by the staff, and served in really unique place settings. Overall, it really felt like a 5-star meal in a beautiful isle of Paris. I'd love to come back someday as it appears the menu is seasonal. Loved it!

Yelp
Just dined there two days ago. I have no idea how this gets a Michelin star. Food went from ok to outstanding. Mushroom with lasagne noodle dish was outstanding, dessert not very good. The issue for us was the wildly inconsistent service. We ordered cocktails first - they did not arrive until after the appetizer was served. No time to relax before the food with a cocktail. My husband ordered a vodka martini. Basically, they poured vodka and vermouth straight into a room temperature glass. It was not shaken with ice. There is nothing satisfying about a warm martini. I ordered a drink with a lemon but got a lime. The first four dishes were rushed.

Yelp
We came here for dinner and were amazed by the excellent food, service and value! We enjoyed a 3.5 hour dinner and were impressed by the beautiful and unique dishes and warm and charming service. Highly recommend!

Yelp
We had the 5 course set menu here and everyone loved it. Clearly the food and service are polished down to every detail. The restaurant is located on an island in the Seine, in the middle of Paris but away from the crowds. Wonderful experience and totally recommend.

Yelp
A lovely hidden gem of a Parisian restaurant! My husband and I shared the most finely tuned, choreographed dinner of our entire Paris trip at Le Sergent Recruteur. It's tucked down a tiny street and once you enter, you are immediately greeted by a friendly face to show you to a seat. The vibe is chic and modern while the food is gastronomical and approachable. The service was attentive, welcoming and educational. At the end of the meal, the Chef came out to each table to see how we enjoyed the dishes and even recommended a wine bar in the area that he frequents. We will never forget our dinner and experience at Le Sergent Recruteur!

Yelp
Hidden Gem. It is obvious someone carefully chose every lovely detail here. From the golden pendant lights, soothing colors, comfortable bar stools and marble topped bar this elegant place is modern yet feels a throw back to a time when customers were treated like royalty. We were getting drenched in a torrential down pour and ducked in the first open door to wait out the rain. Lucky for us it was Le Sergent Recruteur! Immediately we were greeted by Innes, who was delightful, charming and welcoming. She suggested fabulous wines and we shared a delicious appetizer and shavings of tasty Parma ham sent out by the chef. Who came out to greet and thank us when we left. One of those rare restaurants where the staff gives with their whole heart and the food is created and served with love, imagination and copious talent.

Yelp
We just had the most wonderful dinner ever in Paris this restaurant was amazing do not let the menu intimidate you I'm from New York and our friends are from Sydney and we are all very particular about the restaurant's that we eat in .... if you want a total gastronomic experience you have to try this place you will not be disappointed it was the best experience I have ever had at a restaurant trust me it's that's good ... we ordered off of the regular menu not the tasting menu we had and appetizer main course and 2 deserts for 4 people ... they actually brought out and extra desert and mixed fruit and chocolate tarts after dessert that were out of this world if there was such a thing as 10 stars this place would get it hands down

Yelp
Perfect 8 course New Years Eve meal. Perfect. Champagne. An amuse bouche of carrot and butternut squash. A truffle and foie gras ravioli. Scallops, lentils and endive. Seared turbot. Lychee sorbet. Pork tenderloin with winter vegetables. Cheese platter. And desert. Cordial service. Attentive and friendly. Great ambiance.

Yelp
Awesome dinner with the best service we experienced in Paris! They showed special consideration for our language, and read all the menu choice to us. They even made special desert for my kids. My son (17 yrs old) said it was the best meal he had in France. Very good experience in a cool part of Paris!

Gijs V.

Yelp
On a what turned out to be a reasonably quiet night at the restaurant, we enjoyed a very well prepared meal. The foie & truffle raviolis where fantastic and the turbot and lamb were both cooked to perfection. The atmosphere was good but the restaurant (not the food) would benefit from a bit of tender love and care. The service was very pleasant and we felt very welcome
