Stéphane Tournié - Les Jardins de l'Opéra

"In a bright, stylish dining room (parquet floor, wooden tables, wine cellar), flanked by a leafy interior courtyard covered by a glazed roof, this quiet, peaceful setting comes as a surprise in the midst of Toulouse’s Capitole. The venue is the HQ of virtuoso Stéphane Tournié, with stints at Lucien Vanel in Toulouse, André Daguin in Auch, Taillevent under Philippe Legendre and the Crillon under Christian Constant. We love his knack of getting straight to the point, illustrated by wild pollock and spicy stock of langoustine or duck smoked in grass and herbs from the sweet-scented scrubland. The dishes are often finished tableside by the slick kitchen team, adding a touch of excitement to the meal." - Michelin Inspector

We order le menu Capitoul with 82 EUR. Good start with Amuse-Bouche. It was truly special experience for us. Next time, I also want to try le menu Saveurs!

The food was decent, but I expected something more refined and creative from a Michelin one-star restaurant. Unfortunately, the service was truly disappointing. The woman serving our table seemed visibly annoyed—sighing, not smiling, and showing no warmth or professionalism. The restaurant is also extremely inflexible when it comes to dietary restrictions. My wife has a seafood allergy, and their only solution was to remove the seafood from her dish without offering any substitute. Since they serve a surprise tasting menu, you don’t get to see what you’re eating beforehand—and they make no effort to accommodate special requests or allergies. That’s unacceptable at this level of dining. To make matters worse, when I asked for a small box to take home the chocolates we didn’t eat, they told me they had nothing available, claiming their customers “don’t take food home.” I suppose that means I’m not considered a real customer? The chocolates were served on a small, cheap wooden tray, which clearly wasn’t meant for reuse. So I took it with me. To my surprise, about five minutes later, the same server came looking for me on the street to demand the return of the tray—without offering any way for me to take the chocolates home. Shame on them for such poor service and lack of hospitality. This is not the experience one expects from a Michelin-starred restaurant.

We had a nice diner here, but nothing exceptional. We went through the 4 courses menu, and we were not disappointed as the food was good, but pretty boring. There was nothing exceptional in anything we ate. It was well cooked and you could feel the technique was here, but that's it. The service was nice, but not up to standard for such a place, e.g., hard to get the attention of the wine guy and get a glass. It made me feel like a regular hotel restaurant, quite bland in the end, with no soul. The place is nice for sure, but the overall experience is overpriced in my humble opinion.

This is the worst hotel in Toulouse!! The rooms are old and shabby. Service at 0 level. The air conditioner in the room did not work in the terrible heat. I was not even warned about it. The number was not changed. It's just horrible!!!! Spoiled rest. I categorically do not advise!!!

An exceptional experience in terms of the cooking and organisation of the dishes. Lots of taste sensations - the lobster cassoulet, basil ice cream, and hay-smoked aubergine to give just a few examples! More conventional things done really well too (delicious ceviche)! Wine pairings were clever and unconventional in places. Generous sizes too (for this sort of restaurant) Only very minor negatives - not sure about the bread; our place in the dining room felt a little bit hidden from the action.

Highly respectable the quality of meals as well as the atmosphere. It is located in the center of downtown easily parking the car, ... all these factors are perfect as the 1st grade French restaurant. I will be back.

If you have money to burn and you’re a foodie, a Michelin star resto will never disappoint. Such as this one. But I’ve been to many Michelin rated restos and the food over all was not mind blowing. The location is great, it’s right next to Place du Capitole, the interior is so modern Contemporary chic, the service is okay could be better, the plating is great and taste is exceptionally good but like I said for a foodie, not mind blowing. A dinner would cost about 100€ per person. By the way, my photos were from exactly 2 years ago, when I first visited the restaurant.

Overall a very nice meal, my wife and I got a voucher for le.jardin de l'opéra. We decided to go for the testing menu and the pairing wine and dish. On the negative side: -Booked for 20.00 and the restaurant wasn't open yet, we had to wait a couple of minutes so some open the door despite the confirmation email. - the lady that greeted us was tense and we didn't feel particularly welcome. But she seems to relax after a will. - didn't wait for my wife to come back from the lady's room before bringing the course. Not accessible at that level. Had to ask to wait, by chance she arrived just in time. - had to ask for a break, the course was coming out very fast. - The testing menu didn't include cheese but still they are trying to sell it to you for 20 euros per person and that a choice of only 3 cheeses. Inacceptable at that level especially with a testing menu. - mistake on the bill, didn't take into consideration the voucher we got as a present. Once again not acceptable at that level. There were only 4 tables in the restaurant all night for 6 waiting staff, can't say that they were overworked. For the positive side: -The menu was fantastic, the win picked for every course was perfect, especially for the chocolate dessert. The sweet breads are unbelievable. Congratulations to the sommelier. - the younger waiting staff was very good, much more relaxed. I would like to point out that I am from a catering background, 20 years in Michelin star restaurants. I can say that I give a fair opinion. Would go back.

Yelp
Toulouse is famous for its color, pink color, sang by french artist Nougaro, for it's main central place in front of town hall, Le Capitole and for some of its famous food, Toulouse's sausage and Cassoulet. Food is a part of french heritage and culture and it's not surprising to find few Michelin starred restaurant. Les Jardins de l'Opéra (Opera's gardens in english) is one of these fine french gastronomic restaurant and it's probably the best located just few meters of the Capitole place. Entering Les Jardins de l'Opéra means entering and old Toulouse's mansion with an interior patio where the restaurant's dining room is located protected and isolated by a huge veranda. What I like in this kind of fine restaurant is the space. It's quite a luxury today... In Jardins de l'Opéra's dinning room, tables are separated by few meters each and it will make your dinner intimate and allow you to talk normally to your friends without lowering down your voice. Tables are comfortable and large, seats as well, and the decoration mostly relies on huge lamps and the really astonishing veranda. No fioritura and it will help to feel relaxed and this dinning room where your sight won't be disturbed by too many details, furnitures Dishes are the real stars of the evening, not furnitures :) So let's have a look on it. As many gastronomic restaurants you'll find a degustation menu. The chef will choose the dishes and serve you avoiding your allergies only. You'll have to trust him... But you sure can trust Stéphane Tournié and his team. The degustation menu can be served with matching wines, and so you'll enjoy the perfect food with the perfect wine chosen by the wine waiter. Pictures there after are from the degustation menu. The dishes we've been delighted with were really tasty, yummy, amazing by many details, colorful. The amuse bouche came with a delicious Dom Perignon millesimal 2006. Salmon, cucumber (I didn't take the full details of the dishes but it was definitely a little more than just salmon and cucumber. Then we were served a hen egg with ham and sauce (really exquisite !). The next one was an amazing roth with fish. The "tool" to cook the roth was part of the funny and entertaining part made in front of us. Then came the local traditional foie gras half-cooked (my preferred way to savour it) with an algae on the top. Next dish was definitely my preferred one. I'm crazy of bread crumbs and these ones were cooked to be crusty with a langoustine and creamy sauce. Amazing. The meet came after just with the first red wine. It was a quail cooked in two ways. The leg was slow-cooked in grease. Visiting Toulouse and not eating a duck or duck-like meet would be a sin specially when it's so tasty. Last two dishes were desserts ones : cheese with an blue cheese ice absolutely astonishing and then an mango ice cream. The menu was really perfect. I wouldn't have changed anything. Quantity, quality, colors, decoration, tastes, flavors. We all have different taste for food and definitely the bread crumb, the half cooked foie gras and the blue cheese ice were the ones I enjoyed the most. Each dish was served with a matching wine and it was really matching ans wine choice was featuring some really amazing ones. Wines served by order : Sainte Lucie d'Aussou, Carignan blanc, 2014 Chateau Pennautier, Viognier, 2015 Saint Peray 2014, Michel Chapoutier et Anne-Sophie Pic Clos Saint Jean, Cahors, 2000 Gaillac, Vendages tardives, Domaine Rottier Service was really professional. Not too much ceremonial, quite relaxed, but really efficient and not too much invading your space. If you look for a fine table for a professional dinner or for moment with your soul mate, then Les Jardins de l'Opéra can be a really good choice.

Yelp
This is one of my favorite restaurant in Toulouse. The Chef always tries to work with fresh products offered locally depending on the season. If you want to experience French gastronomy without the old fashion style that can sometimes be really boring and over used, you're at the right place. Service is fine for me, with the right balance between sophisticated and friendly, such as the ambiance... Even if, to be honest, I really care about what I get in my plate. :-)

Yelp
Tried the tasting menu and we were well rewarded. Innovative, beautiful presentation. Attentive staff. Right in the center of town but very quiet location hidden away from the masses.
