Toulouse is famous for its color, pink color, sang by french artist Nougaro, for it's main central place in front of town hall, Le Capitole and for some of its famous food, Toulouse's sausage and Cassoulet.
Food is a part of french heritage and culture and it's not surprising to find few Michelin starred restaurant.
Les Jardins de l'Opéra (Opera's gardens in english) is one of these fine french gastronomic restaurant and it's probably the best located just few meters of the Capitole place.
Entering Les Jardins de l'Opéra means entering and old Toulouse's mansion with an interior patio where the restaurant's dining room is located protected and isolated by a huge veranda.
What I like in this kind of fine restaurant is the space. It's quite a luxury today... In Jardins de l'Opéra's dinning room, tables are separated by few meters each and it will make your dinner intimate and allow you to talk normally to your friends without lowering down your voice.
Tables are comfortable and large, seats as well, and the decoration mostly relies on huge lamps and the really astonishing veranda. No fioritura and it will help to feel relaxed and this dinning room where your sight won't be disturbed by too many details, furnitures
Dishes are the real stars of the evening, not furnitures :) So let's have a look on it.
As many gastronomic restaurants you'll find a degustation menu. The chef will choose the dishes and serve you avoiding your allergies only. You'll have to trust him... But you sure can trust Stéphane Tournié and his team.
The degustation menu can be served with matching wines, and so you'll enjoy the perfect food with the perfect wine chosen by the wine waiter.

The dishes we've been delighted with were really tasty, yummy, amazing by many details, colorful. The amuse bouche came with a delicious Dom Perignon millesimal 2006.
Salmon, cucumber (I didn't take the full details of the dishes but it was definitely a little more than just salmon and cucumber.
Then we were served a hen egg with ham and sauce (really exquisite !).
The next one was an amazing roth with fish. The "tool" to cook the roth was part of the funny and entertaining part made in front of us.
Then came the local traditional foie gras half-cooked (my preferred way to savour it) with an algae on the top.
Next dish was definitely my preferred one. I'm crazy of bread crumbs and these ones were cooked to be crusty with a langoustine and creamy sauce. Amazing.
The meet came after just with the first red wine. It was a quail cooked in two ways. The leg was slow-cooked in grease. Visiting Toulouse and not eating a duck or duck-like meet would be a sin specially when it's so tasty.
Last two dishes were desserts ones : cheese with an blue cheese ice absolutely astonishing and then an mango ice cream.
The menu was really perfect. I wouldn't have changed anything. Quantity, quality, colors, decoration, tastes, flavors. We all have different taste for food and definitely the bread crumb, the half cooked foie gras and the blue cheese ice were the ones I enjoyed the most.
Each dish was served with a matching wine and it was really matching ans wine choice was featuring some really amazing ones.

Service was really professional. Not too much ceremonial, quite relaxed, but really efficient and not too much invading your space.
If you look for a fine table for a professional dinner or for moment with your soul mate, then Les Jardins de l'Opéra can be a really good choice.
