"Started in April 2020 as a mutual-aid pop-up after work disappeared, this operation centered on baking challah and selling it to friends to donate proceeds to charities and mutual-aid groups. Demand grew quickly, forcing the operator to hire assistants and rent kitchen space; what began with 100% of sales donated was scaled back first to 50% and now to about 25% as costs mounted. The project began as a creative outlet and act of giving during crisis, but with the founder’s food-styling and photography work recovering and a children’s cookbook on the way, its future is uncertain and the organizer is weighing whether to continue, scale back, or sunset the effort." - Jaya Saxena
