Durham’s New Liberty & Plenty Distillery Will Make All the Spirits | Eater Carolinas

"Located at 609 Foster Street in downtown Durham, I visited the new Liberty & Plenty distillery, which opened to the public in late October and produces vodkas, whiskies, rums, and gins. Their first releases will be a blended mature bourbon and a rye whiskey — the bourbon made from six- or seven-year-old mature stocks and the rye from four- to five-year-old whiskey that Liberty & Plenty will blend and perfect — with a vodka made from neutral grain spirit and a gin to follow. While the long-term plan is to focus on spirits produced primarily in-house, sourcing mature stocks helps jumpstart production. Named for the two women on North Carolina’s state seal, the distillery’s logo includes common distilling ingredients like a thresh of wheat and juniper berries. The industrial-chic space in Durham’s Warehouse District includes an adjoining cocktail bar open Wednesday through Sunday after production hours (about 20 seats inside and 20 on the porch), offers tours, and will sell bottles on site such as Bronze Bull Spirits Bourbon and Slate Belt Vodka; it sits within three blocks of several breweries and stands next to Urban Axes." - Eric Ginsburg
