5-star beef tartar and mushroom dumplings, 1-star ribs and tofu. The ceiling of the dining room was totally exposed with all pipes and tubes visible, quoting my friend “looks like we are eating in the sewers”.
The beef tartar was pleasantly hand chopped in adequate size, and the meat cut was without any tendons. It paired well with the chives infused oil and salmon eggs. The dumplings were full of umami, not too dry in the dough and not too wet in the filling, together with a coconut based foamy sauce that provides acidity in tributes to the traditional Chinese dumplings match with vinegar.
However the pork ribs were undercooked, hard to chew on and way too salty. The fried tofu was also super salty, you need to drink a liter of water with these two dishes.
