Tokyo’s Dining Scene Has a Thriving Alcohol-Free Cocktail Boom — and It Tastes Delicious

"Liquid Factory is a 10-seat cocktail workshop in Shibuya, Tokyo, owned by Keita Saito. The bar is known for its innovative low-alcohol and non-alcoholic cocktails, such as Flowers, a spirit-free basil-and-orange-blossom fizz, and One Pear, a hopped gin and tonic laced with pear liqueur." - Travel + Leisure Editors

This bar was is amazing if you like a chill atmosphere and delicious flavors! It was recommended by an excellent bartender in Osaka, she said this was one of her favorites in Tokyo. The drinks are delicious but the menu is not too descriptive — it doesn’t tell you the base spirit or glass format, but just explains the key flavors of each drink. Vibe is cool, with low lighting and good music. You can trust the bartender — the flavors are beautiful! I hope to go back soon. Thank you so much for a really fun evening!!

Before 5pm nice coffee and try their NEGRONI LIKE G&T! After 5pm we love their signature cocktails NORDIC PATTERN (refreshing), BROWN CROWN. Wanna try OLD FASHIONED & BBQ next time 🖤😁

One of those hidden gems that feels more like an industrial lab for cocktails than your average bar. Liquid Factory keeps it raw — exposed concrete, minimal seating, and a no-frills setup that lets the drinks do all the talking. The cocktails? Bold, experimental, and weird in all the best ways. The “Old Fashioned Chocolate Bar” with Snickers + Cherry is a must-try if you’re into dessert-like twists with a whiskey backbone. The grilled pineapple + sesame oil cocktail? Sounds insane — actually works. Service is chill, unpretentious, and the bartenders clearly love what they do. Expect small space, close quarters, and creative drinks that lean into playful, unexpected flavors. If you’re hunting for an underground spot where Tokyo’s cocktail scene doesn’t take itself too seriously, this is it.

A lovely offering located off Shibuya. Very friendly staff. The ingredients are top-notch, and the drinks are delicious.

Amazing cocktail bar in a super cool neighborhood and charming theme. The bartender (owner?) was so kind and welcoming. They have a regular and a seasonal menu where they source local ingredients to make the most unique and delicious cocktails we’ve ever had. I highly recommend this bar, prioritize it above the others in the neighborhood!

I stumbled upon this bar while browsing the area, and I'm honestly disappointed I didn’t discover it sooner. Tucked away in a quiet, unassuming neighborhood just off the path from the more well-known Bellwood, this spot is a must visit. I was a bit nervous there might be a line, but I got lucky and had the place to myself. That gave me the chance to chat with Keita — the brilliant, almost mad scientist behind the bar. His creativity is on another level. I started with the Old Fashioned Chocolate Bar — easily one of the top 5 Old Fashioneds I’ve ever had. It literally tasted like a Snickers bar, in the best way possible. Rich, smooth, and incredibly balanced. My second drink was wild in the best way — it tasted like a summer BBQ meets an al pastor taco. Sounds strange, but it worked. Keita’s flavor combinations are bold, surprising, and totally delicious. Super friendly service, unforgettable drinks, and a vibe that feels like you’ve uncovered a secret — I can’t wait to come back!

Best cocktail bar in Japan! I've tried all the bars on the World's Best list, and this one should be at the top - amazing creativity in the drinks, foraging what is in season, distilling ingredients in-house, treating products and flavors with amazing care to create well balanced and delicious drinks that cover a spectrum of flavors. Beyond that, not the least bit pretentious and no cover charge, really friendly service in a cool, industrial designed space, with 90s hip hop playing in the background. I was blown away by a drink that came from foraging mushrooms at Mt. Fuji, complete with a cedar wood spray from cedar that came from the owner's background. Such a creative, light, and refreshing drink, perfect for autumn. Also, had a best ever variation of an espresso martini, with jasmine infused whiskey, notes of vanilla, black pepper, and banana. And the best part of the experience is that the menu is always changing with the season.

The mixologists truly love their craft here - definitely a hidden gem as we found out about this place because we were staying next door. Amazing cocktails with truly unique stories which they explain to you at your table as they’re presenting and finishing the drink. Highly recommend!

Yelp
Liquid Factory just opened a few months ago on a quiet side street of Shibuya. The place is casual and the interior is designed to look like a small warehouse or a factory. Don't be fooled by its casual decor though because you'll soon realize that a lot of attention to detail has gone into creating this place. The bar menu mostly consists of craft cocktails although there are some mocktails and other drinks like beer. They have several signature cocktails that they always have on their menu as well as seasonal cocktails that change every few months. The owner and bartender Keita-san is warm and friendly and really takes the time to explain the menu. He understands that the descriptions on the menu alone may not help customers fully understand what the drinks are like and will kindly refer you to their Instagram account, which has photos of both the signature and seasonal cocktails. We went during the last week of their winter 2020 cocktail menu and ended up ordering a total of four seasonal drinks between the two of us. Each cocktail was creative, fun and delicious. This bar is a great addition to a part of the city that was lacking in good cocktail bars and is a nice refuge from the craziness of the rest of Shibuya. The drinks combined with the quality of service that we received makes this one of our favorite bars in a city that is already filled with some of the best bars in the world.
