"Situated on Los Coyotes Diagonal about a six-mile drive from the original Retro Row spot, Little Coyote’s new 2,600-square-foot outpost occupies a 1970s-style, wood-thatched-roof shopping center with ample parking; the partners converted the space so all seating remains outdoors—including multiple outdoor dining areas and a partially covered patio—and are intentionally avoiding any indoor dining. The expanded footprint provides room for a commissary kitchen, increased takeout and delivery capacity, and the ability to expand the menu beyond pizza (a limitation at the original spot due to the pizza dough’s three-day fermentation process). For now they’re focused on whole pies, sub sandwiches, and salads, with grandma slices (thin, square-shaped, baked-in-a-pan) slated for lunch service and hints at fryer items such as chicken wings, mozzarella sticks, and possibly a chicken parm sandwich. Though the operation is described as fast-casual, hosts and servers will be on hand, and current hours are Wednesday, Thursday, and Sunday 4 p.m.–9 p.m., and Friday–Saturday 4 p.m.–10 p.m." - Mona Holmes
