Overall summary: beer and food are top notch. Expect food to arrive slow, beer to arrive ASAP, and to have a relaxed meal.
Here's what my wife and I tried:
Beyond excellent: saison, hazy, October fest, amber bier de garde, come at me beau (Czech Pilsner), and stouts!!!! The saison is amazing. I got that and the fest in growlers. We got bottles of the Mexican and moonville stouts to go. Too good to not share. Can definitely tell they executed full bodied and higher gravity beers excellently. I can't call this my favorite brewery in Dayton on one experience but will definitely refer people here.
Sours good - decent body and SOUR. Not the lame excuse where the beer tastes contaminated.
Food: We got the squash soup and the harrissa carrots as an app. Wow, great flavor. Big portion sizes. I was watching the chef through the open-view kitche braise the carrots. Didn't come quick but worth it.
My wife got a rissoto and it was amazing. I got the beet burger and it hit the spot. Must be a Mecca for vegetarians - much better than typical vegetarian burgers and totally unique with smoked beets and a really tangy sauce. Came with a side salad with a very solid but light dressing. Fresh lettuce with no signs of being too old. (Ordered veggies this time since been eating the same pork butt all week). Pickled vegetables were good especially with the pickling spices but did not care for the zucchini - pickled zucchini still needs cooking to reach top notch.
The chocolate pot -me and the wife agreed - was the best chocolate mousse thingy we've ever tasted. The chocolate part was super thick and yummy, but oh my god, that sauce. So boozy and never had anything like it. Was worth it.
So the downs were that the kitchen was slammed and everything took a whole. Portions were pretty big so that soaked up a lot of time. Actually I didn't mind it since I was engorged in the food and in beer candy land and generally the atmosphere was chill and relaxed. However, not good if you have other plans for the evening and are expecting wham Jam thank you Ma'am like a typical brewpub. It's pretty new. I predict two things: kitchen will get a little faster and they will raise prices since the food quality and attention to details were so meticulous that it's hard to imagine that they can make a profit. This was better than our last steak house meal by quite a bit (minus that buttery medium rare t bone steak always beats vegetarian meals but every other item it holds true.) in particular, the beer was not cheap, but damn it must have 10X the malt compared to the typical domestic beer and twice that of a typical 'craft' brewer - hard to see how they'll maintain prices in 2023. But feel blessed to have had such a meal before that breaking point. Cheers.
Parking was easy for Dayton. Free parking right next to the building. We could see a sunset through the windows, but the indoor deck was real good.
