This sausage was absolutely FANTASTIC. I live in Maryland and we found the jalapeño chorizo sausage marked down at giant.. they were going towards the sell by date. I had been dreaming of using this on tostadas but ended up getting super sick this past week, so waited almost a week to cook it, and they were still in perfect condition.
I took the chorizo out of the casings, crumbled it, and browned it up with onion. I haven't cooked chorizo a ton of times, but the few times I have, it's so greasy and mushy while it's crisping up, but this was so firm and so wonderful to work with. Minimal grease as well. I sat it in a bowl while I fried up eggs, made homemade "re"fried beans, along with a cilantro avocado crema and a chipotle sauce. The chorizo was soo good that I just could not stop picking out of the bowl and ate at least of a quarter of it while fixing everything else.
I included a picture of the tostadas, don't pay attention to how messy the sauce is, but they were incredible. I'll be by Giant again over the weekend and I will absolutely be buying this again. The last time I made chorizo, I made it with chicken on tacos and the meat just had no flavor. Can't remember the brand but I'm going with Logan's from now on!
