"In this mountainous area on the edge of the Basque Country, this traditional establishment is simply charming. It is also the repository of a family history going back four generations. Ximun has now taken up the mantle, serving delicious traditional cuisine, characterised by generous portions and tasty well-matured broths and jus. The ingredients are local, and the suppliers are duly listed on the menu. Riding through these mountains and stopped for lunch. A spectacular view with an even better meal. Service by the young ladies here was impeccable despite my lack of language skills. Stop and eat. The difficulty is getting started again

Stayed here for one night with my wife on a motorbike trip, we won’t discuss the route up and down to the hotel as that was quite scary for her‼️😆 However the hotel itself, superb… staff can’t do enough for you, the restaurant… well, how that’s not a Michelin star minimum is beyond me we like our food and that was one of the best taster menus we’ve ever had‼️💪👍

A smart hotel in a small pretty village - The common spaces and lounging areas are small however the reason you should stay here is because of the food! The set menu (€38) was amazing value for the quality of food.

We visited only the restaurant, which was phenomenal. The food was extremely high quality and one could tell that the ingredients were fresh and local. Every dish was phenomenal, especially the tuna starter and for me the desserts. Food was extremely beautifully presented too. Furthermore, the food was not too expensive, with the three course menu for €38 and two for €28. The staff were very friendly and helpful and the atmosphere was great, and the panoramic views were stunning.

This is the 4th or 5th time we've used the Etchemaite for our Pyrenees cycling tour and the quality has been consistent over all these years. The hotel has recently been handed down to the next generation, if we understood correctly, but we can confirm that the new chef (Pierre's son) is great!

So you request a reservation 4 days ago, you get a wrong offer 3 days later, you tell them they responded to the wrong request, can happen. Then they make you a new offer the next morning, you accept, you then want to make the bank transfer for the deposit and you get a note. Some group made a booking via Booking.com last night and the rooms are no longer available for you. That is not how you do business!!! First come, first serviced! You cannot withdraw an offer made and accepted!!
