The food presentation is excellent! I also commend the diligence of their social media lead to respond to each comment.
Unfortunately the rest of our experience is not enough to recommend the restaurant for Filipino food. The waiting time is longer than what I expected for Filipino food. Sana balanced ang efforts to provide the food in a reasonable time while making them look fancy. Mukhang napadami yung fancy. Yung lasa kulang. Bakit?
1. The garlic rice was wet. To the chefs, please watch how chef RV cooks garlic rice. Simple lang yan. Kanin, mantika, asin, bawang. Bakit basa yung sa inyo? Bakit may carrots?
2. The deconstructed siopao only had good buns. The filling was unbecoming for a siopao. Again this is simple. No need to use unnecessary ingredients. It tasted like it was trying to be an arabian food but also lacking.
3. The fancy siomai is ok. It just hurts to see how little they are. It is very similar to what you can buy for 20pesos, nilagyan lang ng fanciness.
4. Ginataang hipon. The essence of gata was diluted. Very much diluted. Good that the chef compensated with ginger, but this is not the experience of ginataang hipon. Just call it fancy hipon with gingery sauce.
5. Pork sisig. The feeling here is you get all the elements of heat fat acid and salt, but the finished product will not pass as Filipino sisig. What did you guys do with the egg there?! It is supposed to be mixed to make it creamy. The sisig has to have a kick of pepper, and it should use calamansi. This is not recommended
6. Sinigang na isda. I appreciate the efforts made by the chef to use real sampaloc. Pero bakit lasang lupa? My wife said maybe the seed or the rind was included. It tastes nothing compared to traditionally prepared sinigang with sampaloc. Somewhere along the efforts to establish the acidity, the elements eventually did not complement. The tomato should look like it’s already macerated, not firm. it is not recommended.
A fusion experience should enhance what is already there as baseline good. However in this case, the food felt pretentious. Why not serve sisig as how it is supposed to be? Then fusion mo ng austrian sausage. Gamit ka ng salmon sa sinigang, o kaya lagyan mo ng brusselsprouts yung tooong ginataang hipon. Hindi yung tinagalog lang yung pangalan ng pagkain pero nawawala yung minimal requirements ng food.
Overall it is a sad experience because living in Central Europe only gives you a few choices for Filipino food. And then the name is even enticing pa naman. Lolo at lola. It exudes with nostalgia like how my lola would have prepared her dishes. Well hindi siya ganun. I hope they do better.
