Since discovering this food truck, to say that I've been obsessed is an understatement. Their tacos are reasonably priced for the amount that they STUFF their tacos. Most places will be light handed with their meat and pile on the cilantro and onions, but not here. They will GENEROUSLY stuff the tacos with meat and then add cilantro/onion on top. It can get a little messy, because as you try to pick up the taco, the contents spill out from being so full-which idk about you, but that's a problem I DON'T mind having at all. I have had the pleasure of tasting about 75% of their meat options available and each and every single one is delicious, seasoned, and just ✨chefs kiss✨. Aside from their tacos they offer a variety of other options, I've tried their super burrito (absolutely massive) it's bigger than a Chipotle burrito and 100x more flavorful--unfortunately I did not manage to snag a picture of this one and I'm quite disappointed about it 😩. I have also had their Torta Cubana--let me tell you, you'll never be able to eat a regular Torta again. I am so excited to eventually make my way through their large menu and I don't think you could go wrong with anything on there!

Fantastic prices for an enormous amount of food! This is one of the food trucks in Salem i always recommend to visitors because it's that good and it is so authentic! I love it there! They always get your food out to you super fast plus they have seating here as well as a salsa bar which is more than pretty much any other food truck I've been too so this is the best!!

I read the reviews before coming to this location. I was so excited to try this place out but I was met with such disappointment. I ordered 4 tacos two asada and two carnitas. The asada was great but the carnitas was horrible, it taste almost spoiled!! I took one bite and spit it out. I also order asada fries and the fries were stale !! Extremely disappointing

I came here to order some tacos. i ended up ordering 11 tacos de asada. the lady in front of me ordered a burrito de asada. they took my order, i paid and tipped then we waiting a good 10 minutes before both mine and the lady in front of me buzzer went off at the same time. the lady taking orders told us there was no more asada. The lady who ordered before me then asked for pastor. i was next and she told me she was now out of Chicken, asada, pastor and another i cannot remember. so i told her i didn’t want anything anymore so she offered a refund. Mind you i paid w card but she gave me cash instead. That’s fine but she only gave me the amount of the 11 tacos, SHE KEPT THE TIP !! i didn’t get my food because they ran out but she still kept the tip. RIDICULOUS.

If I could give more stars I would. I got the rolled tacos with rice and beans! So good. They have a salsa bar which was super awesome too. Definitely going to be my new lunch spot.

Where can you get a fresh taco for $2.50? Right here! And they not only taste amazing the staff is really helpful and detail oriented. They have tons of options but I like the simple tacos.

**★★★★★ La Guadalupana: Where the Oregon Burger Reigns Supreme (And Your Stomach Thanks You Later)** Listen up, amigos—if you haven’t hit up **La Guadalupana**, you’re basically missing out on one of life’s greatest joys: a Mexican food cart that feeds you like a proud abuela and leaves you in a happy, carb-induced coma. Let’s start with the star of the show: the **Oregon Burger**. I don’t know what kind of magic they put in this thing, but it’s the kind of burger that makes you question all your past life choices. Juicy, messy, and packed with flavor, it’s like a party in your mouth, and everyone’s invited. (Pro tip: Wear stretchy pants. You’re gonna need ‘em.) But here’s the thing—**everything else is fire too**. Tacos? Amazing. Burritos? Massive. Quesadillas? Basically a cheesy hug for your soul. The portions are so huge, you could probably share a single dish with your entire family (but let’s be real, you won’t want to). And the folks running the cart? **The friendliest humans on the planet**. They greet you like you’re old friends, laugh at your terrible Spanish attempts, and pile your plate so high you’ll need a forklift to carry it. It’s the kind of service that makes you want to come back just to hang out. **Final verdict:** La Guadalupana isn’t just a food cart—it’s a lifestyle. Affordable, delicious, and served with a side of good vibes. If you leave hungry, you did it wrong. **P.S.** Bring a friend. And maybe a wheelbarrow for leftovers. 🌯🔥
