I had no idea about this little gem spot until I saw it on an episode of Localish a year or so ago. I finally decided that yesterday afternoon was the day for my first visit to Lonestar Sausage & Bbq. It was for sure a long ride, like 45 minutes or more. However, it was worth it ! I ordered the Lean Brisket & Sausage Plate with mac n cheese and collard greens for the sides. I then got a slice of that Yellow Cake with Fudge Frosting after the meal. Everything was really delicious, juicy, tender and made with pure love. The brisket was imo one of the 3 best brisket I have ever had right after # 1 nationally ranked Franklin Bbq in Austin. It was really well-seasoned and salted perfectly. It was really tender with an ideal amount of fat to beef ratio. The bark was very good as well as the meat's thickness. The solid smokiness with a hint of very subtle sweetness packed a good punch as good TX Bbq should. It was on the flat side as I tend to prefer for this cut, but definitely not dry or too lean by any means. The sausage was also one of the best I have ever had with a fatty, well-spiced flavor to it. It wasn't slimy though. It had that nice crunch on the outside layers contrasting the mushier inside. You could really tell it was handmade and not store-bought or full of unknown chemicals. The mac n cheese was very fluffy despite looking rich. It had a sour cream profile with some peppery notes I think. It was unique in a way and definitely appreciated as a side imo. I am a fan of collard greens in general and these were basic and yet very good with a moist texture and sourish, earthy taste containing some sausage in it too. I am open to trying more sides here, but these two are going to heavily be considered when I return due to enjoying them very much. The bbq sauce was clearly handmade with a runny texture and great balance of sweetness and tartness. Both meats on my tray honestly did not even need any sauce, but a little on some bites is extra fun when consuming bbq. That yellow cake with fudge was really good, buttery, soft, moist, crumbly and fresh with a really good chocolaty icing layer. Both parts of the cake were very tasty and I had to save some for my dad, bc he grew up on this cake up North. It had that taste n feel like one made by an older family member for decades. Classic, retro, so comforting and sweet. It's also one of my favorite cakes along with a dark chocolate midnight cake. Yellow cake is seemingly uncommon and it's a very flavorful one. As for the service. The guy at the window who took my order was very welcoming, helpful and polite. The owner who's also a former Houston Cougar football player from the late 80s and retired cop was very engaging, really friendly, really kind and so attentive to his guests. You can really tell he's a true people person with excellent bbq skills to go with it. I plan to make a trip to this place once a year when I can.
