"This typical Bilbao “botxero”, a classic feature of Bilbao’s restaurant scene, opened its doors in 1878 under the name Bar Colón. Today, following its impressive renovation which has seen it retain much of its authentic character, it is one of the most interesting restaurants in the city’s old quarter. Its beautiful bistro-style interior provides the backdrop for an impressive à la carte (including “media ración” options) that features Bilbao’s most representative and typical dishes, all presented with a contemporary flair, alongside two enticing tasting menus: “Gourmand” and “De Bilbao de toda la vida”. Don’t leave without trying the legendary grilled prawns!" - Michelin Inspector

Our visit to Los Fueros was truly exceptional. From the moment we arrived, the service stood out — Xabi, our waiter, was attentive, friendly, and made sure we felt comfortable throughout the entire experience. We enjoyed a beautifully crafted menu featuring gambas, cod croquettes, foie, and beef. Each dish was prepared with precision and incredible flavor, showcasing why Los Fueros holds its Michelin recognition. The quality of the ingredients and the care in each plate made this meal unforgettable. A must-visit in Bilbao for anyone who appreciates outstanding food and warm, professional service.

Recommended in the Michelin Guide. The grilled shrimp was good, but the real standout was the squid — easily the best dish on the table. Very clean flavors, perfectly cooked, and not overworked with sauces. A dish that alone justifies a visit. Service was attentive and well-paced. The space feels intimate and warm, suitable for a longer dinner rather than a quick stop. For dessert, we tried “Kill the Cheesecake”: a deconstructed, inverted-style cheesecake with mango purée at the base, an intensely creamy cheese layer, and a buttery biscuit on top. The biscuit was slightly thick, but the cream and mango worked extremely well together. Price: We paid €86 total (tip not included).

When I saw this gem recommending this spot and claiming to be on of the oldest spots in Bilbao, I knew we had to spend an afternoon here. We did two tasting menus. Normally they make everyone at the table do the tasting, but our senior mom was with us that doesn't eat much, so they made a special exception for her. The service was excellent. It felt like a chefs kitchen- intimate and personalized. The food was magnificent (more than we could eat). I will say it does take quite a bit more time than we were anticipating, so be ready! I highly recommend doing the tasting, but plan for it to take 2 hours. And come hungry! Great, local wine as well. One of my favorite meals we had in all of Europe.

Google
Amazing place to eat if you're in Bilbao. It is a Michelin restaurant, and it was so good. We got the "tasting" dinner for 2. Normally I would not eat the certain foods they had, but im very happy and glad I did! We will be back!

Google
Outstanding! We had a fantastic dinner at Los Fueros. Delicious food, friendly & professional service, delightful atmosphere. It’s pretty small and you need to book! The €48 menu was outstanding value. It was all delicious but we particularly loved the anchovy pinxos, croquetas, grilled prawns, artichokes & the amazing ‘bread pudding’ .

A MichelBib Gourmand recipient for years. It has good food that does not disappoint. The menu is varied and the wine list impressive. Worth a visit and definitely good value

Google
We loved the place - smaller and more cozy than on the photos with excellent choice of wine ! Food was excellent and overall a very (!) fine quality / cost ratio. Make sure to have a reservation !

Google
Disappointed. The food was boring and average. Except the anchovies with the toasted bread & the tomato spread that was good. All else was average. The place is nice and the staff polite. And there is a good variety of wines listed - only by the bottle not by the glass-. But this is it. I cannot believe that it is suggested for Michelin. I am not going there again.

Yelp
Incredible meal, fantastic service! The buñuelos and mushrooms were both excellent! That said, the tomato salad was the standout! Excellent, simple ingredients. Be sure to make a reservation when in town !

Yelp
The hostess asked us to sit outside because we didn't booked and we thought it was fair enough until we realised that the restaurant was empty during all of our stay, i can understand if you are having a bad day but she really made u feel awfull. I would've loved to give a 5 star, as the food was excellent and our waiter was so nice to us.

Yelp
The place is beautiful with 1920"s mosaic walls. The food is absolutely delicious, and they can provide vegetarian food, artichokes are one of my favorite dishes. Customer service is run with excellence by Xavi, he made us feel home and cozy, although we asked many questions, and had plenty of requests. Very recommendable!

Yelp
Excellent restaurant. The service was personal and friendly, both waiters spoke very good English. Atmosphere was intimate and charming. Food and wine were excellent, especially for the price. We ordered the gourmand tasting menu for the table. The croquettes and white asparagus appetizers were splendid, and every entree was ver good as well - the grilled shrimps were probably the best of what we tried, and would definitely want to try the bacalao next time. The entire meal (4 courses incl a full entree) was only €30 per person, and the wine was inexpensive too. I happily pay double or triple that for the same food back in NY, not including drinks. Absolutely recommend.

Yelp
3 stars and a half. Beautiful place, traditional dishes served with innovative and some humor. Very charming and relaxed service. We had a great evening.

Yelp
Excellent service and great food. We had the "taste of Bilbao" menu, and the variety and quality of the food was first rate. The items were brought out individually, and we never had to wait for the server to bring the next one, even though we were sitting outside. No language problems either.

Yelp
My friends and I had the pleasure of participating in a cooking class led by chef owner Paul Ibarra. Paul is a wonderful instructor/chef for both seasoned home cooks and non-cooks alike. His guidance through recipes was insightful and inspiring. The dishes included a shrimp and guacamole salad which combined and layered unexpected flavors. We made paella with mussels, chicken with polenta, cod with ratatouille and a Basque version of tiramisu. Wine flowed that matched with the food perfectly. Don't miss this class or the food at the restaurant. How privileged we all felt to have met Paul, learned from him and ate his amazing food! This was the highlight of our vacation to Spain and the Basque region.
