Exceptional dining experience that exemplifies the core value of French cuisine: the harmonization of flavors.
Highlights:
I’m usually not a fan of foie gras, truffle, or caviar dishes because their flavor often overpowers other ingredients and become the main character of the dish.
But the Foie gras ravioli and the truffle milt surprised me with their subtle usage of strong-flavored ingredients, resulting in perfectly harmonized dishes that renewed my perception on exotic ingredients.
Snapper was also exceptional with its crispy skin and tender meat, combined with crab and oyster giving the dish a hint of Japanese flavor.
I was also floored with the strawberry dessert since the sweetness was not too apparent and the subtle mint flavor was refreshing enough that kept the dish from feeling dull despite its large portion.
The only criticism I have is for the meat dish. Although the side dish and sauce were perfect, my lamb was hard to chew and the meat to fat ratio was subpar. However, my partner’s lamb was cooked perfectly with little fat, so I believe it was a small oversight, and unfortunately my cut was unsatisfactory.
Overall, this meal was a great example of French cuisine, and I believe the chef really spent a lot of effort in creating harmony in all dishes. I hope to visit again.
