A Pastry Revolution Is Afoot in Australia's Southern Capital

"A Carlton neighborhood patisserie run by two chefs with high-level restaurant pedigrees that fuses French technique with Australian and pan-Asian ingredients—think black sesame, brown butter and Tasmanian leatherwood honey, pandan and coconut—and is particularly celebrated for its plump, flavor-packed madeleines." - Melanie Hansche

My very first time visiting and bang! I could say this is the best place ever for Madeleine fans! My favourite would be mugwort, corn, orange & cherry. Overall, they all contain unique flavours and are made of various combined elements that make them stand out from each other. Of course, other flavours are worth a try too as this place will have a tantalising selection that never lets you down. Very recommended

Tried three of their madeleines: Chocolate, Earl Grey, and Original. All were impressively fluffy with a soft, cloud-like texture. The Chocolate had a deep cocoa flavor without being overly sweet. Earl Grey stood out with a fragrant, tea-infused aroma that lingered nicely. The Original was subtly buttery, letting the texture shine. Simple presentation, but clearly well-crafted.

A place so delightful, it’s hard to visit just once! The madeleines were absolutely delicious, and the service was outstanding. The staff was incredibly kind and took the time to explain the menu in detail. Since I needed to take the madeleines on a flight, I mentioned it to the staff, and he carefully packed everything for me. Thanks to the thoughtful packaging, not a single piece was damaged during the trip. While the prices might seem a bit expensive, the unique flavors and beautifully eye-catching designs make them perfect as memorable gifts to share with loved ones. I highly recommend the Yuzu flavor! It was my first time trying the Pandan one, and just as the staff suggested, it turned out to be exactly my taste.

Been meaning to come here since I saw it on Instagram, and I wasn’t disappointed. Yes, the desserts are delicious. Perfectly balanced and just a cut above. But it’s not just that, the way they’re presented and packaged is gorgeous. Really elevates the experience. The only reason I’m not giving five stars was the selection was extremely limited when we got there. I’d actually give an extra half star if I could because the guy who served us was super apologetic and did say more was being made…on this, the service! So so good. The guy explained (unprompted) what everything was, the differences in flavours and textures etc. It was really perfectly delivered. Not being too much information. And also, you could tell he kinda cared about what he was saying. Overall amazing experience and amazing treats.

Tried a variety of their madeleines - both the original and filled - and was super impressed. The original madeleine, which I had fresh out of the oven, had a delicate flavour with a beautifully crisp shell. The filled ones were a true delight; the earl grey and citrus/passionfruit (“My Moon & Stars”) stood out as my favourites. The pistachio financier was another highlight, with its rich and creamy pistachio buttercream. Service was prompt and the staff were warm and welcoming. Although indoor seating was limited, the space felt cost and inviting. I highly recommend stopping by and can’t wait to explore more of their flavours.

Ah, these guys make weekends worth looking forward to. Owned by 2 fantastic individuals, with deep culinary experience under the belts. Attica, Sunda, Matilda, and a whole bunch in France and the UK. Offering up inventive flavours, while also serving up classics, all the while introducing more to their lineup, including crowd favourites like the canelé, the financier, butter cookies and more. Using only the finest ingredients, sourced straight from France. Merging Asian flavours with European, creating masterpieces, resulting in explosions in your mouth. Have a talk with the owners for recommendations! Even a single drink comes in 3 configurations!
