"The exclusive boutique hotel is just one side of this beautiful old establishment, which boasts a fabulous view reaching all the way to Lake Constance. Another is the restaurant run by the duo of MICHELIN-starred chefs, Andreas Caminada and Silvio Germann: here, the latter, as head chef, uses the finest ingredients to cook up creative dishes – elaborate but not fussy, pared down yet with real depth of flavour. A rather unassuming name such as "salmon – lettuce" belies a wealth of complexity: premium Lostallo salmon, delicately seasoned and flame-kissed, served with an emulsified broth of buttermilk and lettuce, finished with an intense herb oil, strips of crisp young lettuce and fresh herbs. On the side, a small waffle basket with an aromatic and creamy salmon tartare, topped with a subtly bitter horseradish foam. The chic and modern wine cellar boasts over 1 000 different labels. The service team is managed by maître d' Giuseppe Lo Vasco, who is exceedingly attentive, charming and knowledgeable.
