Sourdough Flies Off the Shelves at Maryland’s Buzziest New Bakery - Eater DC

"Manifest Bread, a sourdough startup with a devoted DMV following, now has a brick-and-mortar bakery in Riverdale Park. The organic bakery off the Route 1 corridor (6208 Rhode Island Avenue, Riverdale Park, Maryland) made and sold around 400 cookies and pastries and over 250 loaves, baguettes, and bialys during opening weekend this month. Hours are Tuesday from 8 a.m. to 2 p.m.; Wednesday to Sunday from 8 a.m. to 5 p.m.; and until 7 p.m. on Thursdays with Riverdale Park Farmer’s Market. “Bread has been going fast. It takes three days [to] make what you see on the shelf,” says Rick Cook, who owns the fledgling bakery with his wife, Tyes. The fine-dining restaurant vets started the grassroots business out of their home in 2018, and pandemic demand for loaves helped Manifest become a bonafide delivery and pre-order operation. Its word-of-mouth sourdough got a big break last fall with a prominent placement on Michelin-starred chef Johnny Spero’s Basque-themed menu at Bar Spero, served with La Tur butter or on its own. Rick Cook previously cooked at Eric Ziebold’s now-closed CityZen, Blacksalt, Etto, and 2Amys, while Tyes managed operations at places like Pearl Dive, Fiola Mare, Del Mar, and Obelisk. Baguettes—cooked “bold and dark like all of our breads”—are its most sought-after menu item and can’t seem to stay in stock, he says. They’re made mostly with sourdough, a tap of yeast, and “a good measure” of freshly-milled mixed organic grains. A $60,000 fundraising effort helped the couple purchase essential equipment like a stone mill made in Vermont that mills most of its flour in-house, a dough mixer, and massive deck oven. Meanwhile, its cookies have proven “impossible to keep up with demand,” he says. Three opening varieties include chocolate chip walnut, ginger molasses, and oatmeal and date—its only gluten-free offering as of now. Other successful sweets out of the gate include chocolate babka and pear jelly crumbles. Spicy sweet potato focaccia by the slice consistently sells out “so quickly,” he adds. The sleeper hit is its “Bran-ana” muffin, which makes use of Manifest’s excess bran, ripe bananas, and buttermilk. The tiny cafe with a walk-up counter carves out room for just two two-top tables, a three-seat bar, and brass kick-rail stand to “slug a quick cortado,” he says. Starting Thursday, January 19, wine on tap and by the bottle will enter the fold, along with beer and cocktails later on. He hopes customers stay patient as Manifest finds its footing opening with a skeleton crew; “we are looking for good help like everyone else,” he says. With the renovations finally done I was excited to get a chance to try this place for the first time What an awesome place! The interior design is gorgeous with plenty of seating while still feeling really open and well lit, even in the way back. The staff were all incredibly friendly and helpful in explaining to me some of the offerings I'd never heard of before. The bread budding and cortado were delicious and there was almost too many lovely looking options to make up my mind. I can see why the line out of this place is always so long. Also, not a normal thing in my reviews, but the bathrooms were both clean and also really cute(?!) they clearly put some effort into this place.

It was my first time going since the renovation and it’s amazing!!! Amazing bites, the cardamom bun is amazing as ever, and also a huge fan of the corn salted caramel cookie. Every baked good was unique and delicious ❤️🥐

I can’t say enough good things about Manifest. The new space is beautiful and inviting, the food is delicious and made me want to order one of everything, and the staff is warm and welcoming. The smell of the bread baking is hypnotizing. I am so glad they are back and I am already planning my next trip.

I come from afar for the breads, which have great flavor and texture; the baked goods and sandwiches look delicious, too. I’m withholding a fifth star because of the service. It’s friendly as can be, but ridiculously inefficient. Only one person taking orders so the line snakes onto the sidewalk and people who just want to buy a loaf of bread have to wait behind people ordering complicated Macha lattes with half oat milk and half flaxseed milk. Even after you’ve ordered and paid for your bread, they don’t simply give it to you but place your order in a pile of orders to wait its turn amidst all the custom orders. Twenty-five minutes this morning waiting just to buy a loaf. Hey Manifest, please figure out a better system. I love your bread! And a separate rant, while I’m at it, that is not Manifest’s fault. They charge tax on bread to go! It’s not considered a (non-taxed) grocery item because it’s being sold in a bakery-cafe. So Marylanders have to pay tax on healthy bread sold by an independent, artisanal shop but not if they go to the supermarket to buy Wonder Bread. Legislators, please fix this.

The bread is a so delicious and flavorful with a perfect texture; not too hard and not too soft. The flavors of the sandwiches are stellar, the apple cheddar is my favorite. The staff is friendly and always responsive. The atmosphere is lovely! This place is amazing.

Well, I am late to the party, but I finally got to the much-vaunted Manifest Bread bakery at 6208 Rhode Island Avenue in Riverdale Park, Maryland 20737. And, now that I've stopped there for a sandwich, a cocktail, and a cookie, I definitely see what all the fuss is about! By 2:30 pm on a Saturday afternoon, the small bakery had run out of a lot of things, but I was able to get a Chicken Salad Sandwich on a baguette ($10), two Oatmeal Date Cookies ($3), two Financiers ($5), and a Mediterranean Gin & Tonic ($12). There is nothing quite as refreshing as a G&T on a hot day, and this one had a unique edge: the addition of clementine liqueur, which gave it a citrusy sweetness, and lovely color. The baguette was the best I have tasted in the DMV... spectacularly crispy and nutty on the outside and tender on the inside, and filled with a very creamy house-made chicken salad... an enormous sandwich of very high quality for $10 (photo shows only the smaller half). Oh, Manifest... just when I have found you, you are closing soon for a planned expansion. So, folks, if you haven't been to Manifest yet, don't dilly dally... they will close for 3 to 4 months starting at closing time on July 28 (last day of service), and hope to re-open as a 20-table cafe with a 7-seat bar sometime in November, after they have expanded into the space next door. And, while you're in the neighborhood, you can leave your car in the lot in front of Manifest and walk across the street to Town Center Market liquor store (amazing selection of rare rums, whiskeys, tequilas, liqueurs, and other spirits), and 2Fifty Texas BBQ, home of award-winning smoked meats. This bakery is the truth! Popped in, thinking I was going to have a hearty breakfast for Juneteenth, and it ended up being a bakery - best decision ever! The line was a few people out the door, which I didn't mind, and we were served promptly. We ordered a cold brew and a latte, The almond and rhubarb financier (if memory serves me correctly) and the cardamom roll. All were excellent - I mean wow. Decadent but light and full of flavor. The financier has such an interesting texture with the surprise bite of compote in the middle - SO good. The roll was like eating a delish slice of chai bread - I dont know if that's a real thing but this is what I envision it to be. This place was so good we came right back after running some errands and grabbed the buerre jambon sandwich and two more financiers and the salted caramel corn cookie. That sandwich was made from the heart of a french chef and no one can tell me different. I mean just wow! The meat, the bites of salt. THE BUTTER?? Salivating just thinking about it. The cookie was good and loved the toffee center. This place is dangerous but I love the danger zone - for sure I will be back!

I'm hooked. Their bread is so flavorful and fresh. They make a mean latte. Their pastries are well executed. I haven't tried anything I didn't like! It's a small storefront with a surprising number of options. There's usually a line out the door on weekends and it moves fairly quickly. There's only a few seats inside, so unless you're lucky, don't plan to stay. Weekdays are less busy and that usually when I stop by for their delicious hummus, feta and broccoli sandwich on focaccia.

Talk about a Hidden gen! This bakery is in a small, nondescript shopping center by the train tracks in Riverdale. If you've ever been to Texas 50 it is close to that. They make the most incredible pastry, breads, and cakes, and on Thursdays you can special order a pizza that is out of this world. This morning I picked up some chocolate croissants and some apple turnovers and needless to say they received rave reviews from my guest visiting from out of town . The croissants are unbelievable. I think the best in the DMV by far there was only one table inside to set but there's a park close by when the weather is nice and you can have your coffee and pastry highly recommend this establishment and I can tell you I have bought cakes for birthdays and they are delicious as well.

Their sourdough bread is incredible, their sandwiches are creative and delightful, and the baked goods are out of this world! Their cardamom bun is truly otherworldly! My other favorites are their oatmeal date cookie, molasses cookie, oat & plum financier, and their focaccia breads. They offer great coffee apparently too. They also make pizzas on Thursday evening for the local farmers market

Yes, I did wake up early on a Sunday morning to commute from DC. No, I don't regret doing that. I arrived before 11 and some of their options were out already. Expect a line but it usually moves fast. I got a cardamom bun and took home a loaf of whole wheat sourdough. The cardamom bun was amazing!! Very strong cardamom fragrant, not too sweet at all, pillowy soft dough and delicious icing. My only complaint is it's not big enough because I want more. The whole wheat loaf was great as well - high hydration, and you taste the flavor and texture of the grain. Their focaccia also looked amazing, will try next time. The shop is pretty small so seating is limited, definitely more of a grab-and-go situation than a sit down cafe.

The space itself is uncomfortably small (but they are expanding soon!). So I wouldn't go and expect to sit. The nice thing it's located in a cute Riverdale Park where you could go find an outdoor spot. My favorite treats here are the ginger molasses cookie and focaccia. I get two focaccias every Saturday at the Gateway Farmers Market (which they will still be doing when they close for expansion). The tomato basil focaccia is my favorite! You never know what focaccia they will have so it's a nice surprise. You cannot go wrong with any kind of focaccia they have. Staff have always been friendly.

I finally popped into this bakery after a year and a half living nearby, and I'm so mad it took this long because everything I purchased was amazing! I tried the chocolate chip cookie, gingerbread cake, and the cardamom bun. I have zero complaints with each of these items. Just wow. I'll definitely return soon.

Manifest is a great bakery. I picked up sourdough, a bialy, a croissant, a chocolate chip cookie, and a vanilla latte. Everything was delicious. Bread was great. I really loved my my bialy, which was super flavorful. Latte was perfect. Service was friendly. Manifest is small and there was a line out the door 10 minutes after opening. I'm really looking forward to returning and trying much more on the menu.

Did I wake up early on a Saturday morning to bike 5mi to enjoy some carbs? Yes. Was it worth it?? A resounding YASSSS! My friends and I got a croissant, cardamom bun, strawberry and lemon tart, cheddar and apple baguette sandwich, and a regular sourdough loaf. Cardamom bun was so tender and the last bite in the middle had that perfect texture that smooshes between your teeth; it was very cardamom forward without making it tasty too spicy. The baguette bread was substantial and had a thick crust, which the fillings held well up against--nothing really squeezed out! Croissant was flakey, but Pluma's is still the best in the area imo. The tart filling was delicious, but it didn't match any other tarts we were familiar with, so we were thrown off. I didn't try the sourdough, which is their specialty, but my friend said it had a great crumb and was nice and soft inside. The shop is fairly modest, so don't come here with a group expecting to find seating. There were two small tables with 2 chairs each and 3 stools against the wall when I came. Most people were grab and go, so it wasn't a big deal! Service was friendly and very helpful! We even chatted with one of the owners briefly who gladly responded to our many questions. I will definitely return! What a great shop and addition to the quality bread stores in the region.

If you're a fan of carbs, head to historic Riverdale Park, three miles from D.C. in Maryland, and find the yellow storefront. The space is small, but the pastries will leave a giant hole in your heart that only Manifest Bakery can fill. Here's why you should go. 1) Food: Their food is so popular that they make it throughout the day. No matter when you go, your order should be warm, fresh out of the oven. They open at 8 a.m. Tuesday through Sunday and there was a line on their opening day. They make two kinds of sourdough bread, baguettes, focaccia, apple crumble, chocolate babka, chocolate chip walnut cookies, pistachio and corn financiers, and a few other baked goods. When I went, they were in process of replenishing everything so I got what was behind the counter- the financiers. Truly, the flavors of pistachio and corn worked perfectly together. I bought one and then came back for two more. 2) Coffee: They have a full coffee menu that includes a latte, cortado, macchiato, espresso, americano, cappuccino, drip coffee, and cold brew. They brew Ceremony Coffee. My latte was creamy and adding a few packets of sugar made it pop for my sweet tooth. They also sell teas and lemonade. 3) Space: It's on a block of other local businesses and in a small yellow building. There are a few small tables and seats, but most get their order to go. There's a public restroom in the very back. The entire space is beautifully-designed, letting lots of natural light in. 4) Story: It's owned by a husband-wife team who baked out of their house during the pandemic, cultivating a loyal following. Now they have a storefront. If they are not too busy, talk to them. They both are very kind. 5) Neighborhood: It's in historic Riverdale Park across the railroad tracks from award-winning BBQ spot 2Fifty Texas BBQ. Also nearby is a local market, tapas spot, and other beloved neighborhood haunts.

Cute bakery in Riverdale is a hit already. Long lines, loyal customers patiently waiting in line already. They are selling out of everything. Have repeat customers in line raving about the food and attesting to this place. That was a good sign considering they just opened. Come early this is a hit for the local Riverdale community. Only had cookies and muffins when we came but we will back. Love this community.

Food: I got the squash everything bialy with cream cheese, shaken lemonade, and the ham sandwich - everything banged. It looks burnt but it's not. Service: Great - everyone was so nice, they answered my questions kindly, and didn't rush me Ambiance: It is SUPER small inside - 2 tables and a small counter. We got lucky and snagged a table so it was great. Can see how the space would be an issue on the weekends. Return: Yes for sure when I'm back in town!

I am lucky that I don't live in Riverdale Park or I would be 100% carbs. This place is AMAZING. We sampled their cookies and coffee, but you can tell from the smell and look of the other baked goods that you really can't go wrong. The chocolate chip walnut cookies are HUGE and delicious. The staff were really sweet and helpful as we tried to pick out what we wanted. I also just love all the little details, even with the minimalist decor, like the Lego mini fig holding a farmers market sign. I'd definitely come back!

A very cozy coffee and bread shop that has a few other offerings available. If you are in the Hyattsville, MD, I want to encourage you to make this shop part of your morning. I had the softest and tasteful onion bagel and a latte. The staff is friendly and the location is also very central to the Marc train for those who commute. You can grab your coffee before you hip on. Seating is very limited, so make plans to grab your goods and go or to be very friendly with those who are coming in since the space isn't large. While small, there is something about the shop that feels perfect. The coffee is delicious and the bread is WORTH IT.

Tiny bakery with a small menu but their bread is delicious. They milk their own flour and bake on premises. Some of their daily special food items (sandwiches or stuffed breads) are not the tastiest and overpriced, but the bread element is really good. Great baguettes. My one complaint is that I wish they had a loaf slicer because their crust is crunchy and thick!

If it was possible, I would rate this place much much higher than 5. The only downside is that this place isn't larger so that more people could enjoy it. Settled in a neighborhood in Hyattsville, this quant bakery has everything from fresh bread, sweet and savory pastries, brewed coffee, lattes, soft drinks, and cocktails. To top it off, everything is done wonderfully. Everyone was cheerful and friendly. I cannot emphasize what a gem this bakery is.

Friend lives nearby and introduced me to Manifest Bakery. Cookies, bread, coffee . . . topnotch. What really sent me over to the next level was ordering, a Scandinavian apricot rye bread, an apple cherry, Galette, and ice cream that I took to a Thanksgiving potluck. Unreal! Especially warmed up with that amazing ice cream on top. Can't wait to see what they come up with for Christmas.

We visited Thursday around 3pm. The store was buzzing with locals who seem to love this place. No one was eating sandwiches tho, only ordering pizza to go. I should have followed suit. My experience was terrible. I came for two things...a sandwich and croissants. Both were terrible. Horrible sandwich, perhaps the worst I've ever had! 0/10 I had exactly one bite that was so tough it took me a long time to chew and get down. I considered spitting it out. Biting off that one bite was animalistic, the bread was so hard. I love a chewy bread but this was old and inedible. It taste as if it was premade 8 hours ago and sat out alllll day. I got the melted Brie & peach jam baguette I expected a fresh made sandwich w crispy baguette on outside and soft chewy inside. I expected it freshly toasted w the melted Brie but NOPE the whole sandwich was cold and stale. All I could taste was the very cold peach jam which was more like baby food mush. The brief was melted but much earlier that day! There's wasn't a hint of warmth in my sandwich Truly worst sandwich I've ever had the displeasure of tasting. It was for sure made hours ago. There were stacks of sandwiches sitting by the register...I wonder if that where my sandwich came from and if so that adds to my disgust as everyone breathes all over those sandwiches all day I'm shocked a bakery would do that knowing how hard baguettes get once sliced into and left for hours. My husband who has very tough teeth and will scarf down anything after working out ate only the inside of his Turkey bacon baguette and said the insides were delicious but also couldn't believe how bad the bread was. The choc walnut cookie and the pistachio cookie were fabulous! 10/10. The hibiscus ice tea was wonderful. I loved how they served it in glassware with plenty of ice. The croissant was extremely burnt. The thing was dry inside and and also stale. I left very unsatisfied and disappointed with only a belly full of sweets and regrets for driving an hour for what seemed like an awesome place to get FRESH sandwiches. You couldn't pay me to come back. They served me old food. Zero integrity.

Tucked in a niche in historic Riverdale Park, Maryland, not far from the railroad tracks, is the sourdough bread lovers' equivalent of the Pacific: Manifest Bread, a bakery whose bread loaves, bialys, focaccias, and cookies resonate with the smells of Zihuatenao (pronounced "say wah ten ay oh), enrapturing the eight to ten customers who have timed their errands perfectly enough to start their culinary journeys inside its tiny dining and carry out area. But do not fear. Unlike Andy Dufresne, who required the aid of time, pressure, and a giant Rita Hayworth poster, all you need is a means of transportation, a method of currency, and a little bit of patience (the lines go quickly, after all), and each trip of yours will prove its own rewards.

This place is AMAZING. A great assortment of different types of pastries, sandwiches, and breads. I love Scandinavian treats and their cardamom buns are the best I have had outside of Sweden and Denmark. Tasty coffee, too. Nice, helpful staff. And SUPER healthy.

Went in to satisfy my sweet tooth and ordered this chocolate chip walnut cookie. It did the trick hands down! So soft, warm, and yummy. Best cookie I've had in a while. Even better than Crumble and Insomnia!

We love it here. The onion bialy with salmon cream cheese, chocolate chip cookie, olive loaf, every flaky pastry they make, ah and ***the focaccia*** are ridiculously delicious. ALSO they make a mean cortado. They've always been busy when we go (for good reason). The team behind the register filling orders are super friendly and keep you updated on order status. Highly recommend.

Super cute inside but sold out of everything at 11am. I had a vanilla oak milk latte and I'm pretty sure there was no vanilla in it. Definitely going to come back in a month or so after they have the kinks worked out

Update: Manifest also has the best bread pudding I've ever had, and their corny grits loaf is so good that I think about it all the time-- super crusty, super moist, with little bits of polenta crunch throughout. A gem. This place is a gem. Yesterday I went in for bread at opening time. My loaf of choice wasn't out yet, but they had pastries out...and what was I to do? I made the mistake of tasting their pear crumble roll in the parking lot, and then promptly consumed the rest in my car. Not too sweet, fresh and homemade tasting. Really different in an exciting way-- I've never had a pastry like it. I can't stop thinking about it and wondering what other creative wonders await. I can tell already: this place is a gem.

I want to love this place but... I've been several times and each time I get the same result. Poor service and treated less than. so let me explain. I wait in line the person in front of me orders sandwich and cookie... the person at the register carefully puts sandwich and cookie in bag with handle and carefully hands it to the customer. I order the same thing... no bag, no offer of bag and when I ask for a bag the cashier rolls her eyes and begrudgingly throws my food in a plain brown bag. Cashier also treats the woman behind me the same way. $16.00 for a sandwich $4.00 for a cookie - I expect quality service - on another note the sandwich are delicious but the lack of customer service keeps me from going back.

First visit had the turkey bacon sandwich. Was excellent except that the bread was too charred on outside making it difficult to bite into. Noticed that most bread items out had the charred look. Delicious cardamon bun/sweet roll. Second visit tried the gaspatcho soup, also excellent. So glad to see a place like this in the Hyattsville area and will be back. Just hoping the bread is not so well done next time.

Bialys and babka for the win! Fab little (tiny!) town joint and it's been a long wait for a bakery in town center! Get there early as they sell out of items quickly. Excited to see them settle in and get into a groove. Definitely already a budding local hub!

Best bakery in the DC area. I live in Alexandria, surrounded by bakeries serving stale bread and pastries so this place was a breath of fresh air. The sourdough is world class, cookies are top notch, lemonade was fresh. Everything is craft, high level of attention to detail from the menu boards to how the sandwiches are hand wrapped in two types of parchment paper. Rick the owner is working 16+ hour days to deliver this product and after years of working in the industry, is finally getting his flowers from the media and community.

Great quality breads and desserts with house milled flours, using some locally sourced ingredients, plus muffuletta and jambon beurre. They also offer wine and beers, soon to offer charcuterie, local coffee and so much more in a danish modern retail area that feels much cooler than many other places in the area. It's a must stop if you've never tried it before. Beware the retail store is very small but also very cozy.

Great spot for bakery and bread. I particularly like the banana bran muffins and ginger molasses cookies. My chocolate-loving kid loves the babka. The fresh loaves of bread are also really good.

This is a wonderful bakery! I'm so grateful to have this spot close to home. My personal favorites are the focaccia, jambon-buerre, and sesame loaf, but everything I've tried has been absolutely delicious. My kids love to grab a chocolate chip cookie and lemonade. Check them out!
