Idk what happened to my first review, but I remember how I started it.
Mark's Kitchen isn't actually Mark's Kitchen. It's been around since I was a kid and Mark is long gone. We got introduced to Mark's over 9 years ago when we used to spend more time on this side of town. We became fairly regular patrons at the time for its convenience, but thats all it was at the time. A convenient place to eat with a variety of options. In fact I'll never forget, Helen said "we can make you whatever you want." Even then she was larger than life, but with the invent of TikTok, she's blown up. It's been a bit since we've been back. So long in fact, she did not remember my wife. She looked at me and said, "you I remember, but I don't remember you," referring to my wife. That's because we mostly did 'to-go' and did the leg work. Sad because my wife was excited to come back and hoping Helen remembered her. And she didn't....
What I remembered about Mark's was that you got a lot of food, so we only ordered 2 plates and a burger. I really didn't want a noodle plate because I recalled that the noodles were plain back in the day. But the crispy noodles were calling to me. My wife was looking at the combos and really wanted the one with pork sweet and sour. We go up and after initial greetings, Helen recommends my wife change her order. Swap out the chicken chow mein for Bomb A** S***. She agrees begrudgingly because she really wanted the pork sweet and sour, and even began to regret that she got talked into changing her order. Well the food comes and she is relieved to find that the pork sweet and sour is still there. We all dig in and it's better than we remember. Literally. I'm a foodie so I'm not going to act like it's the best thing I've ever eaten like I've seen on TikTok, but it's better than it was back in the day. Change is good. Not always but in this case, it's worked wonders. Helen has become a big deal and people come from far and wide to try their food and get cussed at by her. Mostly for the second reason. Now, would I travel from out of Fresno just to try the food? No. But if I was passing through and I wanted something Asian based, sure. The plates are mostly rice and noodle based, but they aren't authentic Chinese, Vietnamese, Thai, Laotian, Hmong, etc. Remember that. Think of it as somewhere between Panda and authentic.
I was happy we came back. I've been looking forward to coming back after I've seen how Mark's (Helen really) has blown up. I guess this makes me an OG.
