I put this oven through the ringer and here’s what I can say:
I am a wood fired caterer and I wanted to wait until I had an entire season working with my Marra Forni 140cm oven before writing my review. Through the pandemic, with smaller parties to cater, my 110 cm pizza oven worked great for me. As the parties grew larger, I quickly grew out of the oven I had and needed more space. Cue Marra Forni.
I have cooked off seven, 12” pizzas with plenty of room for the fire. Probably could get 8 in there, although I wouldn’t recommend it. If I don’t have a team with me, by the time I get my 6th pie in, I have to start turning or they start burning. I can fit five full pans at a time or four pans and cook-off a pizza.
The heat retention is remarkable too. Once I get her dialed in 1.5-2hrs; 800-1000F, you only need a small piece of beech for some top flare. I am really happy with the floor. It is solid and smooth. The trailer itself is heavy duty. So much space underneath. I opted not to get the gas attachment. If you do, there will be some gas cables and a propane tank under there to contend with. My events are only wood fired so no need. As far as the road worthiness of the trailer goes, the four tires make a big difference. It handles bumps of the road way better then my last oven which had only two wheels. I also couldn’t be happier with the design. Is every tile perfectly lined up? No, but then again it is hand made so every imperfection is what reminds you that this oven was not mass produced in a factory. Love how they add a Marra etched brick in the roof and floor of the oven. Bottom line: I would highly recommend a Marra Forni trailered oven for the mobile pizza/wood fired cater on the go.
