How Santa Barbara Sea Urchin Is Processed Commercially | Eater

"Specializing in sea urchin (uni), this marine-products operation brings in uni from Santa Barbara Island and San Clemente Island and offers a behind-the-scenes look at the harvesting and handling process. Team member Mark Nonoyama demonstrates the oddly therapeutic cracking of sea urchins and the careful grading of each roe by color, firmness, and dryness. The narrator, who receives uni in small, very expensive wooden trays, emphasizes uni’s intense umami—often called “butter of the sea”—and notes that before it became common on restaurant menus it was most often served on sushi with stock flown in from Santa Barbara and Hokkaido. The visit highlights the craft, meticulous quality control, and reverence that help explain uni’s prized status." - Eater Video

My first time ordering to nyc and I didn’t know what to expect but wow the uni is top notch ! Came in cold and fresh so excited that I found my new spot for Santa Barbara uni beyond tasty I almost finished the box in one sitting haha!! Didn’t try the caviar yet but loved the seaweed ! Made my own hand rolls!

Google
The world’s top Santa Barbara Uni producer. They supply the best restaurants in the US and Japan, so you already know what you’re getting. The saltwater Uni boxes are beyond incredible, they also sell pasta kits and A5 Wagyu which are 10/10. Can’t recommend enough.

Google
Great selection of both fresh uni (sea urchins) and 'uni shutou' (uni marinated in kelp-base soy sauce), good prices and professional reliable packaging (we got them shipped to the East Coast). If you are buying Maruhide uni online, make sure you ask the seller to drop the requirement of signature upon delivery (unless someone is always present at your residence).

As we are two uni lovers, a pickup at the factory has become our first stop in LA. The staff was so kind that they waited for us till slightly outside the normal pickup range (we were stuck in the traffic), even when we only come for a small tray. The uni itself is the freshest I’ve had! The taste is pleasant and sweet - we finished all in 2 minutes in front of the Iowa without any condiment.

I have been ordering fresh uni from Maruhide for some time, and I have never been disappointed. They are at the mercy of elements and natural factors like spawning, which impact availability. However, when they do have it, it is far superior to anything I can get at my local Japanese markets. Recently, I have noticed they are developing new products and offering other gourmet Japanese foods like A5 Japanese wagyu, uni pasta kits, caviar, and soba kits. I have tried most of these products and have been extremely satisfied, especially with the soba! In my opinion, it truly rivals the fresh soba I get at restaurants that make their noodles on-premise. It's much better than any dried brands I've tried. I highly recommend it! I have always been impressed with the quality of their uni, and now their other products are equally as good. Maruhide has become my go-to for gourmet Japanese foods. One more thing: delivery. It is always well packed and arrives overnight. I live locally to the processing plant so I could pick it up, but why bother when the packaging and delivery are so excellent?

Google
I've ordered from them in the past and I still currently order from them. The quality is always great and the value is there especially when you can get your hands on the premium box (and you need the larger amount). Even if you can't, the smaller quantities are still a few dollars cheaper than most of the other vendors in the city. There's even a frozen option at a discount if you are going to be cooking or processing the uni and it's still pretty solid for the price. Be aware that if you order for pick-up, you need to follow their time guidelines and they are only open weekdays and close at noon so plan accordingly. Stock is not always available so you'll have to check their website and/or their Instagram. If you can put up with all of that you'll be rewarded with an exceptional, premium product for a relatively good price.

Google
Wish I could give more stars. Totally the freshest uni I’ve ever had. The staff there were kind and nice.

Google
Amazing company with the freshest uni! Customer service is top quality if there are any issues with your order. Thank you Ryan!! Appreciate the chat & learning more about the industry.

Yelp
This is the place to get high grade uni. Orders are placed online and are available for pick up during the schedule specified on their website. The location is at their packing facility so you can just drive right in and park. The premium uni tin is worth the splurge; you can definitely taste the difference. They're friendly and carefully pack orders. If you meet the purchase minimum they will even pack items in a cooler bag with ice pack!

Yelp
Uni A+ ensui - best product, can't beat the taste in the salt water. Overnight shipping is always well packed and cold. 9 out of 10 times uni is very clean, but that rare time less clean with some sand.

Yelp
This was my first time buying uni from Maruhide and definitely not the last. The uni was the firmest and sweetest and most succulent pieces of uni I have ever had in my life. There was no saltiness, just sweet sweet uni! Tricia was great to deal with while arranging this order and picking it up locally. She even bagged it in a cooler and provided ice (at least I think that was Tricia)! I will definitely be back to get more! Recommend them for anyone that likes uni! You will not be disappointed!

Yelp
Helllllo, uni! I ordered a bunch of goodies from Maruhide Marine Products with much skepticism as the destination will be Honolulu. I had a vision of FedEx tossing the box around in their warehouse and the uni overheating in the FedEx delivery truck. I couldn't be more wrong as this was clearly not their first rodeo. The products came perfectly intact, it was superbly packed with preciseness in a Styrofoam box. The cold pack was wrapped to prevent sweat/water spots on uni shutou and sea urchin soy sauce outer packaging. My first taste of their super-premium uni in a metal tray blew me out of the water. The uni isn't tiny like Japan's uni, the flavor was of the highest quality and fresh with a tiny hint of saltwater. Delicious! We will purchase uni from Maruhide Marine Products again. Arigato gozaimasu, Kawamura-san!

Yelp
Uni is one of my favorite foods and it's becoming harder and harder to find good uni. Even some sushi restaurants seem to serving some sub-par stuff lately (ahem, Sushi Tsujita on Sawtelle). Anywhooooo, I drove 45 minutes (one way) for this place but it was totally with it and I will be making regular visits. The uni in the metal tin was sweet and creamy. The uni in the salt water package wasn't bad either but I would definitely use that for pasta or "al bap" (a korean fish roe rice dish) because it was def more briny. P.s. I like briny uni. Ordering is a breeze. I placed an order for pick up on a Wednesday. Tricia at Maruhide replied to me on Thursday morning. By Friday morning, I was walking to my car with some lovely uni packed inside of an awesome insulated bag that said "LA uni lover" on the outside. If you do decide to pick up in person, you enter thru the door marked "office" and the pick up window was between 9 am-3 pm (at least on the Friday that I went). Thank you Maruhide!! I miss your restaurant but I'm so glad you sell your beautiful uni to the general public.

Yelp
With Valentine's day looming, aphrodisiac marketing is ramping up. Some articles state sea urchin has the lust magic; as if folks need that help right now. Pandemic singles blast their thirsts into the verse : a Valentine's vaccination can be a small consolation ;) I can confirm that uni can get you married - my jaw dropped when the maid of honor speech mentioned the story. Uni-flation is real - are there futures for this? $5 per live wasn't so long ago, and now it's pushing ~$20. Might go higher than a Gamestop share soon. Even Sushi Gen's uni dinner went above $80 and is no longer available. Tears. So I wanted to amp up Providence's uni pasta kit with better-than what Asian grocery stores carry. Luckily SoCal folks have a purveyor selling to the retail public. Peep this glorious Eater video to see their operation and info on the product lineup: https://www.youtube.com/watch?v=REhLHpdLCE0 Just order for pickup via https://maruhide.us/pickup-request/ In my case, I needed to do some back and forth emailing due to supply timing. And I just paid in person. Ofc you must wear a mask to enter their building to complete the purchase and pickup. A small cold pack was given to me with the purchase, but I'd recommend bringing an insulated container for the trip home. Alum processed uni stays firmer longer; while natural can melt pretty quickly. So their untainted packed in seawater version is an intriguing buy. I thought the premium tray was mild in flavor; but a lot more enjoyable than what you find in grocery stores. Doesn't quite beat the best from Santa Barbara divers catches though (see my uni road trip collection: https://www.yelp.com/collection/_y3dX9YZ-M3DWp_3OAgYDg)

Yelp
This has to be one of the coolest experiences I've ever had from being able to open up the uni to learning how they're processed for premium and for other grades as well. The process is very time-consuming and for every 1,000 lbs they get about 5 to 10 trays of the premium stuff which is really crazy. I was able to try the Uni right out of the shell and it was fantastic and then I was able to try the finished product and I was absolutely blown away by the flavors.

Yelp
I love getting fresh Uni here when it's available. Can't tell you how stoked I was when I found out how close it is to my home. Can't wait to go back and pick through some fresh live Uni
google avatar

Christine Y.

Yelp
Uni here super fresh! They only carry Santa Barbara uni, but oh is it fresh and juicy. You place a reservation request online; if they have it in stock they will then email back a confirmation and you arrange a pick up time. I personally received a response within a few hours. I ordered their five pocket tray uni, and oh my these were some of the biggest, juiciest uni I've ever had. Also grabbed a jar of their famous uni shutou since I was already there; haven't cracked that open yet but am quite excited to try soon. They also package every order nicely in a zippered insulated bag and ice pack. They do ship, but as I live 20 minutes away I just dropped by. Only open M-F and not all day so plan accordingly.

Yelp
It was a good source for uni. Unfortunately service had gone down. I called to place my order for the holidays and was told that they updated in system and that I needed to order online. They can't even guarantee the product availability. I told them that I've ordered for many many years. But they didn't care. I'm going to have to look elsewhere this year and in the future.

Yelp
Ordering from west to east coast 1000's of dollars in uni. Fresh or shotou I've had everything they have to offer. I like the large regular jars and the yuzo chili. Select at least 4 jars to make the shipping worth it. You have to order before 12 eastern time to get next day delivery. Original Flavor is excellent, slightly salty, I eat it with a few drops of yuzo sauce, just the other types dont do it for me. If you can catch the 250 tray for $100 get it.

Yelp
Super fresh uni! Amazing experience. I got the premium uni box for $100 (totally worth it!!) Also, I just had to try the uni shutou to see what all the hype was about. Best decision everrr It's so good! I got the large size, melty and ruibe and was pleasantly surprised by the delish taste and fresh quality. It's super creamy and melts in your mouth. I was so excited to eat this all myself, but I did end up sharing... I'll be back soon to stock up and get my fix.

Yelp
I've ordered from Maruhide before, the second time I ordered from them I realized how bad their customer service really was. Maruhide uses Fedex for shipping and they don't understand how Fedex works. My order was suppose to be delivered overnight, however, due to the snow in Seattle, Fedex did not make the package available for delivery or pickup one week later. It just sat in the shipping station (Even UPS delivered!). I requested for pickup on Wednesday and I was suppose to have received the request within 24 hours to pick up on Thursday but that was ignored. New Years Day came on Friday and Fedex is off work so the package sat over the weekend. By Monday Fedex made the package available and I went to the station to pick it up. The ice packed with the package had melted, and I don't know for how long. Given that it is seafood, I cannot take the chance to consume it. I've requested a refund from Maruhide and they said they will not be making any refund and asked me to file a claim as a recipient and then let them know that I've filed a claim so that they can file a claim as a shipper. I called Fedex regarding the status of my claim. Fedex closed my claim within a day because Fedex reviewed this case and said the claim had to be filed by the shipper. Essentially Maruhide asked me to go through the inconvenience to do something that was deemed useless. I have to wait for their claim to resolve before Maruhide will refund me in this case. God knows how long that will take. And if the claim somehow was denied, I will not be getting my refund back. On top of that, Maruhide insisted that I was at fault for not picking up the package on time. I was charged $42 for shipping and Maruhide used Fedex and refuse to be responsible for a late delivery. I've requested them to provide the claim number so I can track the status of that claim and they do not respond. This is one of the worst customer service I have experienced. I will order sea urchins in the future elsewhere.

Yelp
This review is for both this location and Uni Club in Torrance. (Both under same management) Uni Club is temporarily closed as a restaurant till August 2017, but they sell take out fresh Uni and other products. I wanted to buy their famous Uni Shutou, so gave them a call to ask their business hours. The female staff answered the phone was very friendly and informative. (We spoke in Japanese:) I thought Uni Club in Torrance was closed but she told me I can still buy their products at Torrance location too! The staff at Uni Club were all welcoming and super friendly. I bought 2 Uni Shutou (original and with squid) and Ruibe (Frozen Uni). They put my order in the cooler bag with dry ice in it. Everything stayed frozen until I got home. Prices are very reasonable too! I love Uni Shutou! Perfect with beer, sake or wine! You can also cook uni dishes with it, like Uni cream pasta, Uni don...etc:) Ruibe was good too and unique. It's rich and melts in your mouth. I'll definitely come back for more! A+++++

Yelp
Received my first order! The uni packed in salt water is amazing! The uni shutou original is delicious! Will definitely order again!

Yelp
This is the best. Make sure they have them in stock. I sent email, they're kind enough let me know when it is coming.

Yelp
I'm so glad that I found you guys! This is the best cake for my husband (I gave him the tray of uni instead of actual cake) Thank you for the best quality of uni. We loved it.

Yogi K.

Yelp
If ur a true uni lover, u MUST get the premium uni! It is truly premium quality better than any uni I've tried . Tricia there was friendly and gave me a cooler bag so I can drive it to my moms to share. I've already placed a reorder for this week. You must get on that wait list!!! It's worth every penny.

Doreen C.

Yelp
Went to pick up my order of "Fresh Sea Urchin 5 Pocket Tray". Couldn't wait to try it that night for dinner, it was good!! Will definitely try some of their other products!

Yelp
Their uní is so fresh! Staffs are so polite and professional. Their services are great. I requested for pick up and they even give us the cooler bag with ice as packaging for the uni.
google avatar

Ron T.

Yelp
Uni! Really good uni! I recommend you order ahead, if you want to pick up. I've gone and they were sold out for the day. The website is a little intimidating you need to order boxes of uni. If you are reading this you are a big fan of uni and want to eat lots so this is not a problem. If you are an uni addict, it is worth the effort!

Yelp
Discovered this place online when another Uni Supplier was constantly out of stock. Got my first order shipped a few weeks ago. I was blown away by the freshness and quality. They ship overnight anywhere in the US for 35.00. Uni is packed well in a cooler with ice packs, which were still frozen when the package arrived on the East Coast. You really haven't had great Uni until you've had fresh West Coast Uni. Prices are reasonable considering what you pay at a Sushi Restaurant for a lesser quality product. While the Uni Trays are delicious, you have to try the Uni packed in Salt Water. It is indescribably delicious. We just eat it as is. The tray Uni goes in a hollowed out half lemon with a few drops of lemon juice, a few drops of Soy Sauce, and topped with a Quail Egg Yolk. The other source (Catalina Offshore Products) did ship me one order.... It didn't come close to the freshness and flavor of Maruhide. Just got my second shipment in today. Four metal boxes and four packed in Salt Water.... Gave them to my kids for Valentines Day. They never make it to day two!

Yelp
One of my friends introduced me to this place and for someone who absolutely enjoys uni, this place is perfect. I've ordered directly from the warehouse twice so far; now I've never had their restaurant in Torrance, but the premium uni from their Long Beach warehouse is super delicious. Whenever I'm in the area, I try to pick a box up of the premium uni. The wooden box of premium uni runs for $68 and is made up of many proportionally prepared pieces of creamy, buttery Santa Barbara uni.. Last time I've called same day and they were nice and accommodating, but this time around I found out they usually prepare all orders in the morning, so I suggest calling in the day before. Always call as I recall when I went one time on a weekend to be truly disappointed that they were closed. Also of note, they close at 4:30pm. It's neatly packaged in a cooler bag with cold gel packs with a small added goodie. They say, that the insulation will allow the uni to stay fresh until the next day 10:30am, when we picked up at around 3pm. Nevertheless, that wasn't necessary. Brought it back to a group...it was gone.

Yelp
I love love love UNI and one of my favorite restaurants to eat it was at Maruhide Uni Club, so I was very sad when closed for good. But after doing some research, I found out that you can buy uni from Maruhide Marine Products in Long Beach! If you choose to pick it up, you must order at least a day in advance. Of course, the prices aren't cheap but I think worth it for good uni.

Yelp
I'm in Brooklyn. I get their products delivered. Gladly so. The overnight shipping charges are modest and the uni diversity delicious. Granted, it's San Diego/southern Cali uni, which tends to be mellower and milder than its Bay of Fundy counterpart, and it certainly doesn't give you the five second nitrous like high on your palate that great sushi joints like Taro (Brooklyn) and Yasuda (Manhattan) will give you when they have their A-Game Uni going on, but the uni, plain and flavored, is quite a few notches above "good enough" so it's worth waiting for FedEx Overnight. My two faves are the Ika Zuke and the salmon roe mix. The Ika Zuke is a blend of low temp cooked seasoned uni and raw squid, which really tastes good on its own and can be eaten like pasta, while the salmon roe tastes like the uni sushi you get in a good restaurant. The plain, raw uni in saltwater is good, but IMO, probably loses some flavor during the packaging process. It's not a slight on Maruhide, it's more like Nature reacting to its environment. If you're looking for some kick, then get the uni packed in EVOO. The olive oil starts burning the back of your throat a few seconds after you've consumed the uni. If there are any old-school Jews, Russian/CIS or folks who love smoked cod livers, any Maruhide flavor uni is a great ingredient to mix with the cod livers. Get some Saltines to lay it on top of, and you're in great shape. Additional toppings like horseradish is up to you. Maruhide is good stuff. My only complaint is there never seems to be enough. Very addictive seafood.

Yelp
This is one of the freshest uni I have ever had! I've had the live before but for some reason this is sweeter and tastier! Love this place and will be a regular from here on out. It is a wholesaler and only sales uni per box.

Penny P.

Yelp
Uni!!! The box of uni is very beautiful, fresh and so tasty. My husband orders boxes of uni for Mother's Day every year-. I believe many sushi restaurants order uni box from this place for their sushi. I can't wait for Mother's Day every year!

Yelp
Incredible uni at an incredible price. Plus, wonderful customer service. Although their store in Gardena is not yet open, they met me there so that I could pick up my uni without leaving work early. (Their Long Beach location closes at 4:30 p.m.) Rolled up with a little shiso, avocado, cucumber and ikura or eaten plain with a touch of wasabi, this simply cannot be beat. Tummy, make room for my new addiction.

Kimi L.

Yelp
Just about the best place ever to get fresh uni! Truly a unique hidden gem. You can come here to see how it all gets prepped and packaged for deliveries to restaurants and you can even purchase premium uni for yourself to indulge however you please. Uni pasta! Uni bowl? Uni rolls? All sounds damn wonderful.
