Palo Alto finally has what has been missing. A destination restaurant that is world class. Maum's food, atmosphere, and hospitality is a full of heart that its name in Korean connotes. The menu is lovingly crafted by chefs Michael and Meichih Kim who between them got their formidable chops at Per Se, Benu, RN74, SPQR, Namu Gaji, and Craft. A Michelin star in Maum's first year attests to their deft touch. The course menu is an homage to Korean and Japanese influences that is highly technical yet comfort food at the same time. Yes, you'll Korean BBQ that is prepared in the kitchen and brought to the table but with a way more sophisticated sauce that makes you stop mid bite to savor. Yes, there'll be fried rice but with much more depth than you've had. But you might get uni with white custard too. And yes, Choco Pie. I recently had a vegetarian course there that was equally satisfying. Grilled leeks that you didn't want to end and a portobello mushroom that needn't be smothered in sauce to enjoy. Yes, it's a special occasion destination. Yes, the decor is sublime. Yes, the food is exquisite. But mostly go for the comfort of food that is well made and served with grace.
