Our perfect order is a spiced bun—crunchy sugar on top, good spicing, soft, spongy centre—and a Pump Street hot chocolate with a huge, blowtorched marshmallow. "Why We Rate It: For the XXL blowtorched marshmallow If Goldilocks’ thing had been hot chocolate instead of porridge, she’d have declared the one at Maya’s Bakehouse “just right”. The small Tulse Hill bakery uses 72% Pump Street chocolate and their own sugar-salt blend. But the best bit is the massive marshmallow which is blowtorched until it’s a toasty, bubbling thing of beauty, as you look on, probably clapping and weeping. Maybe that’s just us. But if we happened to choose a Guinness cake, we’d know it was going to be a great day. Everything that Maya’s makes with chocolate has extra care—from their excellent 72% Pump Street hot chocolate to their gooey cookies, and the malty, still-moist (almost fudgy) Guinness cake is no exception. Come before 9am and you can take your time choosing between malty Guinness cakes or well-spiced carrot cakes, a jalapeño and cheddar loaf or sticky cinnamon buns. As you do some deep existential pondering, bakers deliver more trays from the open kitchen that will complicate your decision. Post-9am, the windows steam up and the morning rush slows. There's limited counter seating, but it's more for leaning and chatting or rearranging an overflowing bag of treats, so most people take their haul home. Just don’t leave without getting a hot chocolate.
