We had a great experience at Meat Project in Centreville. Our server Jen was amazing. She was friendly, attentive, and very helpful. She explained everything clearly and made sure we were taken care of the entire time. The food was delicious. My favorite was the beef bulgogi. It was perfectly marinated and full of flavor. The corn cheese was also a hit. It was creamy, cheesy, and seriously addicting. The atmosphere was fun and relaxed, and the service made it even better. I’ll definitely be coming back. Highly recommend if you’re in the area and want great Korean BBQ with great service.

I didn’t realize that they cook the meat for you instead of you having to do it yourself, which isn’t something I’ve seen very often at KBBQ places. They had nice cuts of meat, free dessert, great sides (shout out to the steamed egg and cheese corn).

Extremely Disappointing Experience at Meat Project – Centreville, VA We recently chose Meat Project in Centreville to celebrate a birthday with a group of 25 people. Unfortunately, what was supposed to be a special and joyful evening turned into a deeply disappointing experience due to poor service, safety issues, and unprofessional conduct. Upon arrival, the manager measured my twin nephews (age 3) and confirmed they were exactly 3 feet tall — under the restaurant's height threshold for paying customers. We appreciated the clarity and proceeded to our two reserved tables. While the food was good, several major concerns quickly became apparent: Service was extremely slow The floor was dangerously slippery, posing a safety hazard for both children and adults Right next to our table was a stack of dirty dishes and a pot filled with what appeared to be dirty oil or water, giving off an unpleasant smell throughout the meal We tried to remain positive for the sake of the celebration. However, after dinner — just as we were about to bring out the cake (which we had confirmed with Min, the manager, was okay to bring) — the owner approached us and insisted on re-measuring the twins, this time at a measuring tape on the wall. She claimed they were “a bit over 3 feet” and said we now needed to pay $20 per child. This was after we had already received confirmation from the manager at the beginning of the evening that they did not need to pay. It wasn’t about the $40. It was about the lack of professionalism and the poor timing — addressing this after the meal, after the measurement had already been settled, and in front of a large party. When I calmly voiced my concerns, the owner responded by yelling at her staff in front of everyone. I respectfully told her this was inappropriate, but she showed little concern. To top it off, the cake we brought was not refrigerated properly despite our prior request — it was warm and partially melted when returned to us. Also, the carpet throughout the restaurant was filthy, worn, and hazardous — a detail that truly detracted from the overall environment. Despite the unprofessional conduct, my sister paid the full bill — over $1,500 — and only then did the owner offer a last-minute “compromise” by charging us for just one of the two children and knocking off $20. This experience left a sour taste. Not because of the food, or even the money, but because of how the situation was handled — particularly by ownership. A special celebration was soured by poor judgment and a complete disregard for the guest experience. I sincerely hope the management reconsiders how they treat customers and staff in the future. - I got a very polite and professional answer to my review, but just to clarify, this reply doesn't reflect the actual interaction I had with the owner in person, which was quite different.

Meat project has excellent quality meat and excellent service. There’s quite a few meat choices as well. Sides are automatically included and 4 sauces too. If you’re gluten free the staff provides sesame oil with salt for a sauce. Before finishing one serving of meat the servers are already grabbing your order for the next round so there’s no waiting, except for when the meat is cooking of course. My photo includes brisket, the 4 sauces, and some of the sides. Sides can be ordered infinitely and they’re replaced by servers once they’re finished. I definitely recommend meat project!

Our server Eli was very attentive for our party of about 20. We always come here for our large parties and make a reservation in advance. The selection for all you can eat is great, includes vegetarian sides, and the food comes out fast. Having so many people is difficult for staff but Eli did an amazing job keeping track of our orders and needs. I would recommend a digital system for customers to enter their orders though, I think that would help staff keep track as well. I liked the included dessert popsicles but they switched it out with Yakult - it would be great to have the popsicles again!!

Family wanted to celebrate a Birthday and we have never been here. Easy parking, nice location (little weird on access), but easy enough. Set-up inside was nice, it has a lot of seating areas, seemed like plenty of Staff, an despite being busy we were seated quickly. Our Waiter was awesome, got us started with drinks and table was already laid out with utensils and dipping sauces. The menu is accessed through a QR Code so us older folks struggled at first, but figured it out. Our Cousin handled the ordering, she was impressed with how quickly the meat arrived & the amount. She ordered a lot to start because other places she said brings out small portions to avoid waste. There is a sign that states "$10 charge per person" for too much waste. Which was cool with us, I agree, punish those that mismanaged appetite with food requested- LOL. Bring on the Meats Loved the Meats, the Sauces, Salads, everything was delicious. They exchanged out the grills as needed and kept everything flowing. The manager/boss (not sure) brought out a desert with a candle along with Happy Birthday music which was really nice. Made the dinner extra special. On your way out you can grab some ice-cream if you have any room left. There is also a nice little path around a pond behind the restaurant to walk off some of excess meat you just devoured. Definitely on our to be revisited spots !!! Only complaint is that the men's restroom needs some work, it has two of everything, but only one of each works. Way too many meat eating men to have a shortage of stalls- LOL

Still, we were trying to enjoy the evening. After dinner, when we were about to ask for the cake we had provided earlier, the owner came over and told us she needed to re-measure the twins. She walked them over to a measuring tape on the wall and determined that they were "a bit" over 3 feet -- and insisted that we pay $20 per child. We were stunned. Not because of the $40 charge, but because of the unprofessionalism of addressing this at the end of the meal, after we had been clearly told by the manager that the children would not be charged. I respectfully expressed this to the owner -- not about the amount, but the principle -- and her response was to yell at her staff in her own language, visibly scolding them in front of our entire party. I told her that this was inappropriate to do in front of customers, but she didn't seem to care. My sister proceeded to pay the bill, which was over $1,500, and only after this entire scene did the owner decide to charge us for just one of the two twins, and gave us a $20 discount. This kind of treatment, from an owner no less, is absolutely unacceptable. It reflects a lack of professionalism and a disregard for the guest experience. I hope the owner seriously reconsiders how she manages both her staff and her customers. What could have been a lovely evening ended with a very sour taste.

It was $35 pp for the ayce menu. The brisket and bulgogi were my absolute favorites here with the brisket just taking the slight edge. The meat tasted great and of a better quality. They only brought one meat out at a time and would swap up grates once the meat made it burnt. Staff would also help cut and cook some of the meats. My only complaint was the kimchi just being ok. For the price you have a lot of things to try and eat, so definitely being a small group of friends. Overall a good Korean bbq spot that I would gladly come back to. Food(50%): 8.5 Staff/service(25%): 8.5 Value(25%): 8.5 Overall: 8.5/10

It's $35 PP for AYCE Korean BBQ. The menu has a good selection of meat options. Pricing is comparable for the area but the quality of the meats was underwhelming. The service was lacking. We walked in at 5pm and the place was not busy at all; yet we weren't helped for 10 minutes. Also; the waiter who serviced us; left the meats unattended for long periods of time and I had to attend to the grilling myself half the night. Also when he was putting the meats on the grill; he did it haphazardly and the sauces splashed onto my sweater. The venue itself is spacious with two dining areas. Plenty of tables and seating. Just FYI; the floors are super slippery. I almost slipped twice getting to the bathroom.

I had high hopes for Meat Project in Centreville, especially after hearing great things about the Fairfax location, but unfortunately, my experience was not satisfying. All the meats, including the spicy pork belly, bulgogi, and steak, were seasoned very sweetly, and surprisingly, all the marinades tasted almost the same. The quality was fine but the flavors were really lacking. The egg was good, but the corn cheese was a major letdown. It needed more time to roast and ended up grainy with the cheese separating into granules--definitely not the texture you expect from corn cheese. The banchan (side dishes) also didn't seem fresh and didn't really complement the meat in any meaningful way. The service was great and the server helped a ton grilling the meat for us and the restaurant was huge with abundant seating. Having tried authentic K-BBQ in Korea and multiple K-BBQ spots in Northern VA and, this place didn't live up to expectations. The price felt too high at $35 for the quality of food served, especially when compared to other options. Maybe this was an off day, or this location just doesn't match up to the others.

I really enjoyed the AYCE at Meat Project and the ability to get unlimited refills of the steamed egg and galbi. (Some places limit how many of these you can get). We were seated right away when we entered on a Saturday at 5pm. The staff was friendly and attentive. I did notice the price went up from $30/PP to $35/PP now.

I'm a big fan of Meat Project and their $35 PP AYCE KBBQ THAT INCLUDES DELICIOUSLY & AUTHENTICALLY MARINATED KALBI (the most premium meat cut you won't find on any AYCE menu anywhere else, no lie).... ....BUT NOT THIS CENTREVILLE LOCATION. HANDS DOWN, NO CONTEST, by wayyyyyy far, the newer MUCH NICER FAIRFAX LOCATION is sooo much better than this one. What an absolute disappointment this Centreville location is. Truly disappointing. The menu at both locations is the same, the pricing is the same. What I like about Meat Project is - pretty much the only thing on the menu is their $35 PP AYCE. That's it. Very focused, simple, no other menu item distractions, easy peasy, no muss no fuss. The icing on the cake (here and also Fairfax) with having a 1-item menu is that it INCLUDES KALBI. You won't find that anywhere else - I've searched. All other KBBQ AYCE places offer kalbi for an additional charge or to order separately a la carte (and it ain't cheap, that's for sure!). To boot, there are NO RESTRICTIONS ON HOW MANY ROUNDS OF KALBI YOU CAN ASK FOR - totally AYCE. And the kalbi is actually really tasty. Well seasoned and marinated, authentic Korean flavors, mouth watering tender cuts. I will say that the quality of the marinated kalbi cuts, while good at this Centreville location, are better at the Fairfax location. But even the $35 pp price point for AYCE that includes kalbi can't elevate this Centreville location up from 2 stars sadly. And it's alllllll due to how divey imo and sooo uninviting, "cold" and unwelcoming feeling the interior of the restaurant is. We just did not like the ambiance and the vibe at all - the food and service were fine but the setting was way off and detracted from what would have been a much more pleasant dining experience. Party of 3 - we went early like 530PM on a Sunday night so we wouldn't have to potentially wait for a table (no reservs accepted). When we arrived, it was actually pretty busy but we were able to get one of the last open 4-tops available without signing in on the waitlist. When you walk inside, the whole restaurant is sectioned off into 2 very strangely laid out dining areas. There's a wide hallway like waiting area and on either side of the waiting area are the 2 distinctly sectioned off dining areas. The area on the left side is closed off with a glass wall/partition with a door leading into the space - almost like a totally separate, but much nicer part of the restaurant. We were told that area is for large parties. (Note: Parties of 5+ (they count your kids too) are hit with an automatic 20% tip.) The other (right) "side" of the restaurant has all 4 top tables - with chairs that were super basic and very uncomfortable. We DID have an amazing server. An older Korean lady who was fantastic - she was super attentive, brought each round of meat out very quickly (but never made us feel rushed). She was an expert griller and knew her stuff - she cooked our kalbi (3 rounds) and bulgogi (2 rounds - also well seasoned and marinated and delicious!) to perfection. Mouth wateringly delish! No complaints about service. Couple other things I liked about the AYCE meal: * As I just said, this place helps you grill your meats - LOVE not having to do it ourselves. * I love that they have the larger rectangular grills instead of the round black teflon ones that most KBBQ places have. Much easier to grill meats on the larger bbq surface. * We never had to ask for them to change out our grill pan - they did that almost with every new round of meat they brought out. * The portion sizes of meat brought out each round was plentiful. Not too much that it would overwhelm the grill pan but not a tiny portion where each person would only get a nibble. * No hesitation with them happily bringing out round after round after round of meats to grill...and all in a timely manner. * Unlimited rice, soups, corn cheese, banchan and sides - they all come with the $35 pp AYCE. * LOVE that you can get a pitcher of draft beer - $24 - I'd say these days, that's a good deal! But overall, Meat Project Centreville still gets a 2 star from me because the whole vibe, ambiance and inside aesthetic totally threw off our dining experience - thus, that was our first AND LAST time coming to this location. I wanted to try out this Centreville location for comparison and even just driving up to the building, my spidey senses went off... MEAT PROJECT FAIRFAX IS WHERE IT'S AT AND WORTH THE DRIVE EVEN IF THIS CENTREVILLE LOCATION IS CLOSER. TRUST ME.

My personal favorite for all you can eat Korean bbq in Northern Virginia! No, you're not getting the top notch quality of meats but you're getting good enough. My personal favorite: Brisket, Galbi, and the Thin Sliced Pork Belly Steamed egg and corn cheese are always a hit here as well.

I'm back to eating at restaurants! My 2 week craving for dine-in eateries led me to Asian cuisine! First stop: meat heaven Meat Project is a place we used to frequent but since they opened a couple of Loudoun BBQ we have missed Meat Project. Coming on a Friday afternoon after the lunch crowd was the best decision. No wait, easy parking and excellent service. The AYCE is $35 and gives lots of options including several beef options (other AYCE places do not give many beef options. We rarely chose chicken or pork so beef and seafood is our go-to and this place delivered. I love that they ask you what sides we wanted. Since we don't eat the soup or the egg, we didn't waste. The corn cheese and the fresh salad is our fave. The mini apps had all my favorites and they offered multiple seconds. The steak, brisket and bulgogi were very good. The shrimp is deveined and headless. My only complaint is that I was not a fan of the dipping sauce. They were like hot sauces and I missed the salt/pepper sesame oil. Service was really good. Our server knew not to interior me as I prefer to cook and cut my own meat. Kudos to their attentiveness. Love having the place almost to ourselves.

Best Korean BBQ in the area, hands down. We have been to most of the competitors in the area and no one has meat this well marinated and of this quality. So was good for a while, but they keep changing recipes and the flavor is missing. K spot doesn't come close to this in quality. This is flavor! The galbi blew me away, I didn't know it could taste that good. The sides were not as good as So, so there is room for improvement. I did however love the onion salad. But with such good meat it wasn't as big a deal because I didn't need to add flavor. And the service was fantastic. Our waiter did what we asked, we wanted smaller portions because we were just two and we wanted to try lots of things. I find that a lot of places, including So, portion out food in portions too big for just two people who don't eat like hogs. Really in a restaurant's interest to give smaller portions, but some don't. We will be back to make sure it wasn't a Fluke like K spot. But thank you for an enjoyable evening!

Dishonest pricing. Shameful practices. BEWARE. In the past, they had very clear guidelines on pricing for adults vs kids (ages 0-whatever is free, whatever to whatever is $X, and adults $35). Brought my three kids here ( ages 6, 4, 1) and we were charged for 2 adults, 2 kids (each kid was $20 apparently). When I asked how the pricing was set since there was no clearly stated age guidelines, they elderly lady manager first said that kids under 3 feet were free. Then, when I told them that our second kid was under three feet, they said oh, but he ate some food so he can be $10...literally making the pricing up on the spot. To make matters more shady, when they went to go adjust the pricing, suddenly there was a system issue and they couldn't make changes. They said oh, well just give you $10 back (obviously not accounting for tip and tax). When we got the final bill, gratuity of 20% was already included. They said because we sat at a bigger table, we had to pay 20%. We never requested to sit at a bigger table, our party of 5 included an infant, and we were only charged for 4....then they made up on spot about how the server helped us cook so he should get 20% when in actuality we did the cooking half the time. AND THEN THEY HAD THE GALL TO SAY WE CAN CHECK THE CAMERAS. You know what you guys? Korean bbq places are a dime a dozen in centreville. I'd rather take my money elsewhere than to be cheated by made up rules and dishonest pricing. You guys lost a customer. Would NEVER recommend this place again. ...the meat is alright. But I'm not about getting literally robbed on check out.

I enjoyed more when first opened. I do love the all you can eat and that noodles are included as well as rice. Wished the price hadn't gone up (but guess that's every where). Meat quality isn't the same, some cuts of beef were more fatty and less meaty. Service friendly and helpful. Seating was good and not a long wait. Would go again only if with group that want to go.

One of my favorite KBBQ places to eat in the DMV. You can do no wrong with Meat Project. For $30 a person, you order options of pork, beef, chicken, seafood, and even sides ! My friend and I stopped for dinner after a convention and it was definitely worth the drive honestly. When we sat down after a short wait, we were greeted at the table with banchan and water already to go. Our waiter was very nice and asked us for our three meats/two sides. Normally I opt for the brisket, thinly sliced pork belly, and the spicy bulgogi. I honestly feel like those are pretty common at any KBBQ you go to and is a good test to see if the food is really good. For the banchan, you get kimchi, potato salad, bean sprouts, and some japchae. I think you get a small amount because not many people go for it and just dig straight into the cooked meat which makes sense. But it's there if you want more. My favorite sides here are the steamed egg and the corn cheese. Steamed Egg, an absolute classic. I do not walk away from a KBBQ place without eating 1 or 2 of these. The corn cheese, while not really super cheesy, it's delicious and for a small amount I have to order 1-2 times as well. I also do like the soybean soup but I don't think it's spicy at all. Other places give you the same soup with a stronger kick for spice. My favorite meats to get are Thinly Sliced Pork Belly, Brisket, Dry-Aged Ribeye Steak, Gopchang, Galbi, Red Wine Pork Belly, and Spicy Chicken. I would definitely come here when it's not on a weekend night, then your experience might vary. I personally think the wait is always worth it despite how packed it is. Expect lots of sounds everywhere, KBBQ is just a great place to socialize and eat meat. If you just want a more intimidate experience, go in the afternoon or so in my opinion. Will I come back? Of course! I love this KBBQ place and SO KBBQ! They are my go to AYCE KBBQ options in Centerville.

My friend and I stopped by for a very late dinner (like almost 10 PM) and Meat Project was one of the few restaurants (most were KBBQ, lol) that were still open this Saturday evening. I've heard good things about the food here for a couple years now, so I was pretty excited (and hungry). Upon seating, all the banchan and water were already set up. Since we were very hungry, we immediately started eating. The kimchi was pretty standard, but I was a fan of the mashed potatoes (had some sour cream to it?), beansprouts, and japchae. Our server explained that we were allowed to pick three meats and two sides every time we ordered. If it's your first time, I'd recommend trying a bunch of different things. Since it was my friend and I's first time and it was just the two of us, we were only able to try five different meats and three different sides before we called it a day. For the sauces, we asked for ssamjang and sesame oil & salt (the two you need for all KBBQ) along with the four sauces they have, as well. To be honest, it was hard to tell the differences between the four sauces. I just remember the light green one to be creamy and spicy. BEEF BRISKET Good, but super fatty -- a lot fattier than other beef briskets I had. Definitely worth getting, though. This was our first meat so we ate it so quickly. DRY-AGED RIBEYE STEAK OK, this ended up looking the exact same as the galbi after it was cooked and cut into pieces. However, it's drier/tougher compared to the galbi. I'd skip this in the future. GALBI (SHORT RIB) This was my friend and I's favorite out of the five we tried. The galbi was tender and flavorful. Went well with the ssamjang and sesame oil & salt. We'd recommend this for sure, and it's also one of our server's favorites. BULGOGI Marinade was a bit overwhelming for me and some slices were pretty hard to chew. Overall, it was good and the slices were thin. HONEY BUTTER SQUID Our server recommended this because it's one of his favorites. I didn't end up eating any because there was cilantro, but it seemed like my friend enjoyed it! SOYBEAN SOUP My friend enjoyed this, but I wasn't able to try it this time around. STEAMED EGG So good (flavor wise) and relatively fluffy. It hit the spot. I ate the entire thing and wanted another one, but had to save my stomach for more meat. I'd get this again, 100%. CORN CHEESE My friend and I liked and also did not like this. The flavor was super creamy (not just cheese, but lots of mayo) so it was on the more liquid-side, instead of stringy with a nice pull if it was more cheese-based. I'd still recommend trying. Overall, our server was very attentive and consistently checked in on us to see if we needed more meat or sides. He cooked our meats very thoroughly. The portions were on the smaller side, but that's to be expected for AYCE. He also recommends the pork belly here, which I'd have to try next time because I really wasn't feeling it this time. The interior of Meat Project was clean, spacious, and on the modern side.

Whenever my husband and I start getting into K-dramas, we start craving Korean BBQ ... so off to Meat Project we went! It is AYCE at $35 a pop, $20 for kids, and Free 99 if you are under three feet! Surprisingly my tiny baby ate the most out of all of us. We tried the beef brisket, boneless kalbi, and grilled shrimp for dinner and was most impressed with the latter two. The kiddos LOVED the steamed egg, corn cheese, and endless bowls of steamed rice. Our server was really attentive, kind, and grilled our meat to perfection. We really had a nice time! One thing to note here is the ventilation is pretty weak so you'll be smelling pretty meaty afterwards. I'll definitely be back, especially since I know there is one that opened up closer to me in Dunn Loring.

The inside seating and food were great! The service was a little non attentive and had to tell our server multiple times for refills or just to order. For AYCE being around $30, it's def competitive in NoVa paired with the quality of steak, pork belly, and not too fatty brisket. I loved the red wine steak and all the meat offerings. The steamed eggs were good and kinda wished the soybean soup was spicier like other places. But overall solid kbbq spot.

The service was great! Our server Daniel was helpful, attentive, friendly and fast. He was a great server! They refilled every bon chon rapidly. We stuck to only beef and the galbi was by far the best item on their menu. It's boneless. They cook all of your meats for you so if you're worried about having to cook your own meal while you're out, that's not the case here. They grilled our meats for us. There's lots of space here. Many tables and they also offer dessert. For an all you can eat bbq place, this is a good deal. If you go with people who've never tried Korean bbq and want to try many different things at a reasonable price, this is a decent option. If you aren't an all you can eat kind of eater then this may not be your place given the number of Korean restaurants in the area. It's not too loud so it's easy to talk in this environment.

If you follow my reviews and know me , no food photos?? It means the food was so delicious and completely distracted me! I wasn't impressed by the banchans and didn't find my favorite one with the cucumber but let's be honest , don't we all thinks it's a distraction from the main course and most of the time we ship them? Don't get me wrong, the ones they provided was great!! Now let's talk MEAT !! For $30 you get dry aged Ribeye , short rib and seafood items??? Wow !! My favorite item was the Red wine pork belly , the ribeye , short rib , and for the first time in a KBB I really liked the octopus! They will serve rice but I got steamed egg instead and enjoyed it! Also enjoyed the sauces!! Thank you for having a large water bottle to drink from! The server Israel was amazing and was always there to cook the meat for us!! Wonderful service!! Nice and clean and not DARK lol ( if you are a KBB fan you will know which restaurant I'm talking about! Lol) I'll definitely go there again!

Our favorite kbbq place in NOVA! Our favorite meat was the brisket and it was one of the higher quality briskets we've had. But all the meats and sides are delicious. Our server was fantastic and so attentive. He would help with cooking the meats and always made sure that our grill was never empty. It's a great place to go with friends and catch up!

Meat project probably falls in my top 5 for kbbq in the area. They have a pretty decent selection but it is pretty pork heavy. The service is always great anytime I go and they make sure to keep the meats coming until satisfied. They also stay open pretty late so it's a great spot to visit after happy hour or late night drinks.

I wouldn't recommend this place if you're a group of 4-6 people. We only got one grill, so the meat ran out really quickly, just a few pieces per person. Then we had to wait for the waitress to bring more meat, which took about 10-15 minutes each time because he is too busy and forget. We also had to grill the meat ourselves, which took for a while, and it was gone again in no time. Overall, it wasn't a good experience, especially considering we paid around $300 for five people. On top of that, the music was really loud, which made it feel like they wanted us to leave quickly.

If you go to a good Korean Barbecue, you will fall in love with Korean food. Meat Project is an excellent place to get your fill of Korean barbecue. And, the name says it all, be prepared to enter a meat coma. The service was wonderful. A huge shout out to our server, Joel. He was always there to check on our meals, help us refill our side orders, and expertly cook the meats. Everything was delicious from the Bon Chon to the side dishes, but you can't help having some favorites. For me the Galbi was a rock star. It was tender, perfectly seasoned, and cooked to perfection. I also really liked the aged rib eye steak. It was really tasty. It was aged with a delightful dry rub. My favorite side dishes were the cheesy corn, the jap chai, the steamed egg, and a delicious salad. They were all so enjoyable. I could make a meal of the side dishes alone. But, no, the galbi, miso marinated pork belly, aged rib eye, brisket, grilled shrimp and more were all phenomenal! There is a large selection of beers and soju. The restaurant is decorated in a modern and contemporary design. The owner, Grace, is coming around and making sure everyone is taken care of. This was my son's choice for Father's Day, but now it will be my choice for Korean barbecue. Try to get here early, because they fill up fast.

This was one of my best value kbbq experiences! Other kbbq spots don't allow refills on the soybean soup side but we got multiples for the table and it was a wonderful addition to our meal. The service was kind and attentive, even though it seemed like the waiters had a lot of tables to look out for. I used the yelp waitlist feature and it was very helpful because our name was called promptly after arrival. I think the entryway could be better designed because it can get crowded and it is hard to navigate in and out the doors. I think the seafood options are good here, I just wish there were more non-spicy options, but the shrimp was great.

The restaurant's name aptly describes the all you can eat Korean BBQ establishment, and yes, it's a good description. Good Korean BBQ is not limited to just Annandale. Located in Centreville, the restaurant is in a refurbished, former restaurant - I think the Meat Project makes the location even better. Pro: * Best part is the service - very attentive, conscientious - always checking in go top off water, dipping sauce, replace dirty grill * Awesome selection of beef, pork, chicken, and seafood - check out the menu for the full selection * Great selection of beer on tap and bottles (usual domestic and Korean & Japanese brands) and full bar * Décor is modern, open, and not smoky despite all the grilling Con: * Not much selection of banchan (side dishes) - which may be good so you can concentrate on MEAT * Time limit - unfortunately, you are not allowed to stay beyond a few hours (you will be fully satiated so not to worry) * Be aware pitchers of beer are available, but costs can quickly escalate NOTE: You will not be seated until your whole party is on site so ensure everyone is on time! Depending on where you are driving from, Centreville may be a bit of a drive, but it is WORTH THE DRIVE.

I visited Meat Project for the first time today, & it was so yummy! It has made my top 3 kbbq spots in nova, coming after oedjagib and Qui! We came for the lunch service, where the music was bopping and the service was quick! I was so excited about the different meats and seafood they offered!! Top picks: -Galbi (short ribs); AMAZING!! Honestly the best meat to order -Spicy Bulgogi; the spice level was high but so gooood -Octopus; ok this was SO GOOD! 10/10 good crunch, good smokiness, great texture! Top Banchan: -glass noodles, idk it just hits differently here.. I'll have to get some more at Hmart -kimchi -radish I didn't like their potato salad, I like a more chunkier consistency, it was more like a smooth mashed potato Let downs: -Garlic Pork Belly; the sauce made the meat burn too quickly 1/10 -Corn Cheese; REALLY SALTY, not cheesy enough, no cheese pull... 0/10 We also ordered their ribeye steak that was mid, pork belly, and almost everything else besides chicken. We also tried their 3 combo salad which had two dishes: lettuce with a spicy sauce, and chives and green onions with a peanut sauce. I wished they had a regular green salad, or lettuce wraps instead. Also- our first reactions to the sauces was that they were trying to skimp us, bc w the soy one, there was barely any there. Then I realized they might try to lessen waste and have us ask for the ones we wanted to use! Overall, I enjoyed my experience, I would rate it a 3.5 stars, not 4. I would go back again though, definitely for the short rib and octopus!!

Meat project exceeded my expectations. I heard from a couple friends of mine that they didn't enjoy their experience here but for me and my friends that went, it was really good. We had a really great server who was very attentive. We always had food coming, shout out to Gabe! We started out with the brisket and it was sad to say that this was the most disappointing cut. Usually i order brisket with every round. I would also pass on any of the marinated meats. Fortunately, all the other meats were really good. The pork jowl was juicy and soft. Our favorite was the butter squid which we had a lot of repeat orders. The ban chan was nothing special. I think the salad was underdressed and the potatoes were too runny but the japchae was good! The sauce options they had were a little scarce. They didn't have gochujang or samjang which was disappointing but the premade sauce was a nice sweet and salty addition to the meat. The ambiance is nice, they had two sections separated by the bar and it was nice and dim. I would say it's a great place to drink with friends except they are very strict on time limit. All in all, I enjoyed the meal here but wouldn't rate it anything more than a 4. The meats are so good all the other things like sides, time limit, and sauces prevent me from rating it a full 5.

Came here on a Saturday afternoon around 4:30. It was pretty busy for an early dinner. The whole party (5 of us) had to be there for us to be seated. The ambiance is a little dark in here with a lamp above your table. There were many workers here looking busy and doing their jobs. When I got to my seat and looked at the setting, it was like I sat in a dining table with leftover foods. The side dishes looked so unappetizing. They literally put one piece of kimchi and two radishes. This is an all you can eat place with many variety of meats. Our go to meat was the Brisket since that is the quickest cooking and has no marinate. It was delicate and good. The dry aged ribeye was very tough to eat. We also got the large intestine and shrimp. I was surprised at how good these were. The workers didn't really stay and help grill but just kept adjusting the temperature of the grill. It's a good price for all you can eat for the variety of meat and seafood options, however, the service was subpar and their side dishes were disappointing.

We came on a Saturday night with a group of 6 and were able to get a table within 15 minutes. It's all you can eat of $30 per person with a lot of options like pork belly, pork jowl, intestines, beef brisket, chicken, and etc. Side dishes were good and they had three different dipping sauces that tasted great. Ice cream is no longer included in the AYCE. Service was great as our waitress was very attentive despite it being a busy night. Sometimes the servers would help with the cutting if they see you struggling like for me.. Overall, we had a great time and I would recommend it.

Parking lot so plenty of parking! We got really lucky walking in around 5:30 on a Friday night but this place definitely gets busy! It's all you can eat for $30 and everyone is really nice. QR code for the menu. The food is absolutely delicious but the spicy is definitely really spicy! We got the Garlic Pork Belly, Spicy Bulgogi, Galbi, Honey Butter Squid, Hawaiian Bulgogi, and the Red Wine Pork Belly. We also got the Soybean Soup, corn cheese and Steamed egg. Everything was absolutely delicious and we would definitely recommend!

When you come into meat project, their is music selection is good and loud, and the seating is quick. The banchan, rice, and napkins are already set up. Corn cheese- liquidy and more buttery than cheese 7.5/10 Pork jowl- a little bit fatty, but also has a chew 8/10 Honey butter squid- Very buttery, but also tastes a little fishy 7/10 Galbi - chewy and tough but is fatty 7/10 Beef Brisket - On the fatty side 8/10 Banchan - Staples 8/10 Server was nice and was cognizant of the grill. If alone, it is $40 If group it is $30 per person all inclusive menu of the meats. I'd give meat project an 8/10 as service is decent and food is good for the price. It definitely fills the craving, but is more a bang for your buck place. The service and price is what makes this place a bit better than your average Korean bbq place.

Honestly don't know how this place has 4 stars. Absolutely the worst Korean bbq in town. We went in and were so disappointed. 1. Nobody greeted us at the door 2. None of the tables have smoke range 3. Server was extremely slow and never greeted us. It was a party of 4 & they said we can order only 2 meats at a time. Ordered some brisket and ribeye steak and galbi. He only brought one meat & still didn't bring us water/drinks still. 4. The meat came out from a plastic box ... 5. Asked for salad & our server brought raw lettuce. Plus his fingers were touching the lettuce (not sure when he washed his hands last) 6. Sauces were not authentic. They don't even have brisket sauce 7. Panchan were old & didn't taste good. 8. We called the manager & she didn't speak english. Not sure who runs this place. There are so many great KBBQ spots that we go to regularly & wanted to try something new. This place is not it. Do not waste your time nor money here. Will not be ever coming back here. QUI BBQ, SO BBQ, FIREPAN BBQ are soooooo much better. They have my business.

One of my best friends invited me to this place for a Saturday lunch. The name of the restaurant was a bit comical but it didn't disappoint with the food. I arrived and was immediately seated. The waiter walked me through the experience and then started up the grill. My friend and I ate an all you can eat lunch that was awesome. Meats of all kinds including brisket, steak, chicken, lamb and pork belly. Lots of seafoods including shrimp. Lots of sides including steamed cheese and vegetables. My friend said that they typically time your stay (approx 45 min). It by the time watch you are full of all the food - which is also very delicious. I highly recommend this place and I plan to come again. Price of all you can eat is good. My only disappointment as they don't sell t-shirts with the restaurant's name on it. Again: highly recommend.

If you're searching for an authentic Korean BBQ experience look no further. The menu features a wide selection of marinated meats that are grilled to perfection right at your table. We started with the Bulgogi (marinated beef) its thinly sliced meat was infused with a delightful blend of garlic, soy sauce, and sesame oil that left us craving more. Equally impressive were the side dishes, which offered a wonderful assortment of pickled vegetables, seasoned greens, and spicy dishes that complemented the main offerings beautifully. The Kimchi had the perfect balance of tang and crunch, and the Japchae (stir-fried glass noodles) was an ideal accompaniment, showcasing a fascinating texture and flavor profile. We also tried the Samgyeopsal (pork belly) which was grilled to perfection. And did I mention this place is all you can eat!!!

I had the pleasure of having daniel as my server on a pretty quiet Tuesday I would say, and the service did not disappoint still even though it felt like it wasn't as busy as usual . I am bias bc I'm spoiled in California with good AYCE KBBQ and a lot more options but for the price you pay and the service you get i would go back to this place. The server was attentive though we were a big party and I appreciated that. I dont think it's worth a 1.5-2 hr wait but it's still a decent option. Wasn't a fan of their brisket and pork belly but my fav meats were their rib eye, honey garlic squid, and pork jowl. I'm typically not a fan of marinated meats with KBBQ but I'll make an exception for this. Also wished for a wider selection of banchan too.

Came with a group of 6 friday night for a reservation. I'll start off by saying that I wanted to love this place despite seeing some of the past negative reviews (upon arrival..). It was busy, but our server was just too rude. I was tired and came here off a long shift after work, I was prepared to leave a great tip. I work in a restaurant myself so I understand what it's like to get overwhelmed. However, ignoring your customers to their faces or leaving them unattended for long periods is just not acceptable. Our server would run away and ignore us if we asked for something. This one time he brought us some meat we never asked for, put it on the grill, and then left without letting any of us speak. He ignored my friends begging him to give them their food (in his hands) for him to just ignore them and set it down somewhere else or leave. I don't have his name. The music was playing very loudly and the playlist/selection was unpleasant. It gives you the impression that they are trying to rush you out the door. When it comes to the food itself: I love brisket, but the second I got a taste of the brisket here I had to spit it out. It tasted rotten. I've been eating brisket at kbbq places in the DMV for 10+ years and never had this happen before. It tastes really good at other places! I noticed no one in our group ate any of theirs. The sauces were not really good, and they give you about 1 teaspoon of each as well. Corn cheese sauce didn't taste like a cheese I have tried before. The spicy pork belly was the best thing I tried. Because of the bad food quality and service it is true that you may leave this place starving/hungry (I saw a lot of other reviews saying this.) I definitely did. I only weigh 130lbs, so it's not like I can eat much anyways and yet I still left starving. Usually when I go to kbbq places I try to only eat a couple bites of rice here and there and mostly fill up on meat to get my moneys worth. I leave get extremely full. At meat project, I left scarfing down my second bowl of rice to avoid experiencing an upset/growling stomach for the rest of the night as I was going DRINKING! Just go somewhere else. You are not supposed to leave an all you can eat restaurant starving and upset.

I think this might be my new favorite kbbq. If you're like me and thick Sò kbbq is the best around the area than you will think meat project is neck and neck or even slightly better in my opinion. There was quite a wait on the weekend. I definitely recommend checking in right away or in advance via Yelp and know that all parties must be present to be seated. The server we had was amazing. Meat quality was on point. My favorite being the dry age steak and kalbi, which are unique to this place. The side dishes are on par with other kbbq within this price range. Nothing crazy that made it different or stand out. I think if they did up their game there it definitely would be the best kbbq in my view. The music was also good. A lot of throw backs and also not crazy loud so you can actually talk to each other but not so quiet that it's awkward. Definitely coming back

It was a very busy Saturday night but for a table of 3 it took around 20-30 minutes to seat. The food quality was not the highest but comparable when looking at a price point of only $30. The meat burned due to uneven grill temperature and the waiter did not cook our meat on time and eventually we took over every time because they had to leave. Sides felt like an afterthought but there were quite a selection. The vibe was fun for a casual night but don't expect high quality KBBQ. The highlight was the butter calamari but the rest was a little disappointing. We also enjoyed some of the bulgogi, brisket, pork, and galbi. For $30 having the choice of galbi seemed like a steal but the cut of galbi was a bit slimey. Bring casual friends here but take your parents to So or Meokja.

This AYCE KBBQ spot in Centreville is pretty solid. Went here with my husband on a Saturday early afternoon and luckily there was no wait and we got seated right away. You can try a lot of different proteins for only $30, including galbi which is a steal imo. I can't even remember all the other ones we tried but the standouts for us are definitely the galbi, beef brisket, miso pork belly, pork jowl and honey butter squid. The sides (soybean soup, steamed egg, salad and corn cheese) were alright and the servings are small compared to other places. Our server was also pretty hands on with the cooking, however there were multiple times where he would forget something we asked for so we had to ask again.

For the price this place is awesome. Galbi and gopchang on top of everything is great. We had no expectation for the gopchang but it was delicious and not gritty at all- i was so impressed. The dry-aged ribeye was marinated and flavor wise good but ... what you would expect from ayce ribeye, not very good. I couldn't try the short ribs which I was so excited for since they ran out and it was nowhere near closing time. The squid was super tender and shrimp was tasty as well. Would definitely come again for the variety!

I'm not really a fan of AYCE kbbq but Meat Project is probably the only place I would willingly go for AYCE experience. Their price, service, and meat quality are all one of the best in dmv. I really liked how they didn't have menu A and B where you have to pay extra for better/more meat, and steamed egg, bean paste soup, and cheese corn were all unlimited which is very rare for AYCE. The restaurant was clean and our waiter was very attentive. We didn't have to try to get his attention but he was always there and ready for us to order more. I highly recommend if you want to go to AYCE kbbq and leave satisfied!
