16 New Coffee Shops to Seek Out in Denver - Eater Denver

"Method has been roasting beans since 2013, supplying more than 40 businesses in the state and operating a cafe at the University of Colorado Boulder. But it also just opened a coffee shop, Method Collective, in LoHi, with a menu of cortados, lattes, cappuccinos, pour-overs, and flavored syrups made onsite. The community-focused vibe is nice, too." - Rebecca Treon, Josie Sexton

There’s a competitive coffee shop scene in Denver. Method is middle of the pack. The service lacked energy. The standard semi-industrial modern mountain vibe was present. The coffee was good, but the croissant was stale. I’d probably pass on Method because there are so many other great options.

I got the lavender iced latte. It was pretty good quality and strength. Outdoor area needs a little attention. The bar-height counter is overdue for sanding & fresh stain/lacquer. There were no seats. Not sure if this is a standing area only, but stools would have been nice.

Google
Lovely interior and awesome location. I appreciate their hours being later than most coffee shops. 5/5 for atmosphere only because there are plenty of outlets so anyone can easily work out of here. However…The people from this neighborhood can be discourteous and self-centered. I saw a girl on her laptop grind her dirty sneakers all over the seats. Another person ran around trying to plan ahead of me to get to her seat quickly and ended up making us both waste our time standing there awkwardly in a tight space. I let her go first and saw there was no reason for her to rush in the first place. Just stay on alert when you visit. The customers are simple.

In from Michigan- shirt walk from where I’m staying. Great vibe, great coffee and awesome service!

Google
Great shop. Pretty good coffee. Espresso was tasty. The drip was drinkable. Drank the entire cup. No pour over options.

Google
I came here while waiting for a brunch reservation down the street. I ordered an iced lavender latte. I was chatting it up with my group and got up twice to the counter to see if my drink was ready since I had not heard my name or order get called out. Both times that I approached the counter the baristas did not acknowledge me or indicate whatsoever that my drink was ready on the other side of the counter. Since this was my second time at the establishment I was not sure where the drinks were put once they were made. I found the baristas not hospitable and my drink was already a bit watered-down due to it sitting there for a while. No effort on the baristas to get my drink to me or indicate clear enough that my drink was ready. I was sitting within eye-view of them.

Popped in here an hour before closing on one of their slower days. created my own latte mash up. Honey Lavender Latte especially made for me :) .. I say add it to the menu lol it was delicious THANKS GUYS for a satisfying evening caffeine craving !

Google
Such a great vibe & delicious coffee. Lots of people working “from home” & it’s super dog friendly (they even have a little treat bowl 🥲) Probably one of the best almond croissants I’ve had in my life.

Yelp
I said this umpteen times in my past reviews I wrote on Yelp that I occasionally go on a hunt for locally-run coffee shops I've never visited before. Since the weather was nice today, I did exactly that. And I luckily found this specialty coffee shop in the neighborhood of LoHi. What will catch your attention is probably the modern interior that's consistently extended throughout the entire shop. Simple and yet intriguing with some plants/succulents and a garage door; its clean feel makes this place look quite spacious although it's not necessarily a huge establishment. Per some Internet article, this is their stand-alone shop that opened back in June of 2018. This whole neighborhood was its on the rise of growing back then, this store has grown into a great get-together place for the community of coffee lovers and non-coffee drinkers (as they serve teas, chai and even turmeric latte.) What's more is that they also sell some basic necessities such as milk, eggs and flour etc. It's as if "helping the very community" is their motto or mission statement, this type of care truly resonates with what I'd like to see in a business. Great job guys! The lady at the ordering counter was very attentive to what I ordered (she was also very welcoming!) I wanted my usual: doppio. But she asked me a question to ensure that she and I were on the same page as to what I truly wanted. This type of detail orientation is very much appreciated. I call that a top-notch customer service. On top of the doppio, I also got a ham & cheese croissant. I really hope that they will have a bit more extensive pastry selection in the future.

Yelp
Great little space to get some work done! There's a few tables and it was relatively quiet - everyone seemed to be working. The dirty chai was delicious!

Yelp
I mean..I'd pass. The place is nicely decorated and the location is nice. There's plenty seating. And it's a clean coffee shop If I had to come back..I'd bring my own coffee

Yelp
We were in the area and decided to stop in without knowing much about this place. It was very spacious and not too crowded when we went. My lavender latte was really good, but the cold brew that my boyfriend got was just okay. I love how much natural lighting and plants there are - definitely a good place to study or get some work done!

Yelp
Stopped in for a morning coffee. Not crowded at 9am on a Saturday and we were quickly served (in and out in 5 min). My latte was tasty but over $8 so a little pricier for sure. They offer several seating options inside if you want to stay for a bit!
google avatar

Marley U.

Yelp
Not a bad place to go! Lots of seating which makes it easy to find a spot and work on your computer. The latte was close to perfect, but just shy of it
google avatar

Yelp
Super cute spot with a great ambience. Went on a Friday morning and it wasn't crowded, very peaceful vibes with the garage door opening. Love all the plants and foliage. I got a matcha latte which was delicious. Definitely recommend.
google avatar

Jessica M.

Yelp
I go to method at least 1x every month when I am downtown between meetings. The highlands location is always bustling and you may find it hard to snag a seat, especially in the winter when the patio is closed but even if you are grabbing a coffee and running it is worth it. For those remote workers the WiFi is great, I have hosted multiple zoom meetings here with no issues. My go to order is an iced matcha almond milk latte and I love their matcha because it is not sweet. It is that really grassy matcha forward taste real matcha lovers look for. I would skip the chia pudding unless you really like your chia sweet. The pastry's have always been a win however. I have had a few regular h sweetened lattes here and have always enjoyed them. The staff seems to really care that they are putting out quality coffee even if they are busy.

Yelp
This was the third place I attempted to try on Presidents Day since the first two coffee shops were closed. It's a beautiful shop and the baristas were friendly enough but my drink was nothing special. When trying a new coffee shop I always go for a chai tea latte. Unfortunately this one was pricey (over $6) and felt like it came from a boxed concentrate!
google avatar

Sadie J.

Yelp
Large coffee shop with a lot of indoor seating. Inside seating can sometimes get fairly crowded. Recommend arriving early if you want a table to work at. Coffee is average. They also serve wine.
google avatar

Yelp
Fun coffee shop find in Highland! Their cold brew was a fantastic way to kickstart my morning! Love that you get a free coffee with the beans you purchase!

Micheal F.

Yelp
I never post negative reviews but this place changed that policy. This is the absolute worst coffee shop in Denver. Never open during their stated hours. Barista acts as though you're lucky to be a patron. Needs better management. Coffee is mediocre at best. Such a great location. Such a waste.
google avatar

Yelp
Just came upon this place while looking for a place to bide my time between plans. It's a really cute and clean aesthetic with a surprising amount of seating for the modest size of the space itself. I ordered an iced latte with oat milk- it was great. So glad I stumbled on another Denver gem to put in my pocket.

Wes H.

Yelp
Amazing all around. I love a good mocha latte, but some places make it over the top sweet. Method gets it just right with the deep chocolate flavor while not making it so sweet that you can't taste the espresso. The shop is super aesthetically pleasing and the outside is this beautiful blue color. Overall a super charming place that I will be sure to frequent.

Yelp
After having lunch at Bartaco next door, my friend and I stopped by Method Roasters for a quick cup of coffee. It looks like a giant repurposed garage. Plenty of seating and lots of sunlight. As someone who has worked remotely for 8 years, the first thing I noticed was how many outlets there were. Perfect for getting work done. Service and coffee were nice. I got a latte to-go, which was nothing special. What makes Method great is the fact that it's a community space--a coffeeshop, grocery store, and meeting venue. Once more in-person functions are happening, I'm sure I'll hear more about Method and all the wonderful things it's doing!
google avatar

Kell S.

Yelp
Such a cute chill, minimalistic ambiance. Saw lots of people here with their laptops working/studying and seemed to be a good spot to do so. The set up to order is a little bit weird when there's more than one person ordering as it's directly in the middle of the shop. The espresso was a little too acidic for my taste. They serve Oatly here for their milk. 3.5 stars for me.
google avatar

Nino R.

Yelp
Cool coffee shop. I enjoy the sparseness of it all. Ownership has changed recently and I like the direction it's heading. It's starting to look more like a coffee shop and less like a basement. I only get two drinks here; Flat White - it's on the larger side so it's almost like a latte in that regard. Malabar - get it iced. Great balance with the ginger and turmeric. I rarely drink outside of my home but this tea does the trick every time. Seating is limited so if you can score a table, then hold onto it. Get into it...

Yelp
This isn't a bad coffee shop to visit. I've been to so many in the metro Denver area that it's tough to give this place a full 5 star rating. This place was ideal for me to spend an hour or so before meeting a friend for a nearby concert. Coffee is good but not great. I've had better coffee in Denver. There are public restrooms. However, they are shared with other businesses. You must briefly leave the coffee shop by exiting a door at the back to use these restrooms. Cleanliness of restrooms was average. Inside the coffee shop the music is at a reasonable level. I noticed a patron nearby using his computer, a young lady was just outside reading or studying and a couple was conversing, sharing some good laughs. Good place to do any of these activities. They also serve alcoholic beverages (primarily beer). The barista was friendly as well. I like how she wished me a good evening as I was leaving. Good customer service which inspires me to return someday. There also restaurants nearby. So, good place to start with a friend or date over coffee then migrate to a nearby restaurant or the opposite. Again, on the music level, kudos to management for keeping it at a reasonable level. I'm interested in returning here someday.

Yelp
Great spot, nice inside decor and space and a little area outside to enjoy the fresh air with your coffee. They do a very nice whole milk latte, a bit on the pricier side but still a great treat. Service is prompt and they are friendly.

Nayeli A.

Yelp
I asked for a latte and it looked and tasted like straight up milk. Barrista wasn't very friendly. I ended up throwing away the drink because it was straight up sweet milk.

Becca P.

Yelp
Lacks attention to detail. I visited on Feb. 5t-- the menu clearly stated that the burrito was $7.75 so when it rang up at $9 I pointed out the discrepancy. The young lady replied "oh we raised the prices in the new year and havnt printed out the updated menu yet" no apologies, no offer to adjust. Id understand if it were early january- but it was February 5th. in the last 5 weeks you could update your menu? I ended up getting the burrito anyways as they don't have many food options- it was fine, but not worth $9. I also got a oat milk latte, which I did enjoy. Will not be returning
google avatar

Alexandra S.

Yelp
Great spot if you're wanting something singular and not commercial like Starbucks. I had a hard time finding a coffee shop that felt bright and elevated and not like it was furnished from your great aunts old living room
google avatar

Alex M.

Yelp
I checked this place out on a whim and I am absolutely in love with it. If you like good coffee and a great environment to get work done - check out Method! Here are the highlights; Good Coffee Great location (highlands - super close to downtown) Street Parking sucks but there is a garage nearby Super friendly staff Great look and feel - ambient music playing in the background Popular - Lots of people getting work done Attention to detail - WiFi password is on every table's mini menu I love tiny details like that Dog friendly I'll be back soon to check out the rest of their menu. Once I do I'll make sure to update my review with more details
google avatar

Kyla B.

Yelp
All I got was an iced americano but it tasted great. Friendly staff and welcoming atmosphere during the COVID19 quarantine. Orders available outside for pick up. I'll def go back and review again once businesses are back up and running.
google avatar

Tyler C.

Yelp
Stingiest coffee place I've ever seen, and I lived in NY for 8 years. *MISLEADING PRICES* A16 ounce cold brew here is actually 12 ounces + ice. A 12 ounce cold brew is actually 9 ounces + ice. If you ask for no ice, you will still be given the same 12 and 9 ounces respectively, despite the menu saying clearly "16 OZ COLD BREW" and "12 OZ COLD BREW". This place wants to be a community coffee stop but wants to nickel and dime us at the same time. Try LoHi Local and MACI Cafe for better value coffee in the neighborhood.
google avatar

Jennie K.

Yelp
Very rich and fancy coffee for moderate price! We walked in here because we were in the area, I just wanted coffee and didnt want to travel far. But what a sweet discovery! The interior is super modern with simple, clean design. A good place to bring your computer and work. You'll need headphones though. The people inside are not loud, but the music is actually a bit loud. Not like noisy loud :) The barista was very nice!! My bf and I were talking about my dad who likes to brew his own coffee...and the barista gave us suggestions on what to buy my dad for better coffee dripping. Very friendly! I ordered the latte with almond milk and my bf ordered the cappuccino. Both very good!!! Would come here again!!! Highly recommend :)

Yelp
A very good coffee shop full of young professionals who are there to see and be seen, that serves good self-roasted coffee. If you can get past the panoptic mechanism of local Highland culture, the roasters are trying some interesting things. Grassy, earthy, almost tea-like "natural" coffee roasts, besides the typical "washed" coffee flavors that we're accustomed to. I don't love all of their experiments, but they have my respect. And some are quite original. Free coffee with a bag purchase. And if you can grab one of the tables against the wall you'll be able to get some work done.
google avatar

Spencer H.

Yelp
Great coffee shop, even better work space. Terrific drinks that, yes, are on the pricier side. But you get back that expense in the setting and space to effectively work. Plenty of table space; plenty of outlets; quiet setting. Will come back here
google avatar

Dina B.

Yelp
Gorgeous, bright, really nice baristas ! Solid place to get some work done. Will be back !
google avatar

Heather T.

Yelp
Wow! I must have been under a rock lately because I have missed knowing about oat milk until yesterday. Of course finding out about this yesterday I had to go today. So here I am holding an oat milk vanilla latte and absolutely loving this. The vanilla is a blend of natural vanilla with a little cane sugar. It lends just the right amount of sweetness with a hint of vanilla. These lattes are going to be something I think of often and I'm already planning my next visit.
google avatar

Tiffany N.

Yelp
I wish I could get the full effect of this place but alas, we are living in a world of COVID so that's not possible. We saw Method while walking around and I could always use a coffee, so cold brew it was! I was originally gonna go with an iced Americano but they talked me into a cold brew and now I know why. It was LITERALLY the best cold brew I've ever had in my life. Smooth, bold and was a nice gift to my mouth (you're welcome, mouth). I will stop back here next time I'm in Denver and confident that the cold brew will be just as wonderful!
google avatar

Hilda H.

Yelp
Great varieties and good customer service! We were visiting for a few days and glad to find this place in Yelp
google avatar

Alex T.

Yelp
Glad Method Collective is finally open - had Method coffee recently, but they didn't have a shop open yet. This place exceeds expectations. They have a small market that is stocked with locally purveyed food/drinks and GREAT COFFEE!! Looking forward to going back and trying the hand brewed coffee after enjoying the batch brew which was very smooth. The space was quiet and would be a great place to get work/studying done or meet with someone and enjoy conversation.
google avatar

Janelle S.

Yelp
I visited this location again this weekend. I think it might become a regular for me! I had another great drink - vanilla latte made with almond milk. It was delicious! The barista was very friendly, pleasant, and energetic. Patrons were also friendly! ** Bathrooms are not in the actual cafe, but they are nice and warm and not hard to find in the building. I appreciate that they were warm. Sometimes when the bathrooms are in the building, they are cold and sometimes neglected to be cleaned on the weekends, so I appreciate the clean, temperament restroom.
google avatar

Chris H.

Yelp
Place was clean and quiet. Staff was friendly. Took them a while to Get my first drink to me when there wasn't a line but the second one arrives quicker.
google avatar

Yelp
My favorite coffee shop in the Highlands! I often work from there and my mood is always good. They have great drink options and the staff is always incredibly friendly.
google avatar

Lizzeth M.

Yelp
Barista had a rough morning it appeared. Watched him make mistakes on 2 other peoples orders before ours. The ladies seemed also kind of upset their orders were wrong, but they let it go. I was actually anticipating ours be wrong somehow, and of course, it happened. We asked for them to be to go, and he made them for here. You could tell he was stressed as he kept making mistakes, it happens. We all have bad days but he was making it pretty visible how upset he was getting too. We left it alone and just asked for to go cups and did it ourselves instead. Hope his day gets better, but it was not a great experience for us.

Chris W.

Yelp
Not a social spot. Met a colleague for a morning coffee and all the tables were occupied by people on their computers, no talking or interaction with each other. Hard to find a seat as all tables were taken by singles. I almost felt bad talking. Coffee was good. What you would expect....

Jeannette S.

Yelp
Yummy coffee, fresh, decently priced. And the barista was lovely! Returning for sure!
google avatar

Steve W.

Yelp
My ideal coffee house: flavorful not over-roasted beans, latte served at Goldilocks temperature; knowledgeable but friendly baristas; range of seating options, effective approach to building renovation, high ceiling promotes open feel and dampens noise. Added bonus of healthy albeit prepackaged sandwiches, mini-mart items but all healthy on both shelves and refrigerated. Going to share the concept w my eight favorite coffee refuges back in Sacramento.

Antonio S.

Yelp
Overpriced and rude employees, $8 is way too much for a pre packaged (seemingly frozen) burrito. I don't think I'll be back.
google avatar

Rohin S.

Yelp
Discovered this place looking for a new study spot. It's a cozy place with lots of natural lighting that is relatively quite. Cool atmosphere and people bring their dogs inside so that's also fun/a plus. Ended up getting the pour over coffee, which was an Ethiopian at the time - it was very flavorful, bright and sweet. Very good coffee selection and the baristas are good with their coffee knowledge. Lots of available snacks and stuff to munch on.

Jeff H.

Yelp
Website says dogs allowed, but the door says only service animals. Fine.. but website is misleading
google avatar

Ada C.

Yelp
Method Collective was one of the first coffee places we discovered before moving to the neighborhood, and I'm so glad we ended up nearby! Their staff is always nice and friendly, and they've really been good about safety precautions throughout the last few months. I'm usually a brewed coffee/cold brew person, but they've got good enough espresso drinks that I'll occasionally order those too. Love this place!

Yelp
I practically live in coffee shops...so this could be long... First, it's a cool little spot, pretty good americano, limited milk choices...but that is usual at small places...and friendly staff, but a little longer wait than I am used to. First, I think the name is misleading. My fiancé and I walked by this place for about 4 weeks before we even figured out it was a coffee shop. It seems like it is having an identity crisis. Since I live in the neighborhood, I get it, but I am still a little hesitant. The right part is trying to fill the gap of not having any grocery stores in the are and is like a tiny little market, albeit extremely small market. The left side is an open table area and coffee shop. Second, I try to go to a coffee shop at least 4 times a week to work. I just moved into the area 6 months ago and have been searching for coffee on yelp and google regularly to find places to try as I still don't have my "go to" coffee shop. This place had NEVER popped up as an option for coffee, tea, etc...so you might want to work on that. As far as a work spot goes, this is pretty great. It is modern and open, lots of plugs, and lots of sitting room to sit and work or chill. There have also been a few meetings I have seen here, so great place to meet up with someone. Third, I would come here more if you had coconut milk. You are a market, so usually markets have more options than the tiny coffee shops. Also, not sure what this thing is about oat milk, but I have tried it at about 10 different places and hated it every time. Not sure why oat milk has made it into small shops, but coconut milk hasn't. Oh well...one day hopefully. Until then, I will keep searching for my perfect coffee place and will be back if I am in the mood for a non-milk beverage. Overall, pretty cool downtown Highlands coffee shop to work at, which is missing in this area. So it fills the gap, but it really seems like it doesn't know what it wants to be. Need to do better marketing on the sidewalk too, because based on the name, no idea what this place is. But check it out, grab a drink, grab some food from the market, and know what is inside, because we had no idea for a LONG time.

Samantha C.

Yelp
I wandered in on a Saturday morning and there was only one person ahead of me in line. The coffee shop had a relaxed atmosphere and the baristas were extremely helpful when I needed extra assistance to make a dairy free order. Some coffee shops have dairy in their flavor syrups, so the allergen unintentionally sneaks in. Theirs did not, so I was able to enjoy an absolutely delicious gingerbread oat milk latte. I will definitely be back!

Missy S.

Yelp
Walked in and ordered coffee, asked for raw sugar The cashier laughed and said oh people ask for that every day but no we don't have it. So we said okay cancel our and walked out. What kind of coffee shop does not have sugar in the raw. And how stupid are you and disrespectful of your customers that if people are asking for it every day you're just too stupid to go invite it? The three stars is generous just so people can see this it's not a one star at the bottom but I'm actually saying zero stars and the atmosphere sucked.
google avatar

Ashley K.

Yelp
Great coffee shop for studying! They make great coffee and have a cutte little grocery store I will definitely be going back

Yelp
I was so excited to try this place as we just moved to the neighborhood and pass it often. Finally today we went in for the first time and were a bit confused about where to order. I asked the barista (to ensure I wasn't budging in line) if I was in the proper line to order. He was incredibly sarcastic with me and rolled his eyes at my question. He then asked me if I saw anywhere else to order where I told him that I thought I did and apologized for the misunderstanding. He was incredibly rude, sarcastic, and unprofessional. The coffee was OK, but my partner and I were so taken aback at the initial interaction it totally turned us off from finishing our beverages. We will not be going back and will be finding a new regular coffee joint in our neighborhood. Such a disappointment because it looked cute from the outside. Bad vibes on the inside though, and to us that's what matters.
