Can I say this is my favorite tasting menu in Manila? I came here twice this year and apparently I witnessed different fish served on the main dish. Still good but I loved the tuna they served on their first few weeks reopening.

It’s good to be back. It’s been too long. We love the new interiors, menu and service. As always, the team was very accommodating and took their time in making us feel special. Each dish, each service felt like a new experience with a captivating story.

I didn’t know what to expect but was very pleasantly surprised! Delicately balanced flavours, great presentation and excellent service. Everything is house made - fermented vegetables, cured fish, sauces etc. Metiz has a great appreciation for produce, process and presentation. Good value for money too - we had the tasting menu for 4,200PHP per person excl drinks.

Food: What a fantastic approach to Filipino cuisine. Proud our culinary establishments are growing. Service: Excellent. Cheers to Arlo, RJ, the lady Maitre’d and the whole team. Ambience: Excellent Will come back: Definitely. Commentary: We were the table where the AC water started dripping, so we had to move tables two times. Got some drinks as compensation. But I do have to say, I think better have some industrial AC instead of the household split type ACs. I think the latter couldn’t keep up with the kitchen heat.

Visiting Metiz for the first time felt like stepping into a bold reinterpretation of Filipino cuisine—and I loved the journey. Located in the chic little enclave of Karrivin Plaza in Makati, Metiz’s dining room is sleek and moodily lit, with an open kitchen that lets you peek into the culinary choreography. From the moment I sat down, I knew this wasn’t your usual dinner outing. The tasting menu leaned heavily into local ingredients—think indigenous vegetables, fermented elements, and seafood treated with serious technique. One standout dish featured aged tanigue (mackerel) paired with fermented rice and mushrooms, which struck me as familiar yet completely new. Service was attentive and unobtrusive, and they explained each “movement” of the meal as we went along—helpful when the flavours were so inventive. The space feels intimate and special, yet not overly formal; you’re encouraged to relax and savour the experience rather than tiptoe through it. On the flip side, the brevity of each small-course serving meant you constantly wished for just a bit more—but that’s kind of the point, right? To be teased, surprised, and delighted. As a first-timer, I left full of appreciation for the vision behind Metiz: it’s modern Filipino done with heart, ingenuity and style. I’ll definitely go back.

*Sep 26 Update from 1 to 3 stars: This issue has been resolved. Owner/executive chef, Stephan, took full accountability for both the safety lapse and the handling failures. He offered a sincere apology and provided an appropriate resolution.* I was shocked to find a small metal shard in my dish (tuna dish part of the isda, sabaw , kanin course) during dinner today. I immediately showed it to the chef, but instead of receiving an apology or any reassurance, the incident was brushed off without acknowledgment. What made this worse was the lack of responsibility shown. I chose not to escalate it further at the time since it’s my sister’s birthday and I didn’t want to ruin the night, but that doesn’t make the situation any less unacceptable. Food safety should always come first, and basic courtesy would have gone a long way. For a restaurant ranked among Asia’s Top 50, this was deeply disappointing. Accidents can happen, but ignoring them and leaving a guest feeling dismissed is not the standard I expected. I sincerely hope management addresses this properly, both in terms of guest safety and making amends for the experience. Sep 24 update: Management reached out to my sister, who made the reservation, but not to me — the guest who actually found the metal shard, reported it, and was the one in danger of ingesting it. That feels dismissive, since the issue happened directly to me. Nothing feels resolved. 🤷🏻‍♀️

Super excited that I had the opportunity to try this place out during my short stay in Manila. A very intimate dining experience where you can see chefs across the room preparing your food. As a foreigner, I can't really comment on how unique/pushing the boundaries the food is but they surely are delicious. Special appreciation to the hostess and sous chef for giving me a tour of their kitchen. Definitely will come back again next time I'm in Manila.
