I dined here about 2-3 years ago, but am only leaving a review now.
Everything was delicious, meticulous, and well explained. The wine was also incredible.
But, most importantly, the main dish I had was, to date, best dish I've ever had. It was a smoked aubergine (eggplant) in a hazelnut ajoblanco. On the side was a dish with a sun-dried tomato pesto under a heaping pile of fresh herbs from their garden (many types of mint, basil, lovage, and so on).
It was the most well-balanced meal I've had – there was smoke and savouriness from the aubergine (which also had an incredible texture), the creaminess (but also lightness) from the ajoblanco, the salt and deep umami from the sun-dried tomato, and an explosion of different herby flavours from the herbs – fresh mint of different kinds, citrus, a very nice level of bitterness).
Absolutely incredible. I wish I had taken a photo but unfortunately did not.
The menu is rotating, so you would not get this dish, but it at least showed the creativity and understanding of balance of the team.
