It's okay ramen, but the price is good. The broth is really great! We both got the Sapporo miso and it was lovely. The noddles were only okay, and the pork, while tender, was flavorless. We got dumplings (with a needlessly complicated ticket system) and they were undercooked. The sauce that they came with was too acidic. Finding the place was also difficult. They do have easy to follow directions on their website, but it's tucked away. Also, it's called midnite ramen - why do they close so early?? Overall, pretty mediocre, but difficult to find, with an unnecessarily complicated ticket system for dumplings.

This spot is an amazing hidden gem. Tucked inside of Figurehead Brewing, they have a full restaurant for orders of gyoza, karage, and takoyaki, as well as a quick serve truck that served up most of the ramen *very* quickly. I had the miso bold ramen (with black garlic and chili oil) and my son had the shoyu with pork. Both were fantastic. Chewy noodles, really nice accompaniments and egg, deeply unctuous broth. The gyoza are amazingly good, possibly the most flavorful filling I've ever had. Get here fast before these sell out (5 to 830 max). Service was fast and you can get beer at the brewery too so lots of fun choices. Very comfortable indoor seating as well as an open courtyard on sunny days

Literally the best ramen I’ve had in Seattle so far!!! The gyozas were also great. The ticket system was a bit confusing at first but I found the concept interesting! I’ll be using my tickets at a later time which gives me something to look forward to :)

Inside Figurehead brewery, Midnite Ramen continues to be one of my favorite ramen spots in Seattle. I tried the 50’s Classic Shoyu this time. I was not disappointed with my choice, especially with my low tolerance for spicy foods. If you’re in the Stone Way area and looking for some noodles, I would definitely recommend this place.

It’s a small, pretty hidden ramen place with no parking and a little yard with tables. I have mixed impressions. First of all, ramen…it’s good. Broth is a best part, noodles could be a bit chunkier 😏. But it still strong 3.5-4/5. Dumplings…oh, they have a pretty weird system with tickets, you buy some tickets (minimum 3 for 12$) and it can cover 15 dumplings. So, you simple cannot have just one plate, but you can keep your tickets and come back later. So, dumplings weren’t good, mine simple were raw and fell apart…I will come back to spend my leftover tickets, because I paid for that, but I wouldn’t recommend.

If you're a fan of great beer and even better ramen, then this place is a must-visit. Nestled in the heart of Figurehead Brewery (Stone Way location), Midnite Ramen offers a wide selection of ramen as well as small eats. I had their spicy ramen called the "Hiroshima Tan-tan-men" with beef. The broth is rich, flavorful, and delivers just the right amount of heat. I also had their fried chicken as an appetizer and it was better than most fried chicken places in Seattle. If you're after a cozy spot with great food and drinks, this place is a must-try. Highly recommend!

I'm a fan of Seattle ramen scene, and this place ain't it! The fact that it is served in a paper bowl is already off putting to begin with, even the actual 'yatai' in Japan uses actual ramen bowl. And where's the soup? Halfway I was already done with it and everything just runs salty after that, not worth the price point. Noodle was overcooked and the soup was sooo oily, it's like they're trying to make up the lack of broth taste with oil & salt. Place has great vibe to drink and it's a passable food for 'drunk food', but it tastes fusion

This was my first time at midnite ramen and it was a delicious experience. The place is a cute food truck located inside a smallish building. We ordered the Miso Ramen, Pork Onomichi, and Zangi. Every single dish was so tasty. The broth was rich, flavorful, and bold. The noodles were by far the best ones I've ever tasted. A perfect balance of firmness and softness. It was a chewiness I haven't come across before. The people at the food truck were so helpful when we were confused about how to order. It is open seating and they have a water station inside too. Definitely will be back!

This place is tucked inside of a brewery, so it's super easy to grab a beer and get your food at the same time. Great ramen at a relatively good price for the area. When you buy the gyoza, you have to buy 3 tickets minimum (1 ticket = 5 gyoza plate). It's a cute idea and gives you a good reason to come back. I was really confused with the ordering system at first but the staff was super friendly and happy to help me.

My second visit this time with friends. First time I had the Kumamoto Miso Bold which was a little too heavy for me personally with the chili oil and miso broth, great noodle chew and love the bamboo shoots. Today I had 50's Classic Shoyu Ramen with chicken loved this dish lighter but still flavorful. Really enjoyed it and the noodle chew was still perfect. The first time I went during the week for dinner and ordered at the truck. service was friendly and quick. This time we went on the weekend for lunch so you order at the kiosk. less interaction with individuals but still friendly. This is located in Figurehead Brewery on Stone Way. Casual and clean atmosphere. Lots of tables and a bar to sit at.

As the weather gets colder, I've been on a mission to find the perfect bowl of ramen to keep me warm. That search led me to Midnite Ramen in Wallingford, and it did not disappoint. This spot is straightforward and no-frills--you order at a kiosk around the back, pick up your food yourself, and your meal is ready super quickly. No long waits here, just hot, delicious ramen when you need it. I tried the spicy tantanmen with minced beef, while my husband opted for the shoyu beef brisket ramen. Both were fantastic, with generous portions of perfectly cooked noodles and tender, flavorful meat. The noodles, in particular, had that ideal chewy texture that makes every bite satisfying. This was one of the best ramen joints I've been to in a while. Midnite Ramen shares its space with Figurehead Stoneway, so you can pair your meal with a beer. It's the perfect combo during a cold winter day. I'll definitely be back to try more of the menu--or just to indulge in another perfect bowl of tantanmen.

Tucked away in a brewery so it feels like a hidden gem! Really good ramen and pretty cool patio/atrium area. Ordering was easy on tablet, and food was ready within 10min. Flavorful broth and a decent portion! Slightly expensive, but the extra protein was worth it! I'll definitely be coming back! Parking is just street parking

Great to see a mom & pop, local business run out of this tiny trailer. Lines and the wait are consistently long, and they've been around just long enough for me to conclude that what they're serving must be working for most folks. I find it conveniently close to our office, and a wonderfully lively atmosphere (including many kids) with the shared community tables for the 3 separate food/drink businesses here.

This is a go to spot for my family and I to get ramen. It's nice that they are now located inside a brewery, yet still deliver the food out of their food cart. The owner and his wife (they make the food in the cart) are very kind and the food is always made quickly. My go to ramen is the one with the wontons -- the broth is always flavorful and it seems more authentic than some of the ramen places around. There can be a wait since it is a popular place, but the brewery is a nice place to hang out. The one downside is that tables can be hard to find.

Having come here on a friend's whim, I really wasn't sure what to expect: I've had a lot of okay to pretty good ramen in the area between all the shops and chains, but Midnite Ramen above all really oozes those side of the street Izakaya vibes. It's not even obvious where you enter, it's essentially inside a brewery/beer hall, and there's just a little shack in the back where they're serving ramen. The menu is pretty simple and the next thing you know your food comes out in an assuming compostable bowl. Super simple, but when the broth is as flavorful as it is, simple is fantastic. Just a very straightforward delicious bowl of ramen that is probably now my favorite ramen experience in the area. Highly recommend checking it out when you're looking for a casual but very enjoyable meal!

this is a cute food truck inside of figurehead brewing. we came here on sunday because it was featured on eater. you order on a kiosk and there was only one chef in the back. you get a beeper, and it's very efficient. the food comes out in these plastic bowls, so it doesn't retain heat that well. the ramen broth was delightful though and the noodles were the perfect amount of noodles. the chashu was the only thing I wish was softer and more marinated, but for the efficiency and the novelty of the environment, I enjoyed my experience. ooink would probably be my go-to still, but midnite ramen is a good option if you are in fremont

Decor and vibe is 10/10. Figurehead Brewing has a sweet new spot on Stone Way in Fremont/Wallingford, and Midnight moved their truck inside! And way more opening hours now, but not Tuesdays careful! Also other random days. Couple is so sweet and nice. Lot of care into the food. You place order at the truck inside Figurehead, grab a buzzer and in about 10 min you get a great bowl. Got the Miso Bold. Honestly 7/10. Didn't have enough Miso flavor for me and not full bodied enough. But the rest of the menu looks so promising I'm definitely coming back to try the other ramens. The Tantanmen from Hiroshima looks amazing. They have ones from different areas of Japan.

After hanging out at Fremont brewery for a bit. I trek over here with some friends for ramen. Mind you I thought we were walking into a restaurant not another brewery so I was really surprised when we got here. The midnite ramen cart/ window is located inside Stoneway tap room. It was absolutely busy and very crowded. While my friend ordered us ramen I was trying to find a place to sit 5 people. Not really an ideal situation for my awkwardness. We moved around a few times before settling on a table towards the door. I think I was the only one that ordered ramen because everyone else got braise beef noodle soup. I really enjoyed my bowl of ramen. It was actually a good portion size as well because I was kind of full on beer. Will probably wander back here some time in the future.

Keep in mind, there are several food vendors on-site--be sure to place your order at the food truck window, not in the back.

Pretty mid especially when Ooink is right across the way! We got the tantanmen and pork shoyu. The tantanmen broth was pretty oily, shoyu was better. Noodles were like clearly store bought (not a ding necessarily but again, ooink is right next door )

We were so excited to see a ramen spot so close to our apartment! It did not disappoint. The ramen itself has a perfect texture. They are extremely generous with their portions of ramen and toppings. My husband and I both ordered the kumamato miso bold. I couldn't believe how flavorful the broth was--easily one of the best bowls of ramen I've ever had. It is very garlicky and the broth itself is creamy and it melts in your mouth. It was seasoned perfectly. It is a family-owned establishment located in Figurehead brewery. They are all very sweet and helpful. We will definitely be back soon!

YUMMM best ramen I've had in quite a while! Definitely did not expect to love it as much as I did, especially from a food truck. Came here on a weekday night when it was at Obec brewing and was expecting a little wait based off past reviews. They give you a buzzer before you even order, which is nice so you can head inside and grab a beer instead of standing outside in the cold. Waited maybe 5-10 minutes before getting buzzed to place an order, and another maybe 15 before our food was ready. It was worth the wait though. I got the Miso Bold ramen and a beef brisket bao. Noodles/broth were perfection and the beef brisket bao is a must get! The noodles had the perfect bite, and there was a good amount of meat in the bao. Rumor has it they're opening up a brick and mortar this year and their food truck will go away when this happens, so try them out soon!

Honestly, kinda expensive for a bowl of ramen where there's several other restaurants. The broth and flavors were bold, I like the pork- it was soft and pulled apart easily. The bowl I got came with only one ear mushroom, a few bamboo shoots, and half an egg. Although the flavors were good, I just wish there was more.

I went there right before noon on Saturday and there was an event in the area. So the place was already crowded. It took me about 20+ min from order placed to pick up my ramen and takoyaki. The food quality was ok, in comparison with many good ramen places in the city. The paper bowl doesn't keep the soup hot. So I didn't enjoy the soup during my early Fall visit. Maybe it can become a plus in the summertime.

Been wanting to try this place for years. Showed up about an hour early but they were already setting up so we went into the brewery to wait. 5 came and was first in line. Ordered the Sapporo miso and the Onomichi. With 2 of their baos. Both were so good. The Onomichi was a more milder flavor, added some garlic and pepper to it. Bao's were also very tasty. This place is way better than the Kizuki chains and is in my top 5 in WA. Can't wait for their brick and mortar to open!

First time at midnite Ramen and the hype is real guys, one of the best Ramen I've had in the Seattle area! First off they have a wide selection of Ramen, they also have more Japanese food in the back too, which looked really good. The staff is super friendly and I loved how casual the restaurant is as the ramen was in a compostable bowl and you bus your own table. The broth was super rich and flavorful, I would definitely come back.

Midnite Ramen might just be my new favorite ramen spot in Seattle! Located inside Figurehead Stone Way Brewing Company in Fremont, this small truck inside serves some tasty ramen. The owners are friendly, and I can't wait to come back already. They offer 9 different types of ramen. So far, I have tried the miso ramen and the miso bold ramen, both priced at $14 each. I prefer the miso bold ramen for more flavor. The noodle texture and size is to my preference (not soft but not too chewy either). The wait times have been minimal so far. They give you a buzzer, and the ramen comes out pretty quickly. You can utilize the brewery space to eat, or they also have outside seating. Right now, they're giving one free dessert with every ramen purchase until August (I'm not sure of the exact end date). Overall, I like the vibes there, and I'm planning to try the spicy Taiwan ramen next time. I'll update my review once that happens!

I'm so glad Midnite Ramen has a permanent spot now inside Figurehead brewing! My partner and I went on a Saturday night, and it was popping inside the brewery. The ordering system is a little confusing. They have kiosks where you can order gyoza and Osaka street food snacks, but to order the ramen you have to go to the truck itself. When you go to the truck, they give you a beeper and when it beeps, you're able to go to the truck to actually place your order. So a little strange but it's pretty speedy one it's your turn to place an order. The gyoza ordering is a bit strange too. You have to buy tickets, and each ticket is an order of 5 gyoza, but you have to order a minimum of 3 tickets for $12. The tickets can be used at any time, though, you could buy three tickets on your first visit and only redeem one ticket (5 gyoza). Then you can come back another time and just redeem the ticket for gyoza without having to pay again. Again, kinda confusing and a bit of a pain to have to keep track of the tickets but it's fine. Onto the food - we really liked the ramen and gyoza! The gyoza wrapper is quite thin and the filling kind of falls apart, but it was pretty good. I got the wonton ramen without the chili oil, and I liked it! The wontons had a good amount of filling, and the chashu and egg were cooked perfectly. The wonton ramen came with a shoyu broth which typically isn't my favorite, but my partner really liked it. He ordered the miso ramen, which I loved! I thought the miso broth was really flavorful. Also, the service was so sweet! The woman who worked in the truck was so kind and genuine.

Best ramen in Seattle and I've tried many. You can tell that a lot of love and attention goes into their bowls. I feel the price is reasonable especially for how delicious it is! Love the set up too. The ordering system can be a little tricky if you are ordering to go (order at kiosk). But hands down my fave ramen place that I am lucky to live pretty close to.

I was really excited to try the ramen here because ive heard such good things but i was just disappointed. First off the ordering system is confusing as hell and the signs they have up make no sense and I was not the only customer who was confused. Basically the sign says you need a buzzer to wait to order and then once you order you get another buzzer?? Makes no sense but i was able to order without a buzzer bc i guess it wasnt busy enough to warrant that. Next was the gyoza. They have a ticket system where if you want gyoza you have to buy tickets but the minimum is 3 tickets which equates to 15 pieces of gyoza. Call me insane but im not eating 15 gyoza in one sitting. You can use the tickets any time you want so technically you could come back but this system is just not friendly for out of towners or people who just live far away or just dont want to come back lol. The gyoza were really tasty and definitely homemade and were a decent price for a single serving $4 for 5 pieces but you have to put a down payment of $12 for 15 pieces which is just insane to me and makes no sense at all when the other side dishes you can just straight up buy one order of. Idk why theres a ticket system in place for 1 out of the many other items on the menu. I think overall the food was ok but i dont think i would willingly come back because of how over complicated everything here is. I feel like this is such a boomer complaint but technology has truly come too far and customers should be able to easily and intuitively order what they want. And this is coming from someone who has worked food service for 5+ years. At the end of the day this over complicated system of ordering is a detriment to customers as well as staff.

For a ramen yatai I'm quite impressed by the ramen flavor and quality. My favorite is the Onomichi ramen (pork back fat) it is devilishly good as it's full of umami. The Miso Bold can be a bit more spicy (or the staff should have asked me) and the miso flavor is not strong enough. It does get a little confusing on where you can eat. Actually the Figurehead Brewing is ok with the Midnite Ramen customers to sit inside or outside of their bar. A little more clear instructions would be nice.

I haven't visited the brick and mortar store yet, I had tried the ramen when they were working from the food truck in Magnolia. The ramen was outstanding. The best ramen I've ever had. It's not too rich, and the noodles were perfectly cooked. The jammy egg was perfect too - I don't even usually like jammy eggs but in this broth with the pork, and noodles it's tasty. I definitely recommend trying it.

Delicious food. It's a tiny tiny food truck, but there's outdoor seating available. The brewery next door let us eat inside luckily since it was cold. They only have maybe 5 things on the menu in total, but they are great at those 5 things. We tried a few different ramens and loved them all. Most of the group had never had ramen and had lots of questions, staff was patient and friendly, even though some of us switched orders repeatedly.

Fantastic ramen, friendly service, and the best gyoza I've had in Seattle make this gem tucked away in the Figurehead taproom on Stone Way worth seeking out. It made for an excellent, warming lunch on a dreary January afternoon. I believe I had the Kumamoto Miso bowl - which was excellent. My wife got the beef brisket ramen; the brisket was perfectly tender and portions were generous enough that she couldn't finish it (to my benefit). Octopus balls were delicious and an order of gyoza was a delicious steal at $5. At noon on a Sunday there was no line, but I hear it gets busy (deservedly so). A steaming bowl of Midnite Ramen with a cold beverage from Figurehead makes for a great meal and I'm looking for an excuse to go back!

I love ramen and I'm a quest to try every single ramen restaurant in the Greater Seattle area, and Midnite Ramen popped up as an interesting option to check off the list! We went on a Thursday around 7pm and were able to get a couple of orders in. The restaurant itself is a small cozy looking food truck, and is situated right outside a brewery - it is convenient since you are also able to get a beer while waiting for your food. There are outdoor seating arrangements right outside the food truck, and since it looks like the two establishments are paired, you should also be able to sit inside if the weather the day you are visiting is chilly or rainy. Service is fast, you wait in line to place your order, they hand you a notification device, and you pick up your feel as soon as it buzzes. We went on luckily a not too busy night, so we got our food in about 5 - 10ish minutes. I placed two orders, and was able to try an appetizer and two of their ramen options! I'll review what I got down below: Bun with scallions and charshu ($6): This appetizer does wake up your taste buds nicely. The only critique that I would have was that they smother the bun with green onion, they really pile it on! This made the other flavors like the charshu very much subdued due the overpowering flavor of scallions. I like scallions, but would suggest trying something else if you aren't the biggest fan of them Wontonmen Ramen ($16): Delicious and meaty wontons! The wontons are huge, and they are almost about the size of a gold ball, and have good meaty texture and flavor. They give a generous helping of them, since I think I got about five of them in m bowl. There are some helpings of bamboo, and the noodles had a decent chew to them. The egg was a good consistency, but compared to other ramen places, I wished it was marinated or seasoned, as it was just a normal soft boiled egg. The broth had a mild spice, and it was nice taking a bite of a wonton, and re-dipping it in the broth. A hearty Onomichi Ramen ($13): Oh man, this is a hearty and delicious bowl of noodles! The broth is very interesting - on the menu, you would think that the dominant flavor would be pork, but they added bonito or some dried fish/other seafood that gave it a deep umami that was very pleasing. From the picture, you can see that there is a good amount of back fat scatter through the bowl. The chashu soaked up the broth nicely and was tender, and the noodles were nice and chewy. I would say this was my favorite thing I tried out of everything I ordered. Overall, I spent about $40ish for everything that I ordered above. I would say the pricing is decent considering the quality and amount of food that I got. Midnite Ramen is a bit far from where I live, but if I'm ever in the area again, I would definitely like to try the other options that this restaurant has to offer! (4.5 stars)

3.5 years in and this is hands down my favorite ramen in the city. The broth is by far some of the best broth I have ever had. They have 12 or so styles of ramen plus some buns. My favorites are the classic, miso bold, and Taiwan styles, but they're all delicious. I'm sad they'll be leaving Magnolia soon for myself, but I'm happy for Elmer and Izumi, the owners, that they finally get to fulfill their dream of having a permanent shop set up!

This adorable ramen food truck doesn't look like much, but it definitely packs a punch! The way it's run is a little confusing. First you grab a ticket, then wait until your number is called before you can order. Your number will be called again when your food is ready. While you wait is the perfect time to order a beer and find a table! This ramen is very delicious! I love that they incorporate a mixture of traditional (Miso, Shio) and innovative (Mapo Tofu) flavors on their menu! I will say that the ramen is VERY rich. Personally a little too rich for me-- there was a thick layer of oil on the surface of the soup as you can see in the photos. Definitely not something to eat every day. The owners of the food truck are so cute! They are a very kind East Asian couple (I think?) and they seem to work very hard to make the best ramen they can. That plus the wonderful atmosphere of the brewery makes this a great experience :)

Pros: AMAZING RAMEN Cons: Loooooooong wait times I would definitely rec this place but get there when it opens! Here's how our Midnite ramen experience went down. We showed up at 6pm and ended up being the last group to be able to get ramen that night. There were already a few flavors that were sold out. We didn't end up getting our food until 8pm and they ran out of pork so they replaced it with beef. The food taste and quality was amazing! Got the blackened garlic ramen. The north was incredibly flavorful and the beef was juicy and tender. The ramen broth wasn't too heavy either. The combination of the long wait and cold weather had me wolfing it down. I'd definitely come back but would plan to come early just to avoid the long wait.

Delicious ramen and parked in front of a cool little brewery. Such a fun spot. There was even live music when we went. Service was exceptional. Will definitely be coming back for our ramen fix.

I was skeptical coming here with everyone saying it's the best ramen in Seattle. But alas, I just might have to agree. It was the most authentic ramen I've ever had here. I got the Onomichi and it was phenomenal. The depth and complexity of the broth was something you just can't get anywhere else in Washington. The price was great too, I would have paid way more for that bowl of ramen. I also got the yakitori which was pretty good. It had a deep smokey flavor from the charcoal grill and it was tender as well. Though I wouldn't say it's a MUST (unlike the ramen). I cannot wait to keep coming back and trying their other ramens and dishes.

Midnite Ramen is a small food truck and shares the area with Figurehead Brewing. There is some parking reserved for the brewery and there are covered outdoor tables. When we arrived for some reason it brought me back to when I visited Japan. Whether it was the decor or that there was a yakitori pop-up right next door, it felt very authentic. When you get there, take a number and wait for it to be called. We arrived at around 6:20pm on a Friday and about 10 minutes later we realized that there were about 25 numbers ahead of us. In the meantime I got a beer from Figurehead Brewing but we were definitely starving. Above each bowl of ramen there is a region of Japan denoting how each is made. We ordered the 50's classic shoyu ($12) from Tokyo and the miso bold ($14) from Kumamoto. The shoyu was your classic bowl of ramen as its name suggested and the broth was saltier than the miso bold. For the miso bold, the meat was tender and the broth was flavorful from the garlic but not as spicy as I thought it would be. We thought the egg was just okay; there wasn't much flavor and it wasn't marinated. There is a condiment section if you want chili oil, sichuan peppercorns, and grated ginger. The ramen was good but it was a little out of the way for us. The wait was also longer than I would like; I'm not sure if I would wait an hour for the ramen. I'd recommend coming earlier so you can skip the long lines, especially since they're only open from 5pm-9pm on select days.

We used to love this place when it was over by Fisherman's Terminal. This was the first time to try the new location. They did not open till 5pm so we drove around for a bit then waited outside until they opened. We're the first ones in line. The guy in the truck took our order and we were ready to pay, when we mentioned that the order was to go. He abruptly said " you need to order from the QR Code on the side of the truck". WTH? why would you need to order from an app when you are standing right there? We had to step out of line and pull up the Toast App. The app was not working right and would not let us finish paying for our order. By this time there were about 10 people in line and we knew it would take an hour to get our food (If the app worked). We walked out the door to never return. I do not understand, why you would have to use an app to order food while your in the restaurant? If it something where they need some extra money for the to-go containers just charge an extra 50 cents or whatever. Why force someone to use an app, who I'm sure gets paid for the transaction. What if you wanted to pay cash? Never going back, too many other ramen places around the area.

Ramen isn't my go-to food in any scenario, except after I tried midnite ramen while visiting friends in Seattle in 2021. The chashu! The broth! The garlic! All of it. My friends are lucky enough to live close by and are familiar with the very friendly owner. In 2021, I ate the Kobe Brisket Ramen and this June I went for the Kumamoto Miso Bold. Unf. Sumptuous! Next up I want to wontonmen. Anyway. If you like straightforward unpretentious ramen, check out midnite ramen!

Fun experience dining with chef Elmer and Izumi. Try to get here earlier than it's expected 9pm closing time because they had sold out of everything the night we went around 8pm, the adjoining yakitori sold out even earlier than that. We ordered the miso bold, tan tan ramen, chashu deluxe, and curry pork (available fridays only). Really enjoyed the miso bold's broth. Garlicky, rich, and an appropriate amount of spice. Noodles were a little bit on the softer side and would have preferred for it to be a little bit more al dente. The tan tan broth was unlike any other tan tan broth I've had. It tastes almost herbal like? Underlying sesame and peanut tones but overcasted with this herbal flavor that I could not shake. Was not a huge fan of this. Charshu deluxe was so good. So fatty and charred for that smoky flavor. Curry pork rice also surprising good and surprisingly on the spicy side. Worth a try! Fun night hanging out, slurping noods, and having some good beer.

Tried this place based on the strong reviews. Quaint permanent food truck tucked inside Figurehead Stone Way Brewing Company. Plenty of seating inside and in an outdoor inner courtyard area. Order online or with nice Asian lady. Got the recommended Miso Bold. Ramen noodles are very good and the black fungus is a nice touch. The pork chasu is sliced thin and not as flavorful as the thick marbled pieces at top ramen houses. Soup base is good not great (misses some of the textured umani of the best broths). Still very good value for the region. Grabbing a beer at Figurehead to go with the ramen adds a nice touch.

I think I might have found the best ramen in the Seattle area. I tried the onomichi ramen and the broth was just so good. It had a nice seafood flavor mixed with lard, thus making it super flavorful. The pork servings were nice and fatty, another plus. There's also plenty of outdoor seating right next to the food truck too. I came on a weekday night so the wait was pretty quick but definitely come as early as possible.

Midnite Ramen is amazing! I can't wait to follow this food cart around, well, its two locations in seattle. There's more to the menu than miso and shoyu and tonkatsu, and the portion sizes are amazing. I feel that a lot of care is put into the flavors of each ramen.

This place was opened recently as a permanent place, and it seems like they added some new menus. We ordered shoyu and miso ramen, which were surely delicious as known. We also ordered takoyaki and donkatsu with curry, which were newly added menu and really amazing. Especially, I recommend trying donkatsu - which is thick, but is amazingly soft. The order system was messed up on Sunday, which made us crazy. The online order system was broken, so we should make an order and check again and again on the order for more than 30 minutes. I think that was because they just opened, and it would be better from now on.

I was surprised how fast and easy it was to get hot, specialty ramen at a casual brewery! The serving is very generous, we got the classic chicken ramen and a specialty tantenmen style ramen. Both were good, for people unsure of spice or a lot of tang, I'd go for the classic ramen instead of the tantenmen. Everything was great and we didn't mind sitting outside on a cold night as the soup really warms you up!
