Given the hype, rave reviews and high price point, this was a pretty disappointing fine dining experience. We did the 9-course tasting menu, and although about 1/3 of the dishes were excellent, the rest were underwhelming and felt extremely confused. Mostly, there was a sense that every dish was trying to be way too many things at once, with an exaggerated number of ingredients and flavors and textures on the plate that ultimately just didn’t mix, nor add up to anything coherent. Like someone was trying way too hard to impress, and instead of allowing clear flavors to shine through, it was all lost in a jumble of colors and foam.
The service was very friendly but very scattered. A large number of different servers showed up at our table at various points, but none seemed in command of the menu or drink list. When we asked them to explain about the wine pairing (which we were eager to try) they sounded clueless and unable to explain the types of wines we would be served. Even the explanations for each dish were done in a very robotic manner - simply reciting as a list of elements on each plate with no real context or explanation or story as to what the dish was meant to be about, which is what we normally love most about fine dining.
When we finally just asked for suggestions for specific wines that work well with dishes on our menu, our server simply said “Well maybe you can choose a white wine.” When we asked him to suggest what type, he seemed a bit lost.
So overall, despite a few standout bites that were truly delicious, the experience was not nearly at the caliber of comparable CDMX fine dining venues like Maximo, Pujol or Quintonil. The offerings here felt confused, like the kitchen was mostly determined to impress with style over substance, to try everything all at once instead of having a clear culinary direction or flavor profile. Definitely didn’t live up to the very high price tag. Or maybe we just caught them on an off night.
